  • No Bake Sugar Cookie Bars 💫 Made with only 5 ingredients + a 2 ingredient icing! Paleo, Gf, and plant based option. Store in the fridge or in the freezer 👌🏻 Such an easy holiday treat! I love making 2 types of desserts: no bake or minimal ingredients and this one hits both of those 😌 Oh and they’re dangerously addicting 😉 -

It’s been so fun creating holiday recipes over here, I’m going to be in a culture shock in a few weeks 😅 I actually drove down to my grandparents today to stay with my grandma for a few days while my grandpa is recovering from heart surgery. Lots of fun, new yummy treats, too much coffee, and hopefully a speedy recovery for him are in the cards this week ❤️ -

#recipe details 👉🏻 Mix together: 
1 cup nut butter (I used @justins cashew butter) 
1/2 cup coconut flour 
1/2 cup maple syrup 
2 tbsp vanilla collagen or protein (optional, sub 1 tsp vanilla extract if vegan or use a vegan protein, I used @furtherfood vanilla collagen) 
1 tsp cinnamon
Mix it all together then line a brownie pan with parchment paper. It doesn’t fill the entire pan but it’s easy to shape into a square. Smooth it out and put in the freezer for 2 hours at least. Then remove and top with the icing: 
1/2 cup coconut butter + 1/2 cup maple syrup. Melt for 30 seconds in the microwave and mix it together. I’ll make this about 10-15 minutes before I need it. Put back in the freezer for 30 mins- an hour to let it harden. Enjoy! #paleo #plantbased #choosingbalance

Mini Orange Muffins:
i n g r e d i e n t s-
1 1/2 cup @bobsredmill almond flour
1 cup @bobsredmill gf baking flour {all purpose flour works too!}
1/2 cup @nutiva coconut sugar
1/2 tsp. baking powder
1/4 cup @traderjoes almond milk
1 egg
1/4 cup freshly squeezed orange juice
1 tbsp. orange zest
⠀⠀⠀⠀⠀⠀⠀⠀⠀
d i r e c t i o n s-
1. Preheat oven to 350F and spray/line a mini muffin tin.
2. Whisk together the dry ingredients in a large bowl, then whisk together the wet ingredients in a separate bowl.
3. Pour the wet ingredients into the dry ingredients and stir until well combined.
4. Spoon the batter into 17 mini muffin cups & bake for 12 minutes. {optional: top with melted @wholefoods white chocolate + chopped walnuts!}

  • Been super into rosemary lately.. not sure why! Avocado Toast on Sourdough Rye topped with Roasted Cherry Tomatoes, Rosemary-Infused Olive Oil, Flake Salt, and Pepper.

I much prefer the flavor of tomatoes roasted vs raw. They become so rich and full with flavor, and they even get a nutritional boost — roasting tomatoes helps bring out lycopene, an antioxidant.

To make roasted tomatoes, preheat oven or toaster oven to 425. Spread on a baking sheet and drizzle or toss with olive oil. Bake for 20-25 minutes until tomatoes look nice and wrinkled.

  • sweet potato toastin’ my way into tuesday 🍠💃
some MAJOR fuel was needed after a killer lower-body class at @barryscanada this morning! prepped the sweet potatoes + soft boiled eggs in advance, so hangry Leanne was thankful this plate came together in under 10 minutes 🤗 went with a mix of sweet and savory, because it’s just the best!
if you watched my stories yesterday, you know I’m doing something super exciting (and a little nerve-wracking 😅) this afternoon! stay tuned!

#sweetpotatotoast: wash and slice sweet potato lengthwise, and bake at 400F for 30 min, flipping halfway. topped with avocado, @manitobaharvest hemp hearts, feta, pepitas, and two 7 min + 20 second boiled eggs sprinkled with red pepper flakes, and the sweet slices have plain greek yogurt + warmed up frozen berries + @beekeepers_naturals bee pollen!
