Good morning & happy ☀️day! Texted everyone in my group message this morning & asked who wanted to get brunch with me & knew I could count on @laurenritson to come 😍 We has a delish brunch at a local favorite @thegourmetshop5points - definitely a perfect Sunday brunch or weekday lunch place to check out if you’re ever in Columbia, SC. ☺️ I had a meltyyyy Brie 🧀 and bacon 🥓 croissant 🥐 with a scrambled egg 🍳 and a side of cheese grits. Literally the most perfect savory breakfast in the whole world 🤩 Now off to get some stuff done so I can start my week off on the right foot (plus fall break is on Wednesday and I’m going to Disneyyy 😍). Chrissy Teigen’s Lemon Parm Spaghetti (serves 4)
12 ounces dried spaghetti
1/4 pound (about 3/4 cup) pancetta or bacon, finely diced
Slightly less than 1/4 cup extra-virgin olive oil
3 tablespoons minced garlic
1 teaspoon red pepper flakes, plus more to taste
2 teaspoons ground black pepper, plus more to taste
1/4 cup lemon juice
1 1/2 cups freshly grated Parm cheese
3 cups baby arugula/spinach
In a large pot of heavily salted boiling water, cook the spaghetti to al dente (al dente over everything) according to the package directions. Reserve 1 cup of the pasta water (it comes in handy), then drain the pasta.
Meanwhile, in a small pan, cook the pancetta/bacon over medium-high heat until crisped, 7 to 9 minutes. (If using bacon, drain). Place in large pan. Add the olive oil, then add the garlic, red pepper flakes, and black pepper and cook until fragrant, about 1 minute.
Add the lemon juice to the skillet, then toss in the drained pasta and toss to coat. Add the Parm and toss, adding the pasta water, a couple of tablespoons at a time, just to help the cheese coat the pasta. Add the arugula and toss until it wilts, about 1 minute. Season to taste with additional salt, lots of black pepper, and red pepper flakes. Serve with more Parm.

Here is your chance!!! Chef Pierce Bowers (chef of BLD and future chef for Central Station) will be preparing a taste of things to come. Each course paired with a delicious offering from Klinker Brick Winery in Lodi.
2 chicken breasts
1 onion (sliced)
1 green pepper (sliced)
1 red pepper (sliced)
Fajita spice packet
Preheat 2 separate pans on medium heat. Slice chicken breasts into strips. Place in pan. Place sliced veggies in another. Sprinkle half of fajita packet over the chicken and veggies. Add 1/2 cup of water to both pans. Mix well. Cook chicken until no longer pink and veggies until the onions are translucent. Place in tortilla with desired toppings (I like guacamole Jacob likes Queso). Enjoy!

Sunday morning gasss to end a great weekend 🤤 The last few days were packed with lots of fun as usual, and this was the best way to top it off 😍 This morning, @courtt.fit and I got takeout brunch from @cafe_strudel - mine was a big plate of grits, a biscuit, sausage, gravy, & 2 over easy eggs.
