  • Lau Sum Kee Noodle in Sham Shui Po was started by Jason Lau’s (above) grandfather who brought his family to Hong Kong to escape the war in China.
Lau Sum Kee Noodle is famous for its signature bamboo pole noodles - a process in which the chef hops up and down like a Seesaw to press the noodles with a giant bamboo pole. This process sounds like fun, but this art form of using your hands and a bamboo pole to press and mix the eggs, flour and other ingredients together is dying out. 
Chef let us know that when he was young he did not want to inherit the restaurant. But his father insisted that he, as the eldest son, had to take over the business. Lau’s son however will be where the family Seesaw stops rocking. 
I’m glad I was lucky enough to film where the magic happened and talk with a Michelin star chef about how you can turn a few eggs and flour into perfection with attention to detail and years of practice. I appreciate the laughs shared, the large bottle of peligrino, and the opportunity to take a moving portrait of you where your small bed in the apartment where it all started used to be.
