also, quick update for you guys - i had such a great time checking out while on vacation and read almost three fulls books!!!! i also realized the reason my skin was 💩 is because of an overload of cauli so i’m taking a break from it for a few months, just having it here and there!! AND i relived my childhood this week by seeing the @jonasbrothers for the first time in over 10 years 😭 it was everything and more! so august??? yeah, it’s treated me pretty well and i’m so grateful ☺️ #fitstrongshann .
GF/VEGAN COFFEE PROTEIN ZUCCHINI OATS 🥣:
in a pot, mix together the following ingredients,
- 1/2 medium zucchini, shredded/grated
- 1/2c gf oats (i prefer rolled and quick)
- 1/3c almond milk (or non-dairy milk of choice)
- splash of vanilla
- 1Tbsp chopped walnuts (optional, i like crunch)
- sea salt
mix all together then put on stovetop on medium heat, stirring consistently with a spatula (key!!!) and adding the water/liquid as needed. once thick and combined, add the following on low heat: - 1/2Tbsp vegan butter (optional, but i highly recommend and ghee/regular butter work)
- 1-2 scoops coffee @nuzest_usa protein (use fitstrongshann for a discount)
stir until all combined and let cook for a few minutes. then plate, top and enjoy!!!

Então o que me faz continuar? DISCIPLINA, essa é a chave 🔑 hoje em dia, me exercitar e comer bem virou um hábito, faz parte de mim... são “tarefas normais”, tanto quanto escovar os dentes. Nem sempre fui assim, mas o que me tornou essa pessoa foi disciplina e insistência. Tentar enxergar a atividade física como um trabalho por exemplo... nem todos os dias a gente tá afim de trabalhar, as vezes da preguiça.. mas mesmo assim a gente vai, né? Pq queremos receber o salário no fim do mês, esse é o nosso objetivo final. O foco tem que ser no objetivo. Garanto que com o tempo vira hábito, e mais que isso: vira paixão, vira estilo de vida. AINT NOBODY GOT TIME FOR FOOD SENSITIVITIES 🙅🏼♀️🙅🏼♀️ But when @drchelseagronick tells you to avoid gluten you listen and avoid it like the plague.
These gluten free @unbunfoods buns are basically just fluffy pillows in my mouth (some might say BETTER than any gluten filled burger bun) aka happy Bails. Paired them with the @beyondmeat burger. Now don’t get me wrong, I love a good beef burger, but sometimes it’s nice to switch it up to the plant based version 🌱

Finally, the much awaited reunion happened. Meeting my sister and niece after a year! And the next few days are going to be the best kind of vacation for me.
My taste buds came alive with this breakfast plate of vegetable wheat rava kichadi, coconut chutney
and tomato chutney.. after being dead with the pizzas, burgers and cheese overloaded food fare for the last two weeks.

DISCLAIMER: doing the stuff at the top is completely normal. If listening to music gets you focused, then by all means you should do that. But my take is - instead of listening to music while driving, why not listen to some educational videos or podcast to learn something or get some knowledge? I know music can keep some of you focused - but while driving it’s not necessary - in my opinion.

CREAMY CASHEW NOODLE STIR FRY by @alexafuelednaturally ❤️ Serves 2-3
Peanut noodle stir fry
1/2 pound spaghetti noodles (I used bucatini but you could also use rice noodles)
1/2 cup mushrooms, whole or sliced
2 cups spinach
1/2 a large eggplant, chopped
1/4 cup cashews
1 tbsp avocado oil
1 tbsp soy sauce
CREAMY CASHEW Sauce:
1/2 cup coconut milk from can
2 tbsp Cashew butter (or peanut butter)
1 tbsp coconut aminos
2 tbsp soy sauce
1/2 tbsp coconut sugar or reg sugar
2 tbsp water
Optional for garnish:
1.Begin by cooking noodles according to directions on package.
2.In a sauce pan over medium heat add coconut milk and cashew butter and whisk together until well combined. Then add coconut aminos, soy sauce, sugar and water. Stir to combine, cook on low heat for 2 minutes then turn off heat.
3.In a large pan over medium heat add 1 tbsp avocado oil, then add chopped eggplant and mushrooms, stirring as you cook for 5 minutes. Add 1 tbsp soy sauce and cook for an additional 5 minutes, until veggies are cooked and golden. Stirring frequently adding 1-2 tbsp water throughout cooking process if needed (prevents veggies from sticking to the pan).
4.Add the spinach and let wilt…will take 1-2 minutes. Once the noodles are done cooking add to the veggies and pour all of the sauce over the noodles and toss together until well combined. Cook for 2-3 minutes making sure everything is heated through and serve immediately. Garnish with cashews, cilantro and lime juice. #bestofvegan
