Omg y'all have to try this hack that @veganven came up with! The Cauliflower Zocalo Nachos!
Go to Rancho del Zocalo in Disneyland and head to the station where they make the Zocalo Nachos.
Ask for the Zocalo Nachos with no beef and dairy (cheese/sour cream), and then ask to add/substitute with the marinated cauliflower from the cauliflower tacos. So you'll end up with nachos with beans, guacamole, pico de gallo, and cauliflower.
I can't wait to try this one myself! Thanks so much @veganven for thinking outside of the box!

"We loved our stay so much! It was simply incredible, and so fun! I have to admit that I was slightly nervous thinking it would be hard to get into the tents but it turns out that it's much easier than I thought! My son REALLY loved it - he's a teenager which makes it even more valuable (you know how teenagers are!). There was also a star-gazing double decker hammock as well a regular hammock in addition to tents! The camp was set up beautifully in a peaceful corner of the camp, fairly secluded and we were not wanting for anything. As Shantel told us, just bring ourselves, food, cooler, and ice. That's it! Once we booked it, Shantel sent us the most fabulous email ever that covered all the details of what was available, and it whetted our appetite even more! I have to admit that it's one of those rare trips that didn't let you down when you bring your outsized expectations. Book this place - you won't be let down! Talk to Shantel, and work out the details with her - she's simply awesome! Trust me, if you love camping, nature, tents - this will cover that and more! In terms of activities - there is Lake Cuyamaca in which we went boating (it's away from the camp), and there are several trails - ask Shantel on the details for them! Last but not the least, there's a "historic town of Julian is just 30 minutes North of our site and has plenty of food and libation options, small shops and even a tour Eagle Peak Mine for $10/person!" When I got to the Fillmore Street Fair #goapele was just arriving so I was able to get into position at center stage about 10 rows back. It was cloudy and no stage lighting so I took what I could get with 800 iso & 1/800 sec ss.
Goapele took the stage with just a keyboard player-back but her powerful voice, lyrics and "exclamation-point gestures" are the whole package. Her lyrics invite you to open your mind and listen to her "social togetherness" messaging.
