1 tablespoon olive oil⠀
3 chicken breasts, cubed⠀
salt, to taste⠀
pepper, to taste⠀
4 cloves garlic, minced⠀
2 ½ cups chicken broth⠀
2 ½ cups heavy cream⠀
1 lb penne pasta, uncooked⠀
2 cups parmesan cheese⠀
2 cups mozzarella cheese⠀
1 handful fresh parsley, chopped⠀
In a pot, heat oil and add chicken.⠀
Season chicken with salt and pepper.⠀
Add garlic, then brown the chicken.⠀
Add broth, heavy cream, and pasta, and bring to a boil.⠀
Cover and reduce the heat to a simmer for 15-20 min.⠀
Turn off heat and stir in 1 ½ cups (165 grams) of parmesan cheese.⠀
Pour half of the pasta into a greased 11×7 inch or 9×13 inch (28x18 cm or 33x23 cm) baking dish.⠀
Sprinkle evenly with 1 cup (115 grams) of mozzarella cheese.⠀
Layer the remaining half of the pasta evenly on top. Sprinkle evenly with 1 cup of mozzarella (115 grams) and ½ cup (55 grams) of parmesan.⠀
Broil 10 - 15 minutes, or until the cheese is golden brown. Remove and sprinkle with fresh parsley.⠀
Serve warm and enjoy!⠀

1 bread boule⠀
1 cup marinara sauce⠀
8 oz fresh mozzarella cheese⠀
6 oz pepperoni⠀
½ onion, sliced⠀
½ cup fresh basil⠀
1 cup sausage, cooked⠀
1 green bell pepper, sliced⠀
1 cup white cheddar cheese, shredded⠀
Slice the top of the bread boule off and remove the insides.⠀
Spread ½ cup (130 G) of the marinara on the bottom of the boule, then layer with half of the mozzarella, 5 ounces (140 G) of the pepperoni, onions, basil, sausage, peppers, the other ½ cup (130 G) of marinara, the remaining mozzarella, and half of the white cheddar, and place the cap of the bread boule on top.⠀
Wrap the bread bowl in foil, then press with a heavy object for 30 minutes.⠀
Preheat oven to 350°F (175˚C).⠀
Remove the foil and sprinkle the remaining cheddar and pepperoni on top. Bake for 30 minutes, until cheese is golden brown.⠀
Cool for 10 minutes and slice.⠀

with Mediterranean feels! 😍 Had all sorts of bits and bobs in the fridge that needed using up, so used some syns to enjoy this lovely lot - I appreciate that most would not use so many syns in this way, but this is a plate of heaven for me 😋😋😋
1/2 can Lidl Eridanous Dolmades -4.5 syns
(I actually prefer to make my own but we always have these lurking in the cupboards!)
Asda Greek Souvlaki Mini Skewers - I believe the whole pot is 1 syn, I only had 3.
Sun dried tomatoes - 2 syns
Olives - 1.5 syns
Homemade syn free tzatziki
Greek salad (2nd A)

Tomato & Feta tart. Full of flavour and incredibly easy to make this is a perfect summer meal. I love combining fresh with sun dried tomatoes; you get freshness but also rich tomato taste and it works beautifully. Thank you to @cypressafoods who #gifted me the sun-dried tomatoes.
INGREDIENTS 🍅1 pack ready rolled puff pastry 🍅1 jar @cypressafoods Sun-dried tomatoes. (150g) 🍅100g cherry tomatoes 🍅100g feta cheese 🍅fresh basil 🍅fresh rocket 🍅1 egg, beaten.
METHOD 🍅Preheat the oven to 175C 🍅Drain the sun-dried tomatoes and put three aside. Put the rest in a small blender. 🍅Put three cherry tomatoes to the side and put the rest into the blender with the sun-dried tomatoes. Blitz to a paste. 🍅Roll out the pastry on a baking tray and using a sharp knife score an inch wide border around the edge. Be careful not to go all the way through the pastry. 🍅Spread the tomato paste on to the pastry going right up to the border. 🍅Sprinkle the feta on top. 🍅Cut up all the tomatoes you set aside at the start and sprinkle those on top as well 🍅Egg wash the border and put in the oven 🍅Bake for about 25 mins till the pastry is cooked through 🍅Let it cool for a few minutes and then sprinkle with the fresh basil and rocket. 🍅I served it with dressed beetroot and olives. #gifted#eathappyfeelgood#cypressafoods

It’s sausages in an apple and mustard sauce with cauli rice. I used @heckfooduk Chicken Italia Sausages and @fullgreen.official cauli rice. Will definitely be a recipe I make again and again!🤗

Tacos de Pollo Asado 🐔 Grilled Chicken Tacos with all the trimmings and homemade tortillas .
From time to time I like to treat my children with their favourite dishes. And today my daughter Miah wanted me to make “that pollito that we buy in Mexico, the one is juicy and you eat it in a tortilla!” (That is what she said) and she was talking about this pollo asado that we get in Ensenada and it comes with tortillas, pico de gallo, spicy salsa and fries 😆
It is delicious and juicy. We shred the chicken and eat it tacos. I made mine with some jalapeño butter and grilled it on a grill pan. I made all the trimmings and we had a wonderful dinner 💖

Nasello in crosta di mandorle e noci con fagiolini.
Come si fa?? Facilissimo!
Tritare in un mixer le mandorle, io ho aggiunto anche del rosmarino fresco e del sale rosa ...trita tutto e metti in un piatto....
Io ho usato il nasello surgelato, ma per velocizzare la preparazione ho sbollentato il pesce in acqua bollente per circa 3/4 minuti...poi tolto dall'acqua l'ho passato nel trito...in forno a 180 gradi per circa 15 minuti... altrimenti se utilizzate il pesce congelato Direttamente vi consiglio di passarlo velocemente sotto l'acqua corrente fredda e poi impanarlo e per la cottura al forno calcolare 25 minuti più o meno.
Ah dimenticavo, quando il pesce è in teglia con carta da forno, se volete potete mettere un filo d'olio extravergine, ma effettivamente non serve secondo me, perché una volta tritata la frutta secca rilascia già il suo "olio" naturale.
Simple dinner: sausage stew
🔸1 large potato, roughly chopped,bite sized
🔸4 medium sausages of your choice,sliced,bite sized
🔸1 Cup frozen peas
🔸2 large carrots, chopped
🔸1 large onion, sliced
🔸2TB Olive oil
🔸1 stock cube plus a cup of water or 1 Cup liquid stock
🔸1t Black pepper
1TB thickening agent (Cornflour, flour, chickpea flour, instant soup powder)
1. On medium heat, add olive oil into a saucepan, add sausage and onions, fry until onions are caramelized and slightly darker-brownish in colour.
2. Add stock, black pepper, water, carrots and potatoes
3. Cover and cook on low heat until the potatoes are cooked through
4. Adjust the seasoning if need be. Turn off the heat, add frozen peas, stir and mix well. Cover and let the stew sit for a 2-3 minutes or until the peas have fully thawed.
Serve, Enjoy! It's a complete meal 😋😋
