5 days ago, we shot the first half of our Christmas card for this year. The title is House of Ngariki: Modern Royalty and the theme is based around our grandparents and their Cook Island heritage. I’m glad my grandfather held through for this photoshoot, this year our Christmas card will solely be dedicated to him and having these two pillars of our family included in the card was no doubt the best decision we could have made. Salmon eggs benny is a relatively complex dish to put together considering the making of the hollandaise sauce. Unless of course you chance upon a microwave recipe, of whisking 2 egg yolks, 1/4 lemon juice, salt and pepper to taste, 1/4 cup of melted butter. Beat the egg yolks and add the butter in a slow trickle, keep whisking til sauce emulsifies, add the juice and continue whisking. Pop in the microwave to heat for 20 secs whisk the emulsion and serve generously over a layer of smoked salmon, poached eggs and toasted bap buns. To poach eggs, heat water to a rolling boil, stir the water in a cloak wise motion, pour vinegar to the water, this holds the eggs in shape, allow to cook till the yolk is runny on the inside. Serve with lashings of sauce on the side.

My spicy prawn fry is a simple ‘and easy go to’ meal that can be thrown together in a few minutes. Sauté some onions, add the prawns, chilli flakes and salt, cook till ready and squeeze a large squirt of lime just before you serve. Yum. ramp up the chilli flakes if you can handle the heat.

The humble spinach and feta roll is a fav snack of many and it happened to be one of our best sellers back at the cafe. Use frozen and thawed, spinach and pastry, it’s easy to work with but the spinach needs to be drained thoroughly. Crumble the feta and mix the spinach, place in the middle of a rolled out puff pastry sheet, roll the pastry into a ‘roll’, brush the edges with a beaten egg to hold it in place before rolling. Bake in a preheated oven and serve with a relish. Delish!!
