  • Vegan Cranberry & Matcha White Chocolate Entremet Cake by @nm_meiyee ♥️

Ingredients:

Matcha cake 
1 1/4 cups all purpose flour
2 tbsp cornstarch
2 tsp matcha powder 
1 tsp baking powder
1/2 tsp baking soda
1/2 cup powdered sugar
1/4 cup regular sugar (vegan) 
1 cup plant milk, room temperature
1/3 cup coconut oil
1 tsp vanilla bean extract
1/4 tsp salt
.
In a mixing bowl, combine dry ingredients. In a medium bowl mix together wet ingredients. 
Gently fold the wet mixture to the dry with a spatula to incorporate. Spread mixture to a lined small baking sheet. Bake at preheat oven 170c/340F for 18 minutes.

Cranberry orange jelly, 
1 cup cranberries 
1 cup freshly squeezed orange juice 
1/3 cup maple syrup 
1 tbsp orange zest .
In a saucepan bring all ingredients to a boil in a saucepan, stirring occasionally. Reduce heat and simmer, until slightly thickened. strain mixture through a fine-mesh sieve into a bowl, discarding skins and seeds. 
Pour the mixture back to the saucepan and bring to the boil then whisk in 1/2 tsp agar agar powder. Whisk until agar is dissolved. Pour mixture to silicone molds. Refrigerate until solid. .

Matcha mousse, 
1 canned coconut whipping cream, chilled 
200g dairy free white chocolate, melted 
2 tsp matcha powder 
1 tsp vanilla bean extract .
Beat whipping cream with a mixer until creamy, add in melted chocolate continue beating until incorporated.

Assemble: 
Pour first layer of mousse into the mold, Insert the layer of cake and jelly. Add the rest of the mousse on top. Tap gently against the counter to release air bubbles. Place in the freezer until set. .
Pour glaze over the frozen cake. Leave the glaze to set before using a hot knife to remove the drips. Carefully transfer the glazed mousse the serving plate, garnish and serve. #bestofvegan

. 🍇Preheat oven to 350F.
🍇3/4 cup of plant based milk with 1 tsp of apple cider vinegar. Set aside.
🍇1 cup of cranberries or any berries with 1 tablespoon of flour. Lightly mix. Set aside.
In a bowl:
🍇Mash two very ripe bananas with a hand blender.
Add:
🍇3/4 cup of golden sugar or coconut sugar.
🍇1/2 cup of melted coconut oil. .
🍇1 tsp of baking soda
🍇1 tsp of baking powder.
🍇1 tsp of vanilla powder.
🍇A pinch of salt.
🍇Add the buttermilk and mix well.
🍇Fold in 1 1/2 cup of flour and mix until just mixed or else the loaf will be too dense.
🍇Fold in berries. Add chocolate chips if you wish.
🍇Spoon or drop into a greased loaf pan. Bake for 50 minutes or until cooked in the middle.

  • Turkey, Pomegranate, and Ricotta Salad with Cranberry Vinaigrette is perfectly crunchy and wonderfully filled with the flavors of the holidays !🎄🍷 #holidays #healthy  #cookingwithruthie 
2 bunches romaine lettuce
1 turkey breast, sliced ¼ thick
1 cup ricotta cheese
¾ cup pomegranate seeds
¾ cup candied walnuts, rough chopped
1 rosemary sprig, rough chopped
Cranberry Vinaigrette:
½ cup of cranberry sauce
¼ cup of balsamic vinegar
½ cup of half and half
1 tablespoon of honey or agave
Divide romaine leaves between 4 serving plates.
Evenly arrange turkey and ricotta cheese on beds of romaine leaves.
Sprinkle candied walnuts and pomegranate seeds over salads.
Garnish with rosemary.
Cranberry Vinaigrette:
Add all the ingredients into a food processor and blend until the sauce is smooth and creamy.
Drizzle over salad. Store leftover dressing in the refrigerator.
Enjoy!

  • There is so much noise out there about health and wellness. It’s a lot for me, too, which is why I like to go back the basics. Your morning routine should be like Steve Job’s turtleneck: Constant & Consistent.
How we start the day dictates how we will feel the rest of the day. In fact, the first thing we put in our body can determine the entire day’s blood sugar response curve. I’m a creature of habit. Most days my breakfast is either a yogurt bowl or a smoothie.

Today’s Bowl:
GT’s Vegan Coconut Yogurt
2 tbsp chia seeds
2 tbsp hemp seeds
2 tbsp nut butter
1/2 cup blueberries 
Cinnamon

  • #ad I’m always looking for new dressings and sauces to add to recipes and @tiggitup perfect match dressings. You find can the dressings in the salad chiller or online @tescofood . They are currently only £1! I used the tomato and chilli dressing alongside some roasted veggies, the beetroot and honey with a butternut squash and onion galette and the yellow pepper and mustard with a potato, asparagus and green bean salad! The recipe for the roasted veggies is below! You can find more recipes and follow their journey @tiggitup 
Ingredients 
1 red pepeer
1 yellow pepper
1 red onion
1 courgette
1/2 an aubergine 
Handful of cherry Tomatoes
Salt and pepper
1 Tbsp of garlic olive oil
Dried thyme, basil and oregano

Method
Preheat oven to 200°C.

Chop up the red pepper, yellow pepper and onion into strips, chop the courgette and aubergine in small pieces and chop the cherry tomatoes in half.

Place all the veggies in a roasting tin and drizzle with garlic olive oil, salt and pepper and herbs!

Roast in the oven for around 20 minutes then drizzle over the Tomato and Chilli dressing to serve chilli 🌶 #nutritiouslydelicia  #GetTiggyWithIt #TiggleYourTastebuds #TiggItUp #StayTiggy

Tried @sweetgreen ‘s new winter squash + blue cheese salad (bottom) and it was SO good 🔥 The arugula, kale, and basil blend was the combo I never knew I needed in my life lol. You can never really go wrong with any of their salad though imo 🥗
