  • Risotto for dinner tonight. This is a mixture of the mushroom risotto recipe from BCB and the apricot chicken risotto from simply delicious. 
I didn’t want to add chicken tonight, so I added chorizo for extra flavour. I love the added carrot and capsicum blitzed and sautéed through the recipe (from simply delicious) and added white wine (BCB recipe). As long as you ensure you have enough liquid for what you’re adding to your bowl, you can pretty much play around with any recipe and create your own to suit your taste buds. #thermomix #bimby #risotto #mixandmatch #createyourownrecipe #chorizo #simplydelicious #bcb #lifemadeeasywiththermie

  • Popped into @cuckoo_prestwich for a mid-week treat yesterday. Turns out that on Tuesdays and Thursdays they have a great little deal on that gets you a pizza and a beer or wine for £9.50 😊 If you didn't see my last post about this place they do great thin crispy pizzas so that was an easy decision. Partnered that up with the sharing platter pictured here that was also really good. That crispy chorizo in the centre was amazing.

  • I have no idea what I’m having for dinner tonight... but unfortunately it’s not @thedaleyplate’s chicken with chorizo, rosemary & olives! Maybe tomorrow night. It looks bloody good. Here’s her recipe:

4 chicken thighs - seasoned to taste with smoked paprika, salt + black pepper. 
1 tbsp olive oil
1/2 large white onion, sliced
4-6 cloves garlic, chopped
2-4 oz chorizo sausage, sliced
1 tbsp sherry or red wine vinegar
2 oz chopped roasted red peppers
1 14.5 oz san marzano tomatoes, chopped
1-2 tbsp freshly chopped rosemary
1 cup mixed olives
2 cups chicken stock
Optional: Lemon juice to squeeze over after + fresh rosemary, crisped up in olive oil to sprinkle on top before serving.

Heat a cast iron skillet to medium-high, sear chicken in olive oil, 5 minutes per side until browned and set aside. Add onions, garlic and chorizo to pan and lower heat to medium. Sauté until onions are translucent then add red wine vinegar or sherry, red peppers, tomatoes, rosemary, olives, chicken stock. Simmer until reduced slightly, add chicken. Put a lid on and simmer on low heat for 30-45 minutes OR bake at 350F until chicken is 165F internal temp. Squeeze some lemon juice over, top with crispy rosemary. Serve over rice, polenta, veggie mash or pasta. Serves 4.
