Happy Thursday friends! I hope you all are having a great week so far! This morning I got to volunteer with @rotaryinternational during their Christmas Clothes event! This program provides much needs shoes, winter clothes and other items to at-risk children throughout Las Vegas during the Christmas season! It’s such an amazing and humbling experience and I was so lucky to be part of this! I’m in my last class of the semester before finals then heading to work! Enjoy your day! ❤️

Tis the season of all things chocolatey, sugary and Christmasy!! This CHRISTMAS CRACK is one of my favs to make because it’s sooo easy and super delish!
Recipe:
-1 sleeve of saltines
-1 cup brown sugar
-1 cup butter
-2 cups chocolate chips
-toppings your heart desires!
-preheat oven to 350, line baking pan with aluminum foil, fill entire bottom with crackers, placing them side by side
-are brown sugar and butter to sauce pan, medium heat, stirring occasionally, until low boil. Remove from heat and allow to cool for a minute, pour over crackers
-bake for 5-7 minutes, remove from oven and sprinkle chocolate chips, place back in oven for 4-5 minutes until chocolate melts, use spatula to spread chocolate over crackers -add any other toppings you want then place in fridge for 30 minutes to let chocolate harden

I had not one but THREE Thanksgiving dinners this past week and my face each time I saw food was like ⁣⁣

Despite being nervous, I feel like I did really well! I had fun & I stuck to my hunger cues and ate moderately. ⁣⁣

* I can stop after a plate and be totally satisfied 🙂 ⁣⁣

* American portions are WAY too big. I eat half and through being aware of my hunger cues I’m actually pretty full. ⁣⁣

* All you can eat KBBQ makes a lot of money off of me 😂 ⁣⁣
⁣
* After ridding myself of sugar cravings, everything tastes WAY TOO SWEET now. ⁣
⁣
This shift from years of  counting macros to intuitive eating / No Numbers has been more eye opening than I thought! ⁣⁣

  • Weekend treat, big platter of our favourites. .
Ok, this Christmas gift shopping is getting real. Went out today came home with 1 gift which is for Ariane’s stocking. She told me she wants 1 million plus 2 million and 199 nail polishes, doesn’t even make sense what kind of numbers she is thinking 😂😂. .

I’m a fabulous procrastiBAKER so I made some BANANA BREAD! 2 bananas + 1/2 cup nut butter (I used @maranathanutbutters almond butter) + 1 egg + 1 cup almond flour + 1 scoop @livwell_nutrition protein + cinnamon + 1/2 tsp baking soda + crushed walnuts and mix all together and bake at 350 for 20 minutes 😋

  • When we accidentally coordinate at the gym...☺️ After a day of taking care of others at the clinic, we take a bit of time to take care of ourselves. Sometimes it’s a “kick your own butt” kind of workout and other times it’s a “just keep moving” workout. Your mind, your muscles, and your joints loveeee to move. We know that exercise helps with depression, peripheral vascular disease, osteoarthritis, chronic pain, GI mobility, Parkinson symptoms, stress, boosting metabolism and seriously SO MANY other conditions.  Keep on movin, my friends!🚂 .

  • These decedant 'Cherry Ripe Balls' make a delicious healthy treat for Christmas. Macadamia nuts are rich in protein to help keep you satisfied and curb sugar cravings, along with heart healthy monounsaturated fats. Cherries and raspberries are jam-packed with protective antioxidants and vitamin C, to help support healthy immune function, and reduce the risk of chronic diseases
.
200g raw macadamia nuts
100g shredded coconut
6 medjool dates, remove seeds
1 cup cherries, remove seeds
1/4 cup raspberries, fresh or frozen
250g good quality dark chocolate
Handful raw cacao nibs for topping
Small mint leaves for decoration
.
Method:
1. Place macadamia nuts, coconut, dates, cherries and raspberries in your food processor and blend until well combined.
2. Roll into balls and then place in the freezer for 40 min.
3. Melt chocolate in a water bath then place balls in melted chocolate, coat well, then remove with a fork. Place balls on a tray covered in baking paper.
4. Sprinkle with cacao nibs. Do this before the chocolate sets.
5. Place balls in the fridge until ready to eat.
6. Top each ball with a small mint leaf before serving.
7. Makes 10 cherry ripe balls

  • I don’t usually drink/buy a lot of juice. I’m on a kick now though, bc of the thousands of @dailyharvest (no affiliation) smoothies in the freezer where I’m staying currently; and it’s the easiest thing to mix one up as a quick meal/snack, when quick is the priority.⁠⠀

Smoothies can be good or bad. Especially in winter, drinking a mass of something cold and gloppy is probably not ideal (arguably maybe never); and could be stressful/a mismatch enough to tip some folks over the edge into not feeling so well.*⁠⠀
⁠⠀
Also, a bunch of fruit and juice, even if it’s natural/not processed, is a serious sugar bomb, which has a lot of negative effects.⁠⠀
⁠⠀
You can have some of those things in a smoothie, but you want to minimize them, and add in their place: protein, fat, and vegetables; like a handful of greens, half of an avocado, nuts/seeds or homemade milk (ideally sprouted), deli meat (just kidding 😆), maybe a quality protein powder or MCT (I’m conflicted about both of those), etc. to balance it out.⁠⠀
⁠⠀
Plus—further juice awareness: whenever you have a large food brand (Tropicana, Olive Garden, McDonald's, etc.) where, no matter where you go, it always tastes the same, that should raise a red flag. There’s some form of chemical processing occurring to standardize that product.⁠⠀
⁠⠀
At best, it’s an unnecessary and diminishing modification of what was once a good, natural food; and at worst, it’s the creation/perpetuation of a toxic mess. Most are somewhere in between.⁠⠀
⁠⠀
Caution with orange juice in particular, as most (even the 'good' brands!) is heavily processed to make it last a year+, which also takes out the flavor and most of the nutrients; then flavor/scent is added back in, in the form of “flavor packs”—combos created by the same perfumers that work with Dior, etc. based on oranges (hence being able to say the products are 100% orange), in order to convince the senses that that person is drinking fresh/real orange juice, which is a long stretch, at best. ⁠⠀

  • Sempre criei um padrão na minha mente de um corpo perfeito, padrão acima de padrão. Para mim ter um corpo fitness tinha de estar a 100%! Nunca aceitei o meu corpo porque tinha dobrinhas na barriga, peito grande e alguma gordurinha nas costas. E ir para a praia por exemplo, era algo que me aterrorizava pela tamanha exposição que havia das partes que eu menos aceitei do meu corpo. 
Ver uma dobrinha no meu corpo, um pouco de celulite ou até mesmo a barriga inchada era o desespero total! Achava que não estava boa o suficiente, que eu era uma fraca. 
Eu olhava para o corpo das “musas”, das modelos, e perguntava porque é que eu não era assim se me sacrificava tanto! 
Isso levou-me a que me sacrificasse de forma excessiva. E isso inclui qualquer foto minha em que se notasse uma dobra ou a luz não favorecesse tanto. E com o tempo, com o amadurecer, eu percebi que nem tudo o que parece é. 
Acima de tudo quero que vocês entendam que, eu, Rita, treino, como de forma saudável e equilibrada, porém eu uso ângulos, a melhor luz para ter uma fotografia. Nem sempre ficam como gosto e esta por exemplo, primeiro gostei e agora, não gosto muito. Mas ao longo do tempo trabalho no pensamento: eu não sou perfeita, não tenho de o ser! E perceber que está tudo bem 🙂 ter um dobrinha e estar um pouco inchada! 
Acima de tudo quero mostrar-vos que sou real, e está tudo bem mostrar-vos isso!

  • I cry a little when sweet mango season is gone because it means no Mango Sticky Rice. However, rather than having my usual sliced avocados sprinkled with sugar snack, I incorporated them with @whiteelephantpdx’s coconut sticky rice and drizzled it all with coconut milk. A perfectly sweet, comforting dessert. Would you try this? #uglydelicious

  • “Meal prep”, ovvero prendersi una-due ore per cucinare in grandi quantità, in modo da avere già i pasti pronti per i giorni successivi.

Mi piacerebbe poterlo fare ogni domenica, ma (fortunatamente!) non sempre riesco: in questo periodo siamo spesso fuori nel weekend oppure abbiamo ospiti.

Vi lascio comunque le mie “strategie” per un meal prep invernale (#vegan):
1. Faccio una spesa ragionata:in casa non mancano mai legumi (alcuni decorticati) e cereali secchi, riso di varie tipologie e cous cous
2. In cucina, tiro fuori quello che mi occorre un po’ alla volta, cerco di riutilizzare le pentole che ho usato per più di un piatto
3. Ottimizzo fuochi ed elettrodomestici: se uso il forno, penso almeno a un paio di ricette

Poiché mangio in ufficio e mi porto il pranzo da casa, alcune porzioni le congelo così la mattina (o la sera) non devo far altro che tirare fuori uno o due barattoli per avere il pranzo pronto.
