  • Pâté Chaud? Sounds and looks like a flaky puffy thousands layer French biscuit pastry? Lol this is 100% a Vietnamese meat stuffed pastry 😆 our cuisine is greatly influent by the Frenchs after being colonized for an era. Chaud means “hot” in French so the pastry means “Hot Pate Puff pastry”. For those who don’t know, pâté is a paste of seasoned meat that contains liver in it. Vietnameses usually use pork pâte and ground meat but you can substitute with turkey or chicken pate too if you don’t eat pork. This is my favorite all-time breakfast growing up 🥰 my parents like savory pastries, so I attempted to make something that all of us love 🤗 also I got a bunch of messages from my friends and family saying they want to try after posting a video making these 🤣 I used premade puff pastry for time saving, but if you want to make it from scratch, there are recipes on the internet to follow. Here’s how I made 20 of them:

Ingredients: -2 sheets of @pfpuffpastry puff pastries (1 box)
-1 egg at room temp (separate yolk and egg white)
Filling:
-1/5 pound of ground pork (or chicken, turkey)
-1 oz of pork pâté
-1/5 of a diced onion
-3 tbsps of soy sauce
-3/4 tbsps of ground pepper
-1 tsps of coconut oil (I used this bcos I only had it at home at the time but feel free to use olive oil or canola oil)
- A round  2 1/2 inch cookie cutter

Marinate ground pork with pate, soy sauce, pepper for 15-30 mins. Caramelize the diced onion with coconut oil(or any oil) until slightly golden brown then add marinated ground pork and stir until they are almost cooked. Preheat oven at 400’F. Use a cookie cutter to cut the puff pastry sheets into approximately 40 of them. Use a roll pin to gather the leftover dough. Slightly beat the yolk and egg white in separate bowls. Use a baking brush to coat the inside of 2 pastry slides with egg white wash and place 1 tsp of meat in the middle of the bottom one. Then top the longer slide on top and assemble them together, egg washed side down. Continue until all are done, you make about 20 Pate Chauds, then coat the yolk on top of each completed Pate Chaud. Bake for 15 minutes until achieve puffy texture. Serve warm and toast if leave overnight 😍
