  • Chickpea, Spinach &Tomato Curry 😍👌

1 T oil
1 pint sliced cherry tomatoes
3 tsp chili powder
5 tsp curry powder
3.5 tsp cumin
2 tsp onion powder
3 garlic cloves minced
1/2 tsp pepper
1 tsp salt
1 can chickpeas rinsed and drained
3/4 cup cooked corn
1 can coconut milk
1.5 cups packed spinach
Cilantro and red chili flakes for garnish

Over medium heat, heat oil. Once hot, add tomatoes and spices, and cook for 3 minutes, stirring. Add garlic and cook another minute. Add remaining ingredients except the spinach and garnish. Stir to combine and cook at a low simmer for about 10 minutes uncovered, stirring occasionally. Cook longer for a deeper flavor, but you don't need to. Add spinach and cover, cook until spinach wilts, about 3 min. garnish

  • 💥Spice Spice Baby Veggie Tagine💥In typical fashion, I took a couple of short-cuts and modified things a smidge because I’m always trying to make healthy food tasty AND easy. Basically alerting the tagine purists before I go on 😉

Calling this an anti-inflammatory curry wouldn’t be far from the truth but tagine sounds more appealing me thinks ☺️ Just know that this dish is packed with anti-inflammatory rainbow colored veggies and spices, pairs sweet and spicy flavor notes as is typical in a tagine (though it can be made mild) and tastes amazing. SPICE SPICE BABY VEGGIE TAGINE (aka anti-inflammatory curry 😉)
💥Warm 2 tablespoons of olive oil on medium heat in a pot until shimmering
💥Add 1 chopped onion and 1 tsp each chopped garlic and ginger
💥Sautee until the onion is translucent but not brown
💥Add 1/2 tsp turmeric, 2 tsp cumin, 1 tsp coriander, 1 tsp sweet paprika, 1/2 tsp cayenne (optional) and 1/2 tsp Ceylon cinnamon and sautee for 60 seconds until the spices are aromatic
💥Add 2 tbsp tomato paste and sauté for 2 minutes until you have a spiced paste
💥Add 4 cups of coarsely chopped veggies of choice with at least one sweet veg like butternut squash or sweet potato. You can also use dried apricots for sweetness. Here I have eggplant, zucchini, butternut squash and peppers
💥Add salt and pepper and sauté the veggies until everything is well coated with the spice mixture
💥Add 1 cup puréed tomatoes and 1/2 cup water and bring the mixture to a boil 💥Lower the heat to a simmer and cook with the lid on for 10-15 minutes until the veggies are softened to your liking
💥Cook uncovered for 5-10 minutes if you like a thicker sauce
💥Add 1 tsp of pomegranate molasses or maple syrup
💥Adjust seasoning with salt, pepper and more cayenne if you like more heat
💥Garnish with parsley and serve right away on quinoa, couscous or as a veggie loaded side to your favorite main

Ponemos las semillas de girasol en una procesadora, las molemos un poco, luego le colocamos los demás ingredientes y volvemos a procesar hasta que quede con la consistencia que más les guste (muy molido o no tanto😆).

  • I posted a thai #curry recipe a couple weeks ago but I think this one I made last night is better and also SO easy! Also this is a perfect meal for a chilly fall night 🍲

I used chopped a yellow onion, red bell pepper & zucchini and organic chicken thighs but you can use any veggies or protein that you want. Sautéed these with 2 garlic cloves and poured in my sauce and let it simmer for ~10 minutes. I combined full fat coconut milk, ginger, garlic powder, fish sauce, rice vinegar, curry paste, curry powder & cayenne in a jar and shook it (normally I just add sauce ingredients as I go but I took a page out of @eatwellwithsari’s book and combined it and I think it really made a difference in the flavor. Also it made for an easier cooking process. Happy Friday! #realfoodwithsarah #easymeals

  • Da es heute Mittag schnell gehen musste und meine Kreativität derzeit noch auf ein Minimum beschränkt ist, gab es heute Kichererbseneintopf mit Reis. Shame on me, dass nur der Reis selbst gekocht ist. 🙊 Hier bin ich dann auch schon an die Grenzen meiner Kochkünste gestoßen; der Reis wurde einfach nicht weich. Und da ich jetzt nicht sonderlich geduldig bin, habe ich den dann letztlich leicht hart gegessen 🤷🏼‍♀️ Es ist also noch jede Menge Übungsbedarf da, was das kochen betrifft 🙈 Und irgendwann wird mir das ganze auch richtig Spaß machen, ganz ohne Druck und Stress. Irgendwann mache ich einfach den Kühlschrank auf und schmeiße wie wild alles in die Pfanne, ohne großartige Planung vorher. Und irgendwann gibt es keine Dinge mehr, die mir schon im Vorhinein die Tränen in die Augen treiben.
Aber bis es soweit ist, übe ich fleißig weiter und nehme das ein oder andere Missgeschick in Kauf. Übung macht ja bekanntlich den Meister und Ängste werden ja auch weniger, wenn man sich ihnen immer und immer wieder stellt 🙃
