  • Chickpea & Zucchini pancakes with corn and dried tomatoes by @anna.culina 🌿 Served with a summer salad and a tahini & yogurt sauce. Check out the recipe below!

Ingredients (5-6 pancakes):
120g (4oz) chickpea flour
½tsp salt
½tsp baking powder
80-100ml (3oz) water
1 small zucchini
80g (3oz) corn, cooked
5 dried tomatoes, cut in small pieces
1Tbsp fresh herbs (rosemary, thyme, basil), chopped
1tsp Olive oil

Method: Grate zucchini and generous sprinkle with salt, set aside. Mix chickpea flour, baking powder and salt. Mix in the water until well combined. Lightly press the grated zucchini to remove part of the liquid. Add the zucchini together with the corn, tomatoes, olive oil and herbs to the batter. Let the batter rest for 15 min. Heat up a little of olive oil in a large pan. Fry pancakes from both sides until golden brown.

  • Mushroom Steak Sauce
This mushroom steak sauce is sauteed mushrooms in a savory brown sauce enriched with butter. This mushroom sauce makes the absolute best topping for steak, and is also great served over chicken, pork and seafood. By @dinneratthezoo

4 tablespoons butter divided use
16 ounces sliced mushrooms
1 1/2 teaspoons garlic minced
2 tablespoons flour
1 1/2 cups beef broth
1 1/2 tablespoons Worcestershire sauce
2 tablespoons pan drippings from cooked steak optional
salt and pepper to taste
1 tablespoon chopped parsley
Instructions
Melt 2 tablespoons of butter in a large pan over medium high heat. Add the mushrooms and season with salt and pepper to taste.
Cook for 5-7 minutes or until mushrooms have softened and are browned. Add the garlic and cook for 30 seconds. Stir in the flour.
Slowly whisk in the beef broth, Worcestershire sauce and pan drippings. Bring to a simmer and cook until just thickened. Stir in the remaining 2 tablespoons of butter until melted.

  • Roasted Potatoes and Chorizo. Sometimes during the week we only have an hour or two to devote to dinner. Other times we are just simply too tired to put much effort into slicing or standing over a stove carefully watching our food so it doesn’t burn and become ruined. I think that’s really the main draw of one-sheet recipes in general. Throw everything in a pan with some spices and toss in the oven for a half-hour and dinner is on the table. This recipe in particular adds a nice warming spiciness to your weeknight dinner plans in these cold winter months.  Smoky chorizo and creamy potatoes add a nice contrast with any added vegetables. This recipe also doubles as an amazing filling for breakfast burritos with the addition of eggs and cheese.   • Well, ramen nights are better than no-men nights. This hearty Geikikara ramen bowl made of tonkotsu, spicy miso and spicy minced pork not only warmed my heart but also gave upped the ante with its flavourful thick broth, which I truly value in a good bowl of ramen soup and this ended existing blues (if any at all) for my Monday weeknight.

  • Green pea & zucchini stew (vegan)
⠀⠀⠀⠀⠀⠀⠀⠀⠀
🌿 Ingredients:
* 400 g frozen green pea
* 1/2 of a bigger zucchini
* 1 smaller red onion
* 175 g (vegan) sour cream (Dr. Oetker's creme vega for example)
* 1 tbsp flour
* 2 tsp sweet paprika powder
* 2-3 tsp salt
* 1 tsp pepper
* 1 tsp dried parsley
* 1/2 tsp tarragon
* 3-4 tbsp vegetable oil (sunflower)
* Water
⠀⠀⠀⠀⠀⠀⠀⠀⠀
🌿 Method:
Chop up the onion, pour some oil into a pot, add the onion and some salt, then a tiny bit of water (like 50ml) and let it cook on low heat for a few minutes. Add the frozen green peas and the spices, then enough water to cover the peas and put a lid on the pot. Dice up the zucchini, I removed the seedy middle part, and once the peas are almost completely softened, add the zucchini. Once they're both soft enough (keep adding more water if necessary), add the sour cream and the flour. Make sure you don't use too much, because it really thickens the whole thing, so less is more in this case. Stir for a few minutes and eat it with bread and/or shredded cheese if you eat dairy/know a good vegan cheese.

  • I have been craving spinach and artichoke dip, so I whipped up this Spinach & Artichoke Pasta with Chicken. Here’s what I did. You could easily make this vegetarian (take out the chicken), vegan (use coconut oil, almond milk and DF cheese), or gluten free (use almond flour for the roux and GF pasta or veg noodles). 1. Make a roux with butter and flour (I used coconut oil as we were out of butter) and add milk or unflavoured almond milk until you get a nice smooth sauce. Add salt & pepper.
2. Break a log of goat cheese into smaller pieces and add to sauce, stirring until the cheese melts into the sauce. 
3. Add a can of chopped artichoke hearts to the sauce followed by 3-4 cups spinach (could also use thawed and drained frozen spinach) and chopped cooked chicken. 
4. Add a bit of pasta water to the sauce if it’s too thick.
5. Add cooked pasta and serve!

INGREDIENTS 
250g Parmesan cheese, finely grated
125g cheddar cheese, finely grated
2  minced garlic cloves 
1 chopped onion
500g mushrooms 
2tbs olive oil
1 1/2 tsp salt
1/4 tsp Black pepper
500g pene pasta
500ml vegetable stock
500ml milk
4 cups baby spinach or 1 pre packed packet 
METHOD 	1. Finely grate cheese. Mince 2 cloves garlic and slice mushrooms. 	2. Heat olive oil in a large pot sauté onions and Add the mushrooms, cook, stirring occasionally, until the mushrooms are browned and tender, 5 to 8 minutes. Add the garlic, salt, black pepper. 	3. Stir in the stock and milk to a simmer and add pasta. Reduce the heat to maintain a simmer. Cook uncovered, stirring frequently to keep the pasta from sticking, until  al dente and most of the liquid is absorbed and has formed a creamy sauce, about 10 minutes or according to package instructions. 	4. Remove from the heat. Add the baby spinach and cheese and stir until the spinach is just wilted and the cheese is melted, about 1 minute. 	5. Serve more grated Parmesan cheese and black pepper

Объявляю неделю полезных рецептов без глютена 😉Меня посадили на эту диету в связи с тем, что сын также может иметь целиакию. А так как проверить это можно ещё не скоро, то диета нужна на всякий случай 🤷‍♀️

✖️Конечно, целиком от глютена отказаться я сразу не могу, но стараюсь немного ограничить его употребление 👌

🌿Посему, ловите вкусный вариант ужина или обеда с нежнейшим мясом. И напоминаю, что не любая сметана или специи, купленные в обычном магазине, не содержат глютен ‼️

Нам понадобится:
🌿Спагетти рисово-кукурузные (у меня "Макфа")
🌿Сметана 1ст.л+1ст.л ("Выборгское")
🌿Специи пряности с чесноком (у меня Санта Мариа)
🌿Филе индейки или куриное
🌿Лук репчатый 1шт
🌿Грибы шампиньоны

Приготовление:
Для маринада берем одну столовую ложку сметаны и смешиваем её со специями. Разрезаем вдоль на три части и маринуем в течение 20-30 минут.

Отвариваем спагетти в подсоленной воде до состояния Аль Денте. Скидываем на дуршлаг и промываем.

На сковороде с растительным маслом обжариваем репчатый лук до золотистого цвета и добавляем грибы. Обжариваем в течение двух-трех минут, затем выкладываем мясо и жарим с двух сторон на среднем огне по 2-3 минуты с каждой стороны. Перевернуть на вторую сторону мясо, залить сметанным соусом(1ст.л + немного воды) и готовить ещё пару минут.

Затем вытаскиваем мясо по готовности, в эту же сковороду добавляем спагетти. Хорошо перемешиваем, чтобы спагетти полностью перемешались с остатками соуса.

    Объявляю неделю полезных рецептов без глютена 😉Меня посадили на эту диету в связи с тем, что сын также может иметь целиакию. А так как проверить это можно ещё не скоро, то диета нужна на всякий случай 🤷‍♀️

    ✖️Конечно, целиком от глютена отказаться я сразу не могу, но стараюсь немного ограничить его употребление 👌

    🌿Посему, ловите вкусный вариант ужина или обеда с нежнейшим мясом. И напоминаю, что не любая сметана или специи, купленные в обычном магазине, не содержат глютен ‼️
