Beetroot tartare, fresh jersey milk cheese, spent nashi pear.
A mixture of Detroit red, chigota & golden beets from @timbarra_farm. Cooked in an aromatic stock. Then prepared, dressed with Chardonnay vinegar and semi dried to get a meaty texture. There then dressed with a beetroot molasses and mixed with sunflower seeds. The base of the dish is a purée of spent nashi pears from @fourpillarsgin. On top is a beautiful jersey milk Galactic cheese made by Jack @stoneandcrowcheese with Tyrone’s milk @little.yarra.dairy.
