Smoked whole hams for 3 days straight, both night and day. Cooked enough meat, Brunswick stew, and made coleslaw for 1,400 people for the Carrollton Lions Club Fundraiser, and still had enough for a spectacular day at the restaurant. Cold Smoked Bacon out of the smoker for breakfast and tomorrow’s dinner in! Don’t worry I cranked the heat up on the smoker after the pic to 200 for overnight. Filled up the side box with chips and headed to bed. See you in the early AM big guy!
First time making a Pork tenderloin I kept it pretty simple. I blanched some garlic cloves and stuff it in the loin every inch or so. I used @stelmossteakhouse steak seasoning with a home made butter bbq mix and it came out delicious. .

These are my Chinatown spare ribs with Beijing bbq sauce following @stevenraichlen recipe using @lumberjackbbqpellets oak pellets. I’m pretty sure I would of won a competition with these ribs they were so good. .
