Boston cream pie (cake) is my ideal cake. It’s basically an eclair in cake form. Which is my all-time fav. Instead of the typical buttercream, this fluffy yellow sponge cake has a vanilla pastry cream filling and is topped with a shiny dark chocolate ganache. Annnd the light and airy cake isn’t hidden under an excessive mound of sweet frosting. Which is a win in my book. Sorry, team frosting lovers. I’m pro cake. Now that Lunar New Year is over, it’s time to get back to our regularly scheduled programming. First on the agenda is Boston Cream Pie. Which is actually a cake. I personally like to call it an eclair in cake form. I especially love this cake because it ditches the frosting and allows the cake to shine. Plus, nothing says “I love you” like vanilla bean pastry cream sandwiched between two layers of airy sponge cake with a drippy dark chocolate ganache to top it off. So it’s perfect for Valentine’s Day. And, as some of you know, I posted this on insta awhile ago but lost all my photos after my hard drive crashed. So I’m happy to report that I’ve finally reshot this and the recipe is now on the blog! I also included some tips for making a no-fail sponge cake, so check it out. How can I call myself a Masshole baker without ever making a Boston Cream Pie??? This recipe turned out Wicked Good!!! Perfect flavors and the cake was light spongy. I was worried about the bittersweet chocolate but it just worked! You gotta try this one... my daughter says it’s her new favorite!

There’s a specific time each morning, right after I wake up, where I fight going to check my phone. You know... checking email, social media, any work really.
But I have promised myself to nurture myself more. I need that time. We all do, yes? Time to drink a cup of coffee....slowly☕️ Time to read my devotional and journal, even though I hate writing 😂. Time to make breakfast, time to workout, time to PAUSE and Breathe.. . .. .

#tbt 23/06/2019 - After almost two months of not coming to Astro Doughnut & Chicken, I had to go pick something up nearby and decided to stop by and try one of their seasonal flavored donuts. They’re there for a short time and changes every month. I picked out the least attractive donut of the lot, but it sounded interesting
🍩 This is one of their June flavors- the Blackberry Passion Fruit Boston Cream donut - which is filled with blackberry passion fruit pastry cream and glazed with a bittersweet dark chocolate and has a yellow and purple sugar dusting. Something about Astro Doughnut @astrodoughnuts is the donuts 🍩 are never too sweet. At least to me. Just right.
Among the July seasonal, I’m most interested in trying the Blueberry Peach Cobbler donut that has the spiced ginger peach in it. I dunno, maybe I’ll stop by sometime before the month ends.
