  • Easy ‘CHEESY’ SMOKED TOFU SCRAMBLE – oil free. This is a gorgeous savoury breakfast. I love a tofu scramble! As per my Turmeric Sumac Scramble (further down my feed) by removing the oil and cooking off the moisture from the tofu, we actually get a more spongey 'eggy' texture from the tofu. Tofu is apparently a great source of amino acids, iron, calcium and other micro-nutrients and you can do so much with it.. :) For the scramble (Serves 2);
1 block firm smoked tofu
1tsp garlic powder
½ tsp cumin seeds
½ tsp paprika (a little extra to serve)
½ tsp Dijon mustard
Pinch nutmeg
1 tbsp tamari soy sauce/coconut aminos 
4 tbsp nutritional yeast (a little extra to serve)
To serve;
Sprinkle of nutritional yeast
Pinch of paprika

Drain and press tofu for 5mins (cover with kitchen roll/tea towel & something heavy). Add all other ingredients into a bowl & mix.  Crumble the tofu into a frying pan/skillet on a medium heat & stir to ensure it doesn’t catch whilst cooking off the moisture. After about 3/4 mins, gently stir into the tofu the mix of all other ingredients & cook for another 5 mins stirring regularly. Serve on some lovely gluten free bread/soughdough. Top with a sprinkle of nutritional yeast & pinch of paprika. I served it on turmeric soughdough with some avocado - beautiful!

- من الفطائر الرائعة المليئة بقطع الشيدر الغني والطماطم الشهية، وشطيرة مشبعة تذوب في بهجة الألوان. *المقادير
- عجينة فطائر جاهزة
- 4 حبات طماطم كبيرة مقشرة ومقطعة شرائح سميكة
- 2 ملعقة كبيرة ريحان مفروم
- ملح
- فلفل أسمر
- ثوم بودر
- كوب الا ربع روب - كوب جبن تشيدر مبشور *طريقة التحضير
- توضع الطماطم على مناشف ورقية وتترك جانباً لامتصاص الماء.
- يسخن الفرن، ثم تفرد العجينة في صينية مناسبة وتخبز لمدة 10 دقائق أو حتى تتحول للون الذهبي. - توضع طبقة من شرائح الطماطم ويضاف اليها الملح والفلفل، والثوم والريحان المفروم. تكرر الطبقات حتى انتهاء كمية الطماطم. - يخلط الروب مع جبن التشيدر ويوزع الخليط فوق الطماطم.
- تخبز الفطيرة في فرن متوسط لمدة 35 دقيقة، ثم تبرد قليلاً قبل التقطيع.

  • سحور رمضان 🕌🌛 هناك نوعين من السحور بإمكان الصائم أن يتبع أحدهما:  الأوّل موجّه لمحبي السكر: فبإمكان الصائم في هذه الحالة أن يشرب كوب حليب قليل الدسم يؤمّن من خلاله السوائل والبروتين، إضافة إلى حبوب الإفطار الكاملة (السيريال) التي تحتوي على الكثير من الألياف مع إضافة كمشة لوز وفواكه مجففة إليه. يتجه عادة الصائم نحو التمر لأنه يقدّم طاقة تدوم (ثلاث أو أربع حبّات من التمر)؛ أمّا النوع الثاني لمحبّي الأملاح: فبإمكان الصائم تناول خبز قبعة الشوفان مع الألبان أو الأجبان مع تناول الخضر لتأمين الألياف.

ولا يجب أن ينسى الصائم شرب نصف ليتر أو 750 ميليلتراً من السوائل أو من الماء أو من الحليب أو من اللبن.

لا تستغني عم المكسرات والأفوكادو

بالإضافة إلى النشويات والبروتينات والسوائل، هناك الدهون الموجودة في اللوز، الجوز، الأفوكادو (نصف حبة أفوكادو)، كلّ غرام من الدهون يقدّم 9 سعرات حرارية أي أكثر من النشويات أو البروتينات التي تعطي 4 سعرات حرارية بالغرام، تمدّ الصائم بالطاقة ليصمد الصائم أثناء اليوم، وكي لا يصرف الجسم كذلك كلّ طاقته، فيضطر إلى حرق العضل في الليل، لذلك ينصح بتناول الدهون غير المشبعة كتلك الموجودة في المكسرات والأفوكادو.

أمّا لمن لمن يستصعب الاستيقاظ عند الثالثة صباحاً لتناول هذه الوجبة، بإمكانه أن يقرّب وجبة السحور لتناولها عند الواحدة أو الواحدة والنصف، أفضل من عدم التسحر أبداً. إنّما من الأفضل تأخير السحور وتناوله عند الثالثة للمحافظة على الماء والطاقة لغاية الإفطار

*דפי אורז מרובעים *שומשום/גרעיני חמניה
למילוי: 1 גביע קוטג׳, 1 גביע גבינה לבנה,  פטה 5%, 3 מקלות מוצרלה, 1 ביצה חיה, מלח, פלפל רגיל, פלפל אנגלי, פטריות חיות, מרק עוף אורגני (אפשר רגיל), שמן זית, בצל לבן ובצל ירוק. *איך מכינים?*
1.מטגנים במחבת עם מעט שמן זית בצל לבן ופטריות (או כל ירק אחר שבא לך אפילו בטטה) ומחכים שיתקרר
2. במקביל בקערה בצד מערבבים קוביות קטנות של פטריות, גבינות, בצל ירוק קצוץ, 1 גביע קוטג׳ ו1 גביע גבינה לבנה. 
3.מרטיבים דפי אורז עד שיתרככו (10 שניות בערך) ממלאים בכף מהמילוי, עוטפים כמו טיטול ל-4 ומהדקים
4. משמנים קלות תבנית אפייה (שלא ידפק לתחתית) מניחים את הבורקסים, מורחים ביצה ומניחים שומשום/קצח/גרעיני חמנייה מעל.

    1.מטגנים במחבת עם מעט שמן זית בצל לבן ופטריות (או כל ירק אחר שבא לך אפילו בטטה) ומחכים שיתקרר
    2. במקביל בקערה בצד מערבבים קוביות קטנות של פטריות, גבינות, בצל ירוק קצוץ, 1 גביע קוטג׳ ו1 גביע גבינה לבנה.
    3.מרטיבים דפי אורז עד שיתרככו (10 שניות בערך) ממלאים בכף מהמילוי, עוטפים כמו טיטול ל-4 ומהדקים
    4. משמנים קלות תבנית אפייה (שלא ידפק לתחתית) מניחים את הבורקסים, מורחים ביצה ומניחים שומשום/קצח/גרעיני חמנייה מעל.

And not before savoring these dark chocolate blueberry cookies, packed with fiber, protein and yumminess! Dipped in milk (almond this time) just like I always used to eat cookies when I was a kid. The chocolate is 80% cocoa and dairy free.

The truth is, what’s healthy for some may be unhealthy for others,⁣
& situationally, what’s healthy for some may be unhealthy for others.⁣

A regular exerciser and nutritionally filled person wouldn’t do any real harm having a bag of chocolate buttons every other day.⁣

An overweight person bordering on diabetes should probably think twice about those very same buttons (for now at least).⁣
⁣
For me, I eat chocolate almost every day in my breakfast. (sure i’ve put on a little tub recently but it isn’t the chocolate alone doing that - I also went from 86kg to 72kg eating the same breakfast)⁣

  • Saving this one. Looks incredible.

I used to do a similar one: cut a pocket into a chicken breast and stuff it with a 50/50 mix of cheddar and mozzarella mixed with whole grain mustard. Wrap the chicken in pancetta and put in the oven. Not only does the pancetta add more flavour, it stops the chicken drying out whilst in the oven.

Ingredients

125g ball mozzarella, torn into small pieces
50g strong cheddar, grated
1 tbsp wholegrain mustard
4 skinless boneless chicken breast fillets
8 smoked streaky bacon rashers

Tip

Make it veggie
Cheesy baked mushrooms: Heat oven to 180C/fan 160C/gas 4. Mix the mozzarella and cheddar with 1 tbsp pesto, then spoon into the hollows of 4 portobello mushrooms. Place on a baking tray and roast for 15 mins or until the mushrooms are softened and the cheese is bubbling.

Method

Heat oven to 200C/fan 180C/gas 6. Mix the cheeses and mustard together. Cut a slit into the side of each chicken breast, then stuff with the mustard mixture. Wrap each stuffed chicken breast with 2 bacon rashers – not too tightly, but enough to hold the chicken together. Season, place on a baking sheet and roast for 20-25 mins. .
