Makes me realize how fortunate and blessed we are to have access to fresh adundant and clean produce! 🏖
We are currently in the riveria maya at an eco resort! And despite the wild monkeys at our feet, the ocean, pools, cenotes and just amazing weather I have to say I am a bit shocked at the lack of vegan food options here. It's the typical western diet with almost non existent vegan or gluten free options. The guac has mayo in it, the beans are made with pork and the rice is heavily salted (and likely has beef broth in it). They have one veggie resturant that we have not been able to eat at all week because it is either closed or our kids are not allowed (adult night)!!!

So today for lunch I had a bun (in all it's gluten glory) with cucumber, hot peppers, pickles and mustard! It was pretty sad. .
Thank goodness for their abundant mangoes! Otherwise we are having a pretty great time! I hate to complain but I think as an eco resort they should prioritize eco friendly things...like food! Don't you think! Sandos! Step up your game! Where are the rice and beans poolside!

  • Bonsoir ! Le retour après un abcès dentaire aigu. J’avais la joue gonflée et je ne pouvais que manger des purées... maintenant que l’antibiotique a fait son boulot, je peux enfin mâcher :) on comprend mieux la valeur de notre santé avec ces petits bobos. Pour ce soir, j’ai préparé une salade de jeunes pousse au saumon et aux grains de grenades. J’ai aussi fait une sorte de gratin de courgette au fêta (cuit dans le four avec une cuillère d’huile d’olive). Tout ça pour combler les manques de vitamines causés par l’antibiotique :) #frais #vie #regimeuse #strasbourg #bodytransformation #gourmet #salad #salade #grenade #dinner #dîner #eatwell #mangersain #happy #curvy #eatingforinsta

  • Dinner al fresco this eve to soak up some more of the sun ☀️ Bean chilli, coriander rice & rocket with feta 🌱
The gym was seriously tough today so I was very grateful for a low effort dinner using leftovers 😏
Not to mention a cool down in the fresh air after lack of air con at the gym 🥵

في طنجرة نضع القليل من الزيت، نزيد كشمش ونقلب ثم نرفعه عن النار نضع الرز والقليل من الهيل و رقتين غار نضيف الماء والملح عندما يتشرب الرز ماء نضع الكمشمش على وجه الرز نترك الرز حتى ينضج نضع على نص كميه الرز ماء زهر مع زعفران وصبغه صفراء

  • This leek and mushroom risotto uses in-season produce and is a decadent #vegetarian dish! To make it #vegan, simply skip the Parmesan cheese. This recipe and more via the link in bio. 🍚
INGREDIENTS
- 1 pound shiitake mushrooms, stemmed and sliced
- 1 leek, thinly sliced
-1 cup onion, diced
- 2 cloves garlic, minced
- 2 c risotto
- 4 c vegetable broth
- 2 c peas, frozen
- 1 c grated parmesan
- olive oil
- salt + pepper
optional: several drops of truffle oil
🍽
DIRECTIONS
Takes about an hour. Preheat oven to 350°F.

1. In a large cast iron pan, sauté the shiitake mushrooms in a splash of olive oil for a few minutes to get the pan nice and hot. Then put in the oven to roast for about 30 minutes.

2. To make cooking time faster, warm the broth in a small pot.

3. In a large pot, sauté the leeks in a splash of olive oil until soft. Add in the garlic and stir until fragrant. Then add in the dry risotto, stirring frequently until it starts to turn golden brown.

4. Add warm broth to risotto in small amounts, stirring frequently (no need to cover the pot). Wait until all of the broth is absorbed before adding more. Do this in increments until the risotto is soft, about 30 minutes.

5. Once risotto is soft, stir in frozen peas and top with the roasted shiitakes and leftover leeks. Optional: add several drops of truffle oil.

I haven't been here since I was a little girl so at least 30yrs ago when I couldn't appreciate it.  Just was doing my best to keep up with mom and not get lost in the crowd.

I came here full after brunch @sohochickenandwhiskey but I'll be back with some hunger left so I can eat some of the wonder7 prepared foods inside. 
The plethora of history this building has from 1907 (breaking ground) to present is a significant part of Cleveland's history.
