  • For me, brisket is the king of all barbecue. It's the hardest to master but the payoff is tremendous when you do. And if brisket is the king, burnt ends are the crown. Take the point off the top of the brisket when the flat is done, cube, then toss them back on the smoker with some fluid like beef broth and a dab of BBQ sauce on top of each and the results are pillowy soft cubes of savory and sweet deliciousness. You dont have to do the sweet part. They are glorious all savory. If you haven't had them, run, dont walk to wherever serves them and order two portions for just yourself. You can thank me later.

  • Check out this amazing meal Masters of Smoke member @mojos_krazy_kitchen created on our Gravity Series 560!! What did you cook this past weekend? "Masterbuilt Gravity Series Stuffed seafood Lobster, with Smoked Slow Roasted Prime Rib served with Julie's Seafood Mac and Cheese. These lobster were stuffed with bay scallops, shrimp, crab, Ritz cracker, green onion, sweet onion, red pepper, garlic, parsley, herbs and spices. The prime was simply seasoned with 2 Gringos Chupacrabra steak seasoning and the gravity series did the rest. The Mac and Cheese had Lobster, shrimp, medium cheddar cheese, Monterrey jack, queso quesadilla, asadaro, and provolone. Although Thanksgiving is traditional Turkey, this year it's not going to be for us. The last meal I cooked for my father was lobster, 2 days prior to his death and it was that last real meal he ate, and he totally enjoyed it. Last year he passed on Thanksgiving and since his last request for food was Lobster, it seemed like a nice thing to remember him by. Love you Dad, miss you! Happy Thanksgiving!"

Rib prep, these are baby back ribs I am dry brining over night using @triplesmoke sweet summer heat rub. These didn’t need trimming at all they were perfect, all I did was remove the membrane and I added mustard as my binder. I coated the ribs evenly and placed them in my fridge overnight. What’s your method of prepping ribs?

Was uns in unserer heutigen Gesellschaft beim Essen und den Lebensmitteln die wir verzehren wichtig geworden ist, Regionalität, woher stammt das Produkt! Für uns zählt wieder mehr die Frische und die Qualität der Produkte und wir ernähren uns bewusster. Egal ob vegetarisch, vegan oder der bewusste Umgang mit Fleisch. Auf den Streetfoodmärkten und in Resataurants erleben wir mehr „Individualität“. Die Gastrobranche wird aktuell geprägt, von der Rückbesinnung auf klassische Rezepte und einer neuen Bodenständigkeit. Daher sehe ich als absolutes #Trenndfood , ob zu Hause, im Restaurant oder auf den Streetfoodmärkten – Spareribs. 
BBQ-Soße
2 Zwiebeln // 2 Knoblauchzehen // 20g Ingwer // 2 EL Butter // 6 EL brauner Zucker // 100 ml Apfelessig // 8 EL Worcesters0ße // 175g Kettchup

Für die BBQ-soße Zwiebeln, Knoblauch und Ingwer schälen, fein würfeln und in heißer Butter andünsten. 6 EL Zucker darüberstreuen, karamellisieren. Mit Essig, Worcestersoße und Ketchup ablöschen, aufkochen. Bei mittlerer hitze ca. 15 Minuten dicklich einköcheln. Mit Salz, Pfeffer und Zucker würzen.
