  • PERSIAN CRANBERRY RICE PILAF

Fragrant, slightly sweet, and delicious, Persian cranberry rice pilaf. This rice pilaf is perfect to serve as a side for Thanksgiving. It’s studded with dried cranberries and pistachio and super fragrant from sweet saffron. This saffron rice will be a hit all around!
INGREDIENTS:
•2 cups basmati rice
•3 tablespoons clarified butter (ghee) or butter
•1 cup onions, thinly sliced
•1/2 teaspoon turmeric
•1/3 cup granulated sugar
•1 teaspoon sumac powder (optional)
•1 1/2 cups dried cranberries (or dried cherries)
•1/4 teaspoon salt
.1/4 teaspoon olive oil
.1/4 teaspoon saffron
.1/3 teaspoon pistachios
DIRECTIONS:
1.Wash the basmati rice thoroughly and soak in water for 30 minutes. If you’ve got the time soak for up to 2 hours. The longer you soak, the more tender the rice.
2.Heat the ghee or butter over medium heat in a 10-inch skillet. Add the onions and sauté them for 3 -4 minutes until they turn translucent. Add the turmeric, sumac powder, cranberries, and salt. Allow the cranberries to cook for 1 minute, then add the sugar, along with 2 tablespoons of water so the onions and cranberries can soak up the sugar. Allow to cook for 3 minutes or until the cranberries soak up all the liquid, turn off the stove and remove from heat.
3.Fill a large pot with water and bring to a boil. Drain the rice and add to the boiling water and cook on medium heat for 6-8 minutes or until al dente. Drain the rice and rinse under cool running water to stop cooking; drain. Pour the tablespoon of olive oil into the base of the same pot. Add the rice and pour the saffron water over the rice evenly. Top with the cranberry mixture and the pistachios. Wrap the lid of the pot with a thin kitchen towel and cover the pot. This helps build steam to help cook the rice through. Cook the rice on high for 3 minutes, then turn the heat down to super-low and continue to cook for 10 more minutes. Turn off heat and let the rice sit for 5 minutes. Serve warm.😊😍😁😋👌

These cookies are jam-packed with nutritious ingredients and healthy enough for breakfast on the go! They're free of gluten, dairy, & refined sugar, and also vegan friendly!

Recipe type: Breakfast, Gluten-Free, Vegan

Serves: 8–9 cookies

Ingredients

1 cup old fashioned rolled oats(use certified gluten-free oats, if needed)
½ cup oat flour
½ cup dried cranberries, raisins, or other dried fruit
½ cup unsalted pumpkin seeds (pepitas) or other seed/nut
¼ cup ground flaxseed
1 tablespoon chia seeds
1 teaspoon cinnamon
½ teaspoon baking powder
¼ teaspoon salt
1 large mashed banana or ½ cup unsweetened applesauce3 tablespoons melted coconut oil or butter
3 tablespoons coconut nectar/syrup, honey, or other liquid sweetener
2 tablespoons almond milk or other milk of choice

Instructions

Preheat oven to 325ºF. Combine dry ingredients in a large mixing bowl—oats, oat flour, dried cranberries, pumpkin seeds, ground flaxseed, chia seeds, cinnamon, baking powder, and salt.Stir in mashed banana, coconut oil, coconut nectar, and almond milk until well blended.  Let mixture rest for 4–5 mintutes, giving time for chia and flax to bind everything together.  Should look like the dough in the photo above. If your dough has gotten too thick, stir in an additional 1–2 tablespoons milk before scooping out onto your baking sheet.Measure dough out by the scant ¼ cupful and place on a baking sheet lined with parchment paper (or lightly greased). These cookies don't spread much while baking, so I like to gently press the dough with the palm of my hand to flatten a bit.

Bake for 15–18 minutes, or until cookies are lightly golden around the edges.Store leftovers in an airtight container for 2–3 days. Makes 8–9 cookies.

Notes *Can make your own by finely grinding whole oats in a food processor or coffee grinder.
**Can substitute an equal amount of nuts, seeds, or dry fruit.

  • Super easy winter warmer - healthy, filling, wintry comfort food 💗 I guess it's a version of a shepherds pie. 
I cheated used tinned lentils for time & ease.

The topping is boiled & mashed white & sweet potatoes (mashing I added a tiny but of vegan butter and a splash of oat milk) 
Heated 1x chopped onion & 3 minced cloves garlic in a little oil.

Added 2x chopped carrots, 1/2 crumbled low salt veg stock, 1/2 tsp dried thyme, a little sprig of fresh thyme & a little water, covered and semi-steamed for a couple of mins. 
Added 1x large chopped leek, a little more water & semi steamed a few mins more.

Added a load of chopped broccoli & semi steamed a few mins more (at this stage until all veg cooked to preference). Added 1x tin chopped tomatoes, 1 tsp soy sauce, 1 squirt of tomato puree, 1 tsp coconut sugar & another small sprig of thyme. Heat through to for a few mins then add the lentils.

Greased a baking tray. Poured the lentil mix in. Grated a little @violife_foods cheese on top the spread over the mash. The mash was thick on account of using far too many spuds 🤣

1 tatlı kaşığı tuz

Pane harcı:2 yumurta,yarım su bardağı un,1 su bardağı galeta unu

🖌Pirinci yıkayıp,üzerini iki parmak geçecek kadar su ekleyin,1 çay kaşığı tuz atıp,kısık ateşte suyunu çekene kadar pişirin.
🖌Pişmiş pirinci bir süzgece alıp soğuk suyun altına tutun,suyunun süzülmesi için kenara alın.
🖌Kıymayı iki parçaya ayırın.Bir parçasını suyunu çekene kadar kavurun.Yemeklik doğranmış kuru soğanı ilave edin.4 yemek kaşığı sıvıyağ ve 1 tatlı kaşığı tuz ekleyip soğan diriliğini kaybedene kadar kavurun ve soğumaya bırakın.
