Here’s a prime example of a summer salad I threw together the other day… Grilled tofu in a sticky maple marinade, steamed broccoli, cucumber, giant cous cous, strawberries, and avocado! I love mixing sweet and savoury in my salads! Any salad combo suggestions in the comments would be much appreciated!

  • BACK after a couple of weeks without posting due to EXAMS! This is a simple tomato based curry that I threw together with random bits from the fridge. At the end of the week I’m usually left with vegetables that are looking a little worse for wear, so the easiest thing to do with them is make them into some kind of stew/curry/soup. I went for a chickpea, potato and spinach curry - super simple, healthy, and tastes great! Hope you have a great and relaxing end to your week #charlottteeats

Food is honestly something I would consider a huuuge part self care... your diet has a massive impact on how you feel and how your body functions so fuel it with the good stuff 🥰 Does that mean always sticking to healthy whole foods? Not necessarily! You can reach for the cake when you want to and still feel amazing as long as you’re being mindful and intentional about your choices. Eating out is probably one of my favourite things to do and I swear I end up spending 90% of my money on eating ❤️😌😂 Is anyone else like this? On the plate is a burrito bowl!   • This is my “I have no time, I’m hungry, I need food right meow, and I need CARBS”. The beauty of this meal is that it is so low effort. I usually keep a batch of rice in the fridge to use over a couple of days to save myself from having to cook it regularly 😇 #lifehack

As of late Sundays have become such an important day of the week to reset my routine and focus on my mental state. If I spend a few hours during the day getting everything organized for the week I feel so much better going back to work on Monday. I’ve began to see so much importance in having one day a week to take things slooowly. No rushing across London to run errands. No waking up at 6am to hit the gym. Everyone needs a little bit of space in their schedule to breathe and unwind. What are your favourite ways to reset for the week?

  • HELLO BEAUTIFUL 🥰😍 - me to my tofu 🌹 Sweet and sticky tofu, white rice, avocado, spinach, tomatoes, cabbage, and lemon 🍋 I am obsessed with cooking my tofu in maple syrup and chilli flakes. It is SO delicious and easy. I always put it in the oven to crisp it up at 180c and then throw it in a frying pan with some sauce. Tofu may not be for everyone, but it is certainly for me. Are you a tofu lover? Or do you find it bland? 😅

  • I am a massive advocate of making healthy eating accessible and convenient. I opt for home made meals as often as possible, but sometimes I’m in a hurry so I like to incorporate pre-made food into my day - on the right it’s a trusty tin of baked beans, but can be anything from pre-made burgers to grabbing granola bars on the go. The meal on the left was sticky tofu with broccoli, giant couscous, avo, cucumber, and strawberries on a bed of spinach! On the right we have a more simple meal of baked beans on toast with some spinach, avo, and cherry tomatoes. Both are equally delicious and equally valid choices! Always opt to eat whatever makes you happiest and helps you to feel your best 💕☀️ #charlottteeats

  • Another amazing eat in Bali was this 🧪 GREEN 🌴 burger from @pelotonsupershop! This is the ‘Veg Out Burger’ - a spirulina bun, roast potato and chickpea patty, caramelized onions, tomato, carrot, beetroot, purple cabbage, and lettuce with BBQ sauce, chilli, and aioli 💦 Would you try this? Or would you pass? 😂 I’ve been revolving my holiday around trying as much food as possible. I seem to sit down for every meal and order a full entree with a smoothie bowl on the side 😅 Tomorrow I’m going to record a full day of eating in Bali on my stories so keep an eye out for that 💥 You should never feel guilty about enjoying food when you’re on holiday - or ever!!!   • Not my usual kind of post but the food in Bali is honestly UNREAL. Today I tried out @kyndcommunity and @cafeorganicbali and neither disappointed. At @kyndcommunity I had their ‘berry tropical bowl’ - dragon fruit, coconut water, banana, strawberries, and granola, followed by the ‘Ghandi toast’ - pumpkin, basil pesto, sun dried tomatoes, spring onions, garlic, rocket, and sweet chilli, with a side of tofu scramble 💦 I hit up @cafeorganicbali in the afternoon and had their vegan Nutella and cashew butter roasts topped with strawberries and bananas! Safe to say I’m not coming home 🍓 #charlottteeats

I eat in tune with my cravings and I ‘properly’ cook maybe once a week; the rest of the time I live off easy salads, oats, and healthy snacks! I wanted to share this to remind you that you don’t have to spend hours slaving in the kitchen making cute little insta worthy Buddha bowls... you can eat messy salads and feel just as good about yourself 💁🏻‍♀️ #charlottteeats p.s.   • Holy mac n cheesus 😍 Admittedly I didn’t make this myself... it’s from a box.... it’s Annie’s pasta. Sometimes life calls for comfort food, and this was certainly one of those times. Admittedly it didn’t taste as good as I was hoping but I was curious when I saw they had a vegan mac and cheese! Topped it with some arugula, hemp hearts, and pepper! #charlottteeats

  • Honestly a lot of time goes in behind the camera on Instagram. Cooking food, styling it, taking photos, editing, making sure everything is picture perfect. Sometimes my meal has gone cold by the time I get around to eating it and I have to warm it back up again 😂 Just a gently reminder that food is fuel ⛽️ It doesn’t have to be ‘instagram worthy’ to taste good and be healthy #charlottteeats

  • Summer salads ✨ it’s slowly cooling down here and I’m using every opportunity to enjoy light summery salads for lunch/dinner before I begin tucking into bowls of soup and oats for winter (and inevitably refuse to remove myself from my duvet when it’s too cold 😂)! This bowl is super simple - half a veggie burger, steamed cauliflower, shredded carrot, spinach, sesame seeds, chia seeds, radish, watermelon radish, and chickpeas in a maple syrup glaze! #charlottteeats @charlotttequeen

  • My cravings change with the seasons - there are some meals that simply taste better in the summer because it’s hot outside and you’re craving something refreshing. In winter I want to curl up with a book and a bowl of warm toasty oats, in summer I love having fresh fruits and veggies at every possible chance🍃 #charlottteeats @charlotttequeen

Here’s a prime example of a summer salad I threw together the other day… Grilled tofu in a sticky maple marinade, steamed broccoli, cucumber, giant cous cous, strawberries, and avocado! I love mixing sweet and savoury in my salads! Any salad combo suggestions in the comments would be much appreciated!

They’re so delicious and packed full of nutrients 💦 I’m feeling a little worse for wear today after a few drinks last night so I’m definitely in need of some healthy food and a trip to the gym 📈 How are you spending your Sunday?
