Makes me realize how fortunate and blessed we are to have access to fresh adundant and clean produce! 🏖
We are currently in the riveria maya at an eco resort! And despite the wild monkeys at our feet, the ocean, pools, cenotes and just amazing weather I have to say I am a bit shocked at the lack of vegan food options here. It's the typical western diet with almost non existent vegan or gluten free options. The guac has mayo in it, the beans are made with pork and the rice is heavily salted (and likely has beef broth in it). They have one veggie resturant that we have not been able to eat at all week because it is either closed or our kids are not allowed (adult night)!!!
So today for lunch I had a bun (in all it's gluten glory) with cucumber, hot peppers, pickles and mustard! It was pretty sad. .
Thank goodness for their abundant mangoes! Otherwise we are having a pretty great time! I hate to complain but I think as an eco resort they should prioritize eco friendly things...like food! Don't you think! Sandos! Step up your game! Where are the rice and beans poolside!

Tried out the strawberry flavor cheesecake from Uncle Tetsu! Just like the original flavor, the cheesecake was super soft and light tasting! Definitely could finish half or even a whole cake in one sitting! 😆 //📍San Mateo

This leek and mushroom risotto uses in-season produce and is a decadent #vegetarian dish! To make it #vegan , simply skip the Parmesan cheese. This recipe and more via the link in bio. 🍚
- 1 pound shiitake mushrooms, stemmed and sliced
- 1 leek, thinly sliced
-1 cup onion, diced
- 2 cloves garlic, minced
- 2 c risotto
- 4 c vegetable broth
- 2 c peas, frozen
- 1 c grated parmesan
- olive oil
- salt + pepper
optional: several drops of truffle oil
Takes about an hour. Preheat oven to 350°F.
1. In a large cast iron pan, sauté the shiitake mushrooms in a splash of olive oil for a few minutes to get the pan nice and hot. Then put in the oven to roast for about 30 minutes.
2. To make cooking time faster, warm the broth in a small pot.
3. In a large pot, sauté the leeks in a splash of olive oil until soft. Add in the garlic and stir until fragrant. Then add in the dry risotto, stirring frequently until it starts to turn golden brown.
4. Add warm broth to risotto in small amounts, stirring frequently (no need to cover the pot). Wait until all of the broth is absorbed before adding more. Do this in increments until the risotto is soft, about 30 minutes.

All in all, this burger brings fine dining flavours to the street food scene. It’s so elegant yet understated which makes me love it even more. The subtle flavours combined packs a huge punch that elevates an already great burger. -
As always, regret not doubling up but I had a lot of food to get through so it was probably for the best 😭🤣 plus it is how the burger was meant to be eaten, so glad I got to enjoy it in its purest form 😋
Sehri before sehri at so many food streets we didn't know that exist in karachi!
A lot of you guys DMed us asking for the location of all these places so we thought of doing a post for you.
Our first stop was bohra street food at pakistan chowk saddar where we had the famous malpuras, khattay alu and chaat from. I loved the malpuras they were the best ones I've had. The bohra street food market is open till the end of ramadan and is on after iftari. 9 pm onwards will be a good time to go.
We discovered the haleem biryani spot at pan mandi and since we didn't quite like the concept of haleem with biryani, we only ordered biryani and loved it! Also the roll wala next to haleem biryani serves the best rolls in karachi I've been told. You should try!
Our last stop for limca was at ranchor lines which was a discovery in itself cause i had never been here and the whol area was full of ramazan ronaq and the vibe was so warm and lovely. Felt like i had been transported to olden era.
So we had a super traditional sehri and it all costed us less than 500 bucks total. So do go guys and enjoy!
I haven't been here since I was a little girl so at least 30yrs ago when I couldn't appreciate it. Just was doing my best to keep up with mom and not get lost in the crowd.
I came here full after brunch @sohochickenandwhiskey but I'll be back with some hunger left so I can eat some of the wonder7 prepared foods inside.
