3 mashed medium- medium large very ripe bananas
3 scoops @alohamoment vanilla protein
1 cup @bobsredmill & 2 tbsp super fine almond flour
2 tbsp @bobsredmill coconut flour
2 tbsp @bobsredmill arrowroot starch/ flour
1 tsp ceylon cinnamon
4 tbsp hemp hearts
1 tbsp MCT oil or liquid coconut oil
1 pint blueberries rinsed and drained
Combine everything except the blueberries with a fork until a thick batter forms. Fold in blueberries and use an ice cream scoop to evenly distribute batter. These muffins are small-medium and batter yields 9!
Bake at 375 for 22-25 minutes (baked mine until 25). Baking time may vary depending on size.

Raw Vegan Hazelnut and Chocolate Mini Cheesecakes 🌰🙌🏻😋. Who wants one?!

Vegan Hazelnut and Chocolate Mini Cheesecakes
1/2 cup of almonds⠀
1/2 cup of hazelnuts⠀
1 cup of pitted dates⠀
1 tbsp of water⠀
1 tbsp of cacao
Cheesecake Layer:⠀ 1 cup of soaked cashews 4-6 hours ⠀
6 tbsp of raw cacao powder⠀
1 tsp of vanilla powder⠀
1/2 cup of rice malt syrup⠀
1/3 cup of melted coconut oil⠀
1/3 cup of roasted hazelnut butter (homemade nutella)
Melted raw chocolate + roasted hazelnuts to top
1. First make some homemade vegan chocolate hazelnut butter by roasting 1 cup of hazelnuts in the oven for 10min at 200 degrees and blending with 1/4 cup of maple syrup, 1/3 cup of cacao and 1/3 cup of coconut oil. (This recipe will make more than you need for the cheesecakes - you can use the leftovers to top them with it or use it for toast/ dipping fruit! 😋) ⠀
2. In a food processor blend the base ingredients together then press down into silicon muffin moulds.⠀
3. Then drain your soaked cashews and blend with the cacao, coconut oil, rice malt syrup and hazelnut cacao butter and the vanilla.⠀
4. Pour on-top of the raw bases and freeze for a few hours.⠀
5. Top with melted chocolate and extra hazelnuts and keep in the fridge for a few days or freezer for a few weeks.

Triathlon training is FULL ON. My coach @athletefood told me to eat a lot of carbs. I’m not talking an excess, just enough to stay strong through workouts and enough to fuel me for the next. This is based on science but I like to break things down simply: eat enough at the right time. So, I found myself a bakery and turns out they specialize in stuffed bread that is cooked in a wood burning oven (from 1923!). Which one would you choose?? Kicking off the spring with blanched and sautéed green beans.
In this recipe I blanched the green beans rapidly, then sautéed them with shallots.
I like the blanching process because it is the best way to preserve the natural color and a way to control the crunchiness of the vegetables; I personally like my green beans firm and not soft with fading color.
