Seared cauliflower with harissa spiced glaze. FANCY ~30 min meal for 2. Vegan, plantbased, gf by @evergreenkitchen_:

Ingredients (for 2): Cauliflower steaks & cauliflower mash:

1 1/2 lb head of cauliflower (0.7 kg)
3/4 cup + 2 teaspoons water (plus extra, to thin), divided
1 large clove garlic, minced
1 tablespoon lemon juice*
1 tablespoon + 2 teaspoons olive oil
1/4 + 1/8 teaspoon salt, divided
1 tablespoon maple syrup
3/4 teaspoon paprika (sweet)**
3/4 teaspoon cumin
3/4 teaspoon coriander
1/4 teaspoon smoked paprika**
1/8 teaspoon cayenne
—
STEPS:
Peheat oven to 425°F. Line a baking sheet with parchment paper.
With the cauliflower sitting on its stem, use a knife to slice it in half. Cut one thick slice from either side so that you have two “steaks”.
.
Gather up all the remaining cauliflower pieces and chop finely (or pulse in a food processor/blender).
.
Heat a large skillet pan, filled with 3/4 cup water, over high heat. Once boiling, add finely chopped cauliflower and cover to steam. Cook for 5 minutes. Remove lid, add minced garlic, and saute for 3-5 minutes, or until water is evaporated and cauliflower pieces are tender. Transfer to food processor. Add lemon juice, then process until cauliflower starts to break down. Slowly drizzle in 1 tbsp of olive oil & ¼ teaspoon salt. Process until the mixture looks like the consistency of mashed potatoes.
.
Re-heat the same skillet over medium-high heat. Add 2 tsp olive oil, and once hot, add cauliflower steaks. Let them sear for 3-3 ½ minutes on each side (~6-7 minutes total). Remove once they’ve developed a golden crust on either side.
.
While the cauliflower cooking you can assemble the harissa glaze. In a small bowl combine 2 tsp water, maple syrup, paprika, cumin, coriander and smoked paprika. Once the cauliflower is seared, transfer steaks to lined baking sheet. Brush harissa glaze on both sides, coating all the nooks and crannies. Transfer to oven for 5-7 minutes or until tender.

who am I? I have never really introduced myself on this account, always choosing to maintain a certain level of separation. HOWEVER! I think it’s time for me to finallyyyyy share some info with some context :))
🥕I am 19 years old. I have been described as my fellow peers, though, as the resident 27 year old woman so interpret from that information what you wish lol
🥕I go to NYU. I am studying abroad my first year (weird as heLL ikr), which has been the hardest thing I’ve ever done. If u would like more info about this then comment below 🤠🤠
🥕I am obsessed with these three emojis —> 🤠🤩🤪
🥕I am half Turkish and half Croatian, and I have three citizenships (though I can only speak English BUT I am trying to learn how to speak the two languages so there’s that) 🤪
🥕I fully developed and eating disorder during the college application process. That period of time was one of the toughest physical and emotional places I have been. I am recovered but still healing
🥕one of my dreams is to travel to every single continent (but right now I need a year break from traveling tyvm)

so yEP there ya go my friends. if u have any questions specific to the info I just shared leave a comment or pop me a message. :)) this picture was taken at the corner of Russell square. I will miss this place I think, even though some of the memories I hold are so incredibly painful. it’s cheesy (and true), but it’s much better to focus on what has changed you (rather than just the positive) than what has hurt.

  • Hey everyone! 🌞 Sorry that I haven’t posted at all in the last week; just been so busy with work that I haven’t been able to take as many pictures recently. 😩 Hopefully this blueberry pancake stack makes up for it! 🌸🥞 If you’re looking for a really easy, healthy, vegan pancake recipe you can try out this one here. Just blend 1 1/2 cups oat flour, 1 cup almond milk (or other dairy-free milk), 1 banana, and 2 tablespoons maple syrup. 🍌🥥 They wont be as fluffy as your usual pancakes, but they’re a lot better for those looking for a nutritious option. 😂🌿 Anyways, let me know if you try them! ☺️
