  • Semana Santa 2019 ➡️🌞
Definitivamente en la playa no estuve 😂, ésta es una foto de mis mini vacaciones en marzo previo a SS. Hace poco más de 3 meses me tomé una foto parecida en la playa, me gusta siempre tomarme fotos mirando al mar, ya que siento que es la forma en como el mar se lleva todo y te renueva de energías 🔋

➡️Hace 3 meses esperaba el futuro con muchas esperanzas, pero en estos 3 meses he aprendido que para llegar a ese futuro se necesitan más que solo esperanzas; es necesario trabajar en él, cultivarlo, regarlo y cosecharlo cuando vaya dando frutos (y SIEMPRE da frutos de las formas en como menos uno se imagina) •

➡️Hace 3 meses miraba la vida con mucha inquietud, en estos 3 meses he aprendido a sentarme, meditar, disfrutar cada momento que la vida me da como si fuera el postre más rico que he probado. Le he puesto una pausa a mi reloj ⏰ que nunca para y he decido darme tiempo para dedicármelo a mi misma (que por increíble que parezca uno siempre deja de lado) •

➡️En esta SS, trabajé la mitad de la semana 👩🏻‍⚕️. La otra parte pasé cocinando👩🏻‍🍳 (cosa que ya saben me encanta hacer) algunas recetas fit, otras no tan fit (porque la vida es un BALANCE)😬➡️Todas las disfruté increíblemente! La comida es un medio para compartir, amar, comunicar, ser y dar felicidad, une sentimientos y personas. ➡️Pude terminar 3 libros completos sin interrupciones 🤩❤️➡️Vi los 10 mandamientos (mi película favorita de SS, obvio con algunos momentos de 😴 porque dura 3 horas) ➡️No hice nada de ejercicios (tenía tiempo de no descansar y me di estos días completamente libre! Reconocer los tiempos de descanso es tan importante como realizar actividad física 😌➡️Pienso que cada quien tiene su forma de reflexionar en esta semana y ésta fue la mía •

➡️Entro full energías para este siguiente trimestre del año que va pasando ⚡️. Espero que cada quien a su manera se siente recargado también. Mañana lunes que inicia, recuerda comenzar a trabajar  en ese futuro que anhelas 💪🏻

INGREDIENTS LIST FOR THE SHRIMP AND BROCCOLI FOIL PACKS WITH GARLIC LEMON BUTTER SAUCE
* 1.5 lbs (600g) medium raw shrimp (peeled and deveined, tail-on or tail-off)
* 2 tablespoons butter, diced (or ghee, or olive oil)
* 1 tablespoon minced garlic
* 1 teaspoon Italian seasoning
* 1/4 teaspoon onion powder
* 2 tablespoons vegetable or chicken stock, divided
* Salt and pepper, to taste
* 1/4 teaspoon smoked paprika
* Red chili pepper flakes, optional
* Juice of 1/2 lemon
* 1 large head of broccoli, broken into florets
* Fresh chopped parsley, for garnish

DIRECTIONS
1. Preheat your oven to 425ºF (220ºC). Cut 2 sheets of 14 by 12-inch (35 x 30 cm) heavy duty aluminum foil then lay each piece separately on the countertop. In a small bowl, combine the ingredients for the spice mix: Italian seasoning, onion powder, salt, pepper, and smoked paprika (plus powdered stock if using, see notes).
2. In a shallow plate, add shrimp and sprinkle with the spice mix, coating on all sides.
3. Divide shrimp onto the aluminum foil near the center then place broccoli florets to one side of the shrimp.
4. Add garlic over broccoli and shrimp, then sprinkle with lemon juice, red crushed chili pepper flakes (if using) and finish with salt and pepper. Divide butter pieces evenly among the foil packets, layering them over the shrimp and broccoli.
5. Add a tablespoon vegetable stock in each foil packet and wrap packets in and crimp edges together then wrap ends up. Don’t wrap too tight – keep a little extra space inside for heat to circulate. 
6. Transfer to a baking sheet and bake in the oven, sealed side upward until shrimps have cooked through, about 15 minutes. 
7. Carefully unwrap the baked shrimp and broccoli foil packets then garnish with fresh parsley and a slice of lemon. Enjoy! ❤️

  • So this may get a bit sappy but for the first time in my 29 years of life I'm really excited to go to the doctor tomorrow! Usually I dread it but after 8 months of working my butt off, even with my lack of mobility from the car accident, and losing  25 lbs since my doc last saw me I feel this will be the first visit without a "you'd be so much better off if you lost ___" #healthylifestyle #hardwork #trying #my #best #iam1stphorm

  • This morning's lemon harvest! One of the branches was so full of lemons it was at breaking point. This variety needs to be picked when yellow and a good size, otherwise they keep growing - we have harvested football sized lemons before!! They taste delicious though - they are a true lemon (not the meyer variety which is a cross). We also picked lots of green ones as it meant that I could give the tree a good prune. It is meant to be a fan trained tree but has gotten out of hand. I find it so hard to prune citrus - you're either pruning off ripe fruit, baby fruit or new flowers! They've always got something going on all year round, but that's what I love most about them too.
