{ I'm dreaming of those long Summer days...where the heat of the sun warms your body and soul, even though the windows. Jumping into a pool of water 👙, eating watermelon like it's my job 🍉, BBQ'S, and fresh cut grass, and light-refreshing evening meals out on the patio .... Whoa wait...I really do enjoy the Wintertime ⛷⛸❄, and don't want to wish it away☃️...buttt....Summertime seems like a faraway dream, or another reality right now...January feels LONG! 🧣I can't seem to remember what it's like to just walk outside without a coat and boots!😜 Hmm...well, while TRYING to stay in the present moment, and ENJOY what we have today...our dinner tonight certainly can take us to a place we all LOVE...SUMMER 🌞🙌 Crisp lettuce, tangy-limey shrimp🍤, and creamy avocado🥑...yeh, let's eat these all year long!🤤 makes about 4 servings

Ingredients:
1.5 lb. raw shrimp, peeled and deveined
2 tsp ground cumin 
1 tsp smoked paprika
2 cloves fresh garlic, minced
2 Tbsp avocado oil, or extra-virgin olive oil, divided in half 
sea salt and fresh ground black pepper
freshly ground black pepper
2 fresh limes
a handful of fresh cilantro leaves, chopped
8-10 romaine or butter lettuce leaves, rinsed and pat dried
1 large avocado, diced 
1 red chili, thinly sliced

Instructions:
In a large glass bowl, add shrimp, all seasonings, juice of 1 lime, garlic, and 1 Tablespoon of oil.

Season with sea salt and pepper to your taste, then stir well to coat. 
If time allows, refrigerate/marinate for 15 minutes or so, covered.

Heat oil in a large skillet over medium heat. Add shrimp and cook until just pink, about 3-4 minutes

In a very large bowl add cooked shrimp, diced avocado, cilantro, chili slices, juice of 1 lime and remaining oil. 
Gently stir to combine.
Taste test and season with a pinch of sea salt and pepper of needed.

Add spoonfuls of the avocado shrimp mixture lettuce leaves as shown, and enjoy.

To prep this:

1. I started with a big bowl of arugula and dressed it with the juice of 1/2 lemon, 1 tablespoon olive oil, sea salt, and garlic powder. Investment: 1 minute.

2.In a small bowl, I tossed a handful of deveined shrimp in 2 tsp avocado oil, sea salt, smoked chili, smoked paprika, 1 tsp crushed garlic, and 1 tablespoon of hot sauce (use your favorite). Investment 1 minute.

3.Pan “fried” for a minute or two on each side on medium. Investment: 3 minutes.
.
3. Added 1/2 avocado seasoned with TJs chile lime seasoning and some pinenuts. Investment: priceless.

Ingredients:
1.5 lb uncooked prawns
Salt and pepper
Olive oil
Roasted garlic-cilantro sauce:
1 small head garlic, top trimmed off
1 cup chopped fresh cilantro leaves
1 lime, juice of
1 tbsp dry white wine
3 tbsp olive oil
2 tbsp chili sauce (or 1 tbsp dry chili flakes)

Instructions
Preheat your oven to 400 degrees F.
Peel, devein and rinse the prawns or your choice of shrimp. Pat dry and season with salt and pepper. Place the prawns in the fridge until ready to grill.
Trim the top of the garlic head off, but leave the garlic intact. Drizzle generously with olive oil. Roast the garlic in the 400 degree F-heated oven for about 10-15 minutes or until slightly tender and fragrant. When ready, remove from the oven. Let cool briefly. Peel and crush or chop the roasted garlic as finely as possible.
Now prepare the roasted garlic-cilantro sauce. In a small bowl, combine the roasted garlic with the remaining sauce ingredients of cilantro, lime juice, white wine, olive oil and chili sauce. Whisk together and set aside.
When ready, lightly oil and heat a cast-iron grill or griddle to medium-high. Dress the prawns with a little olive oil and grill for 3-4 minutes on each side. You want to achieve some char, but be careful not to overcook the prawns.
Remove the prawns from the grill to a bowl and coat well with the roasted garlic and cilantro sauce. Transfer to a serving platter. Alternatively, transfer the grilled prawns to a serving platter and simply add the roasted garlic-cilantro sauce on the side.
Serve with pasta or rice and a green salad for dinner; or simply as a party appetizer. Enjoy!

* 8 strips bacon, chopped
* 2 teaspoons  salt
* ½ teaspoon  pepper
* ⅓ cup  apple cider vinegar
* 1 tablespoon  brown sugar
* 5 cloves garlic, minced
* fresh chives, chopped, to serve

* Preheat oven to 400°F (200°C)
* Cook bacon in a cast iron pan over medium heat. Once bacon fat coats the pan, add the Brussels sprouts, salt, pepper, apple cider vinegar, brown sugar, garlic. Stir until fully coated.
* Cook until the bottom of the Brussel sprouts begin to brown on the bottom.
* Transfer the cast iron pan to the oven and roast for 20 minutes, or until tender, flipping the brussel sprouts over every 5 minutes or so.
* Sprinkle Parmesan cheese evenly over the Brussels sprouts, then place the pan back in the oven and bake for other 3 to 5 minutes.
* Sprinkle with additional bacon and chives then serve.

Wild caught baked almond crusted cod with corn on the cob, ripe heirloom tomato wedges, asparagus, half an avocado and caulibroccoli rice. This was definitely a delicious flavorful and nourishing dinner.

For the almond crusted cod I blended 2 tablespoons extra virgin olive oil with juice of one lemon and about 1/4 tsp. garlic powder. Drenched the cod in the lemon olive oil mixture then generously coated with almond flour, salt and black pepper. Added an extra drizzle of evoo then baked on 425 F on a parchment lined sheet pan for about 20 minutes until the almond crust was golden brown. Topped with fresh parsley.
