April's food prepped and ready for the freezer. Before I became a Dad I didn't realise just how little time we would have each evening to fit in bath, story and bed time, dinner and quality time with my wife. We both still wanted to eat healthily too so I now batch make a load of food one Sunday evening and freeze it for the month ahead. This means neither of us waste time cooking each night after work, time that could otherwise be spent either with my son or in most cases passed out on the couch watching Masterchef with a glass of wine.
From top left to right: Frozen rocket, spinach and walnut pesto, chicken and leek risotto, Chilli con carne, spaghetti bolognese, chicken, bacon and mushroom pie, kale, chickpea and chorizo stew, prawn and vegetable stir fry and homemade chimichurri sauce. All of these dishes freeze well and all you need to do is warm up alongside a bowl of rice or pasta. Super easy for a midweek meal.
Today’s meal prep was a fav of mine since undergrad when I first started to cook🍴Quinoa Stuffed Peppers- full of flavor, easy to reheat during the week, and ~contained~. I’m on my way home from my game now, today was another beaut☀️, hope you all enjoyed your weekends!♥️
•1 cup cooked quinoa
•1 cup corn
•1 cup black beans
•1/2 cup @jargoods tomato sauce
•1/4 cup shredded cheese
•optional: 1/2 lb cooked ground turkey meat
(Mix this all together, stuff 6 bell peppers, cook at 350F for 25 min, top with some more cheese, bake again for 2 min or until melted. enjoy!) #stuffedpeppers#sheetpansunday

🍱 QUICK MEAL PREP! 🍱
😥 After some busy weekends away my routine's been thrown off a bit, so bit it's time to fully focus and catch up on work too.
🕒 One of the most common reasons for not prepping I hear is that people "don't have time", which to me not only seems weird as it saves me time in the long run, plus it's also wrong! This prep only took 30 MINS!
💡 If you're short on time look for food that is quick and easy to prepare and requires minimal prep time - such as: frozen veg, rice, mince and chicken breast you can quickly cut (as I used here)

If you are new here: I budget $500 a month for groceries and all household consumables for my family of six. I post my grocery hauls every week but because I strive for #zerofoodwaste I only buy what I need to fill in the gaps and I meal plan from what I already have on hand, so what you see here are only things we NEED, not necessarily the full picture of what we are eating. I will occasionally stock up on things, but only if it is at rock bottom price and I have room in the budget after buying what we need for the week. This system has enabled be to create a large freezer stash of meat, which is why you don’t see any in this haul 😉
I only meal plan for dinners because we eat the same thing for breakfast and lunch every week. My kids pack and bring their lunch to school and we don’t have a restaurant budget, so this DOES include all 3 meals a day, for 6 people, for 7 days.
Dinner menu is labeled on the photo. I #batchcook so that is why you see less then 7 meals, because we eat leftovers a few times a week. All meat is from freezer stash. One meal NOT PICTURED is Curry Glazed Chicken and Rice because I already had everything on hand at home to make it 👌🏻
If you are looking for the produce, I spy: bananas, mangoes, cantaloupe, apples, squash, grapes, onions, potatoes, carrots, peas and corn. Check my last haul to see some others that we have left over. I do not waste produce, I only buy what I know will be consumed. Strawberry Quinoa Breakfast Bars 🍓
A delicious and filling breakfast bar recipe, packed full of healthy ingredients such as quinoa, oats, bananas and strawberries. They are delicious served with some yogurt and chopped fruit or can even be eaten on the go!
1 Preheat the oven to 180c / 350f and line an 8 x 8 inch dish with parchment paper.
2 Mash the bananas and add them to a bowl with the eggs and vanilla extract. Mix well.
3 Add the in the quinoa, oats and raisins and mix again. Finally stir in the chopped strawberries.
4 Transfer the mixture to the dish and bake in the oven for 20 – 25 minutes until firm to touch.
5 Allow to cool before cutting into 9 squares.

Busy afternoon packing Izzy up for her return to uni tomorrow. She made her own lasagnes this time plus portions of bolognese. Before batch cooking, I was overwhelmed and frustrated in the kitchen. I love to cook but all the joy was being sucked out by the demands to satisfy my family's various preferences and the time constraints of a busy mom life. After I discovered and fine tuned my meal planning process and prioritized batch cooking, my mealtimes became fun and happy again.
