I was talking to my cousin the other day about how it’s so good for me and my mental health to be busy and have lots of variety! I love having different things to do each day. I love having a job that I need to dress up and put makeup on for.
On days where I don’t have much to do or don’t have a reason to leave the house, I find my thoughts are more likely to go to a negative place. I am still definitely one for having lots of alone and down time, just not all the time!
They say that having a purpose is KEY for longevity, and I couldn’t agree more! ❤️
Q: what helps you keep your mental health in check? for me, besides being busy, I need to surround myself with people who have a positive impact on me - who lift me up and support me!

  • typical saturday starting with yoga, pancakes, & laundry. 😂 i had a perfectly juicy white peach, so i finally followed @rachlmansfield recs to add peaches to pancakes-> game changer 🤤 added some creamy pb (always) & maple syrup on top (duh) and enjoyed my lil plate of heaven. 😌 now to study the rest of the day away. 🙂 Happy Saturday! ———————————————————————— @birchbenders plant protein pancakes with chopped white peach added in, topped with @crazyrichardspb creamy pb, @myfavoriteindulgence maple cinnamon granola, more white peaches, & a drizzle of warm maple syrup post pic 👅

Crust: 80 g toasted almonds (ground), 80 g toasted cashews (ground), 3 T coconut oil, 10 g cacao powder , 2 T agave

1st layer: 240 g cashews(previously soaked for min 4 hours), 100 g coconut cream (the thickened cream from a can of full-fat coconut milk), 4 T agave, 4 T coconut oil, 3-4 T lemon juice, 50 g dark chocolate (chopped)

2nd  layer: 160 g cashews(previously soaked for min 4 hours), 80 g coconut cream (the thickened cream from a can of full-fat coconut milk), 2 T coconut oil, 100 g white chocolate, 1-2 T agave, 2 T lemon juice, 2 t maqui berry powder, 3-4 T almond milk

Line the base of a 16 cm cake tin with baking paper. Process all the crust ingredients until the mixture sticks together. Press the crust mixture evenly into the cake tin.

1st layer: Place all the ingredients (except chocolate) in a high-speed blender and process until the mixture is smooth and creamy. Gently stir in chopped dark chocolate pieces and layer the filling on top of the crust. It's best if you put chopped chocolate pieces in the freezer for half an hour before adding it to the filling (make sure it's not warm from blending) to ensure that chocolate pieces won't melt.

2nd layer: Melt the chocolate in a medium pot over low heat. Place all the ingredients in a high-speed blender and process until the mixture is smooth and creamy. Pour the mixture on top of the first layer. Place the cake in the freezer to set for at least 3-4 hours.

  • Japanese curry with Tofu Katsu and steamed Japanese Rice 🍛

Recipe:
Tofu “Katsu”
(Makes 4 katsu)
2 240g blocks fresh extra firm tofu 
1/2 tsp salt, or to taste* 
Canola oil, for frying (*Note: feel free to adjust the seasoning as needed. I had mine with curry sauce, which was already flavorful so I didn’t want the dish to be too salty or anything)

Batter 
1/4 cup flour
1/2 tbsp + 1 tsp cornstarch 
1/2 tsp baking powder
1/2 tsp salt
1/4 cup water

Breading 
1 cup japanese breadcrumbs, or more as needed 
_
1. Drain water from the tofu by wrapping them in paper towels and then placing a heavy flat surface (a board or plate) on top of each. Leave for 15 minutes until water has been absorbed by the towels.
2. Slice each tofu into two 3/4-inch thick square slabs. Sprinkle with salt as needed.
3. Prepare the batter by mixing all the ingredients until smooth. This will be a really thick batter. In another plate or tray, add the breadcrumbs. 
4. Place each tofu in the batter then coat into the breadcrumbs. Repeat this step for the rest of the tofu. 
5. Heat the oil in a frying pan. Once hot (you can test this by putting a little bread crumbs), add in the tofu. Fry for around 6-8 minutes over medium heat until golden brown. Take out of the oil then turn off the heat. 
6. Let cool for 5-8 minutes then slice diagonally into strips.

Pepagi nak belanja uolss result Mami diet dekat sebulan dah kot nah. Entahh tak ingat. Hahahaha. 
Mami sendiri takat ni puas hati. Diet + workout + supplement membuahkan hasil. Yesss tiga ni penting ye.  Penting dia ikut turutan perkataan ditulis. 
Bukan nye telan supplement sekontena tapi makan minum tak jaga. Workout tak buat untuk bakar lemak dan shaping. Itu totally wrong. 
Jangan tanya berat berapa. Ku hanya tahu sekarang berat ku seberat cintaku pada mu. Ciaaaa. 🤣

Nota jejari : Gambar selebihnya mami share menu. Sebab nanti kompem ada tanya menu kan. So mami kasi sesiap. .
