Almond flour tortillas (so expensive but seriously so worth it) + arugula + buffalo cauliflower (sauce made from hot sauce, butter, and garlic powder) + avocado 🥑 + vegan cashew ranch + sprinkle of chili powder
.
Ingredients:
- 1/2 head of cauliflower, chopped into florets
- 2 tbsp butter or vegan butter
- 1/2 - 3/4 cup hot sauce (depending how hot you like it)
- 1 tbsp garlic powder
- 2 handfuls kale
- 1/2 avocado, diced into chunks
- 2 tortillas (I used Siete almond flour kind)
- Dressing of choice

Directions:
1. Preheat oven to 400F. Cut cauliflower into desirable sized florets. Place on oven sheet, cover in garlic powder to taste, and bake for 25 min. 
2. While cauliflower cooks, melt the butter for 15 sec in microwave. Mix in the additional garlic powder and hot sauce. Stir to combine and set aside.
3. Place 1 tsp olive oil in pan over low-medium heat. Sautee kale until crispy, about 5-10 min.
4. Take cauliflower out of oven and coat in buffalo sauce mixture. Place back in oven for additional 10-15 min.
5. Heat up tortillas. Place kale and avocado chunks. Take cauliflower out of oven and place in tortillas as well. Top with dressing and any additional desired spices.

  • GRILLED TERIYAKI CHICKEN SALAD

Serves: 4
INGREDIENTS
½ cup teriyaki sauce
4 boneless skinless chicken breasts, pounded to even thickness
8 cups chopped romaine or green leaf lettuce
½ cup cherry tomatoes, halved
¼ red onion, thinly sliced
2 avocados, sliced
1 15-ounce can pineapple rings, with juice (juice divided between marinade and dressing, see instructions)
cilantro, roughly chopped
dressing
½ cup teriyaki sauce
⅓ cup rice vinegar or apple cider vinegar
⅓ cup olive oil
pineapple juice (from the can of pineapple rings)
INSTRUCTIONS
Combine chicken, ½ cup teriyaki sauce, and half of the pineapple juice from your can of pineapple slices in a large resealable bag. Press the extra air out of the bag, seal, and chill for 15 minutes.
In a small-medium bowl combine all dressing ingredients, whisk to combine, then cover and chill until ready to use.
Grease and preheat your grill. Place chicken on grill and discard bag with marinade. Place chicken and pineapple rings on the grill. Grill pineapple rings just until hot and tender and grill marks start to form. Grill chicken 6-10 minutes on each side until browned and cooked all the way through (completely white inside, no pink). Transfer to cutting board and slice into strips or chop into 1-inch pieces.
Assemble salads with chopped lettuce on the bottom, then top with chicken, tomatoes, onions, avocado slices, grilled pineapple slices and cilantro. Serve with prepared dressing (stir or shake immediately before serving). Top with sesame seeds if desired.

Sweet and juicy grape/cherry tomatoes with fresh mozzarella balls are tossed in basil pesto and a touch of garlic, then stuffed into Avocados for an incredible light lunch, dinner or snack! Drizzle with a balsamic glaze for an incredible flavour combination!
1/2 cup grape or cherry tomatoes, halved
4 oz (120g) baby mozzarella balls (bocconcini)
2 tablespoons basil pesto homemade or store bought)
1 teaspoon minced garlic
1/4 cup olive oil
Salt and pepper to season
2 ripe avocados peeled, seeded and halved
Fresh basil leaves to serve (optional)
2 tablespoons balsamic glaze reduction to drizzle
2 tablespoons fresh basil chopped
.
Instructions
Combine tomatoes, mozzarella balls, pesto, garlic, olive oil, salt and pepper in a bowl. Toss well to evenly combine all of the flavours.
Arrange prepared avocado halves onto a plate with fresh basil leaves.
Spoon the Caprese filling into each avocado halve and drizzle with balsamic glaze. Top with chopped fresh basil. Serve immediately. .

  • Pre-gym mean mugging. Post workout steam grinning! Lol! I’ve been training hard this week and my CNS is agreeing(maybe a little too much). Time for some recovery days. ***********************
Recovery doesn’t mean do nothing. For me, recovery days look similar to most days with the exception of a hard work out. I may go for a hike. Shoot some hoops, or hit the heavy bag. I still eat clean but I scale back my calories. And if it’s in the budget I’ll get body work. *********************************
The “no days off” “beast mode” culture could use a shift into the self love direction. After all, how can you expect to love anyone else if you can’t love your own damn self! Salute!

Aunque las fiestas patria en México ya pasaron este platillo es uno de mis favoritos por lo que decidi recrearlo en una versión más saludable.

Ingredientes:
📌1 chile poblano..
📌1/2 taza de lentejas cocidas
📌10 pasitas..
📌 5 nueces
📌1 rebanas de cebolla
📌1/4 de diente de ajo.
📌1/4 plátano macho -

Para la nogada:
📌10 nueces de nuez de la india
📌1/4 de taza de nuez de Castilla.
📌4 dátiles sin hueso.
📌3 cdas de queso ricotta

Preparación:
📍Asar el chile por ambos lados, después agregarlo a una bolsa de plástico para que sude por aproximadamente una hora. Después bajo la corriente de agua retira la última capa del chile la cual se desprenderá fácilmente.
📍En un sartén de sin aceite pon a sofreír la cebolla y el ajo, una vez que la cebolla está caramelizada agrega los demás ingredientes hasta que se cocine la mezcla a tu gusto.
📍Para la nogada es decir la salsa:
Remoja la nuez de la india durante una noche.
📍Al día sirviente licua la nuez con los demás ingredientes.
📍Rellena el chile con las lentejas y vierte la salsa encima.
📍Decora con un poco 1/4 de taza de granada y un poco de cilantro encima.
📍Disfruta

As long as you can start/continue to make it a habit, incorporate it into a lifestyle and enjoy the journey either alone or with friends...it does not matter if you're not following 'the crowd'. Make your own crowd (see above - amazing women who came together and did great things).

I'm old fashioned and personally think that if you can decrease the level of intimidation around getting involved in fitness...we might have a better shot at increasing participation in it for the long term benefit of everyone.

For every fitpro who takes the time to meet the actual (emotional/physical/physiological/social/psychological) needs of a client, creates a level of trust, makes progress (regardless of the perceived speed necessary from the outside) and enables them to tolerate/cope/enjoy/love the process...there are other 'fitpros' claiming to 'keep it real' while scatter gunning their opinion across the airwaves or social media and scaring the masses.

It's ok to have an opinion, just be aware that not everyone is in the top 1% of gym users who; a) are confident in the gym space, b) know their way around the gym with qualified knowledge, c) look like InstaModels, d) are comfortable in their own skin.
