I almost cried after the first bite… I could never imagine 4 years ago when I had to quite all the gluten and dairy stuff, that it would be possible to eat something so good again 🤩🙈 Even better than the regular croissant I used to like so much... Changing my eating habits was so hard at the beginning, but I couldn’t be more grateful now it happened to me. I never felt so fit and energetic as today, and without that big change in my life, I wouldn’t have created these magic muffins and many other things btw… (far beyond recipes).
All of this is to say that if you have to make only one of my recipes once in your life, this is the ONE!!!

𝘗.𝘚: 𝘋𝘰𝘯’𝘵 𝘧𝘰𝘳𝘨𝘦𝘵 𝘵𝘰 𝘮𝘦𝘯𝘵𝘪𝘰𝘯 𝘮𝘦 𝘪𝘧 𝘺𝘰𝘶 𝘮𝘢𝘬𝘦 𝘮𝘺 𝘳𝘦𝘤𝘪𝘱𝘦𝘴, 𝘴𝘰 𝘐 𝘤𝘢𝘯 𝘴𝘩𝘢𝘳𝘦 𝘺𝘰𝘶𝘳 𝘤𝘳𝘦𝘢𝘵𝘪𝘰𝘯𝘴 𝘩𝘦𝘳𝘦! 
𝗥𝗲𝗰𝗶𝗽𝗲 for 10 muffins
* 200g almond flour
* 30g coconut flour
* 1 tsp baking powder
* Pinch of salt salt
* 1 tsp baking soda
* 1 tsp lemon juice
* 2 medium ripe bananas
* 60g agave syrup
* 1 teaspoon vanilla extract
* 2 eggs (or flax eggs)
* 50g coconut oil, melted
* 100g extra dark chocolate chips 
Preheat the oven to 170 °C (350°F).
In a large bowl, place the flour blend, baking powder, salt, and whisk to combine well. In a small cup, place the baking soda, combine with the lemon juice and add it to the flour blend. 
In another bowl, mash the bananas to form a puree. Add the agave syrup and vanilla and stir. Add in the eggs and oil and stir until well combined. Add in the dry mixture and stir with a wooden spoon. Finally fold in the chocolate chips and stir gently.
Spoon the batter into a muffin liners and sprinkle on additional chocolate chips. Bake for 20 minutes or until a knife inserted in the center comes out clean. Let it cool completely. Enjoy!

  • CHICKPEA BLONDIES! Vegan, gluten free & delicious! One of my all time favorite recipes. The key to this recipe is waiting 2 hours before cutting into them which is ridiculously hard because they make your house smell like a bakery. •

2 cans garbanzo beans 
1/2 cup organic maple syrup
1/4 cup coconut sugar 
3/4 cup peanut butter (any) 
3 tbs almond milk 
2tsp vanilla 
Dash of sea salt

🌸Шоколад, вишня-портвейн, миндальное пралине
🌸Морковный пряный с апельсиновыми цукатами, выпечным чизкейком внутри, цитрусовым конфитюром
🌸Ванильный с «холодным» чизкейком с чаем матча, кремю малина-роза, соусом из клубники с крем бальзамиком
🌸Груша -голубой сыр с ореховыми бисквитами и кремом на взбитой солёной карамели.
🌿В первый день испечём все бисквиты, сделаем начинки, и соберём торты «на черновую»
🌿Познакомимся с чаем матча @matchamatix
🌿Один из вариантов альтернативы живым цветам - зефирные цветы от @viki_kitty

  • i love food. i love making food, especially breakfast food. after spending a few years in college struggling with my relationship with food, i wanted more than ever to move past that and love it, in every way, again. and i did ✨ i fell in love with cooking, trying new things (including things i didnt like, like big tomatoes or monkfish) and began enjoying foods, all kinds of food again.

and i love sharing it with you all 👩🏻‍🍳 i get joy out of it, so much joy - like this bowl of my favorite oatmeal i’ve shared a dozen times already, but realistically have at least a few times a week 🤷🏻‍♀️ but slowly, i’m feeling drawn toward other things, wanting to share more and i’m at a place where food still makes me happy but it isn’t the only thing i want to share.

  • Untraditional tortillas could/should have a spot in your Mexican feast.  There are as many types of tortillas as there are fillings.  Coconut and cassava flour make up these mild flavored tortillas. Softened in the microwave they are somewhat pliable for folding, but lack flavor. However, crisped up in a skillet with oil they have a toasty coconut aroma and a neutral flavor.  Ideal for feisty savory fillings and sweet desserts. Need inspiration head over to the Real Coconut website or head down to Tulum Mexico for the Real Coconut restaurant!  It’s such a delicious time to be eating all these diverse foods!

————————————————- I quit drinking coffee for two month because of plenty reasons and I am back with my lovliest drink again! 💕☕️ However, during that period I was craving some warm and satisfying drinks, cuz I literally got tired of tea (no hate) 🙈. So there is one of my fave ones -CHAI LATTE ✨👇🏼!
- 1 cup milk of your choice (my favourite is oat)
- 1/2 tsp cinnamon - 1/4 tsp ginger powder (fresh one works as good)
- 1/4 tsp cardamom
- 1/4 tsp nutmeg
- a tiny bit of ground cloves
- any sweetener of choice (I usually use maple syrup) 
Heat up the milk with all of the spices on the stove and stir occasionally. Pour to your favourite mug through the sieve and enjoy 🌟 !

Salad deets: Massaged kale with sesame salmon + purple cabbage + strawberries & avocado in a lemon/olive oil dressing
The salmon is marinated in coconut aminos and seasoned with garlic powder, salt, pepper and sesame seeds, then baked on 400 for 12 minutes

2 oz BERTOUX Brandy
.74 oz Lemon Juice
.75 oz Chinese 
5 Spice Syrup
2 dashes Toasted Pecan Bitters
1 oz Red Wine Float .

Shake all ingredients, except the wine, over ice. Strain into an ice-filled rocks glass. Float 1 oz of a full bodied red wine. Garnish with orange wheel & grated nutmeg.

  • What’s your favorite smoothie flavor?

I’ll be perfectly honest: I eat smoothie bowls year-round, even if it’s cold and snowing outside! I can’t help it - they taste so good, they fill me up with nourishing ingredients, and they’re easy on my stomach. So if I enjoy them in the winter, you better believe I REALLY enjoy them on days like today when it’s 90 degrees outside! .

When it comes to smoothies, my motto is always this: the thicker the better 😋  oh, and always add lots of toppings 😂 Not only do the toppings taste great, but chewing them helps to get your digestive juices flowing, which then helps your body absorb all the nutrients, and also helps to keep you full until your next meal/snack. .

So what are my tips for making a delicious smoothie bowl?
* Start with frozen veggies as your base. They’re packed full of nutrients and you can hardly even notice the taste! * Use frozen fruits and veggies to make it nice and thick, and use a minimal amount of liquid (just enough to help it blend).
* Add some healthy fats to keep you feeling satisfied (avocado, nut butter, seeds, flax, chia, etc.) * Add a serving of fruits or a couple dates if you need some sweetness
* Add some toppings and eat the smoothie with a spoon. * Add some protein (protein powder, powdered PB, Greek yogurt, etc.)

Green Smoothie Bowl:
- Frozen zucchini (~2/3 cup)
- Frozen cauliflower (~2/3 cup)
- Frozen pineapple (~1/3 cup)
- 1/2 frozen banana
- Plain Greek yogurt (~1/4 cup)
- 1 heaping TBSP cacao powder
-1 TBSP peanut butter
- 1 serving vanilla protein powder
- Cinnamon. - Enough milk to blend 
Topped with unsweetened coconut flakes, cacao nibs, and crushed up dried banana chips. .

  • Cakepops are a fan favourite and not the most easy to make. All my Cakepops are handmade and I don’t have any fancy machines just make it the old fashion way - handroll and dipped in chocolate. These spring style sprinkles are from Wilton brand and they are so light and stay on your Cakepops(any brand that are tiny sprinkles should work) .
The cookies behind were gluten free which all sold old and was a favourite.  These are the only type of cookies I can eat;) #glutenfree

So this was my first try at making cinnamon rolls 👩🏽‍🍳 They’re not the prettiest or the standard looking cinnamon rolls 🙈 But they actually tasted delicious! 😋👌🏼 So definitely some adjusting needed on the dough but overall, they tasted great 👍🏼 That’s all that matters right? 🤷🏽‍♀️

Recipe📝
Dough:
▫️3/4 cup Unsweetened Almond Milk (@silk)
▫️1/2 cup Coconut Oil, melted
▫️2 Cage-Free Brown Eggs (@vitalfarms)
▫️2 tbsp Honey
▫️4 cups Almond Flour (@bobsredmill)
▫️1 tsp Cinnamon
▫️Pinch of Salt
▫️1/2 tsp Baking Soda
▫️1/2 tsp Lemon Juice
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Cinnamon Filling:
▫️1/2 cup Brown Sugar
▫️2 tsp Cinnamon
▫️4 tbsp Coconut Oil, melted
▫️1 tbsp Vanilla Extract
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Icing:
▫️1 1/2 cup Powdered Sugar
▫️3 tbsp Unsweetened Almond Milk (@silk)
▫️1/2 tsp Vanilla Extract

Dough: Whisk together the milk, oil, eggs & honey. Then add in the remaining ingredients. Set aside.
Cinnamon Filling: Mix together all the ingredients in a bowl & set aside.
Icing: Mix together all the ingredients in a bowl & set aside.

Preheat oven to 350°.
Lay down some more flour & knead your dough. It will be sticky so make sure to continuously add flour when needed. Roll out evenly into a rectangular shape.
Then spread the cinnamon filling evenly. Start to roll up the dough into a log. I found that use a flat object, such as a cutting board, helps to lift up the edges as you go. Definitely wasn’t perfect or even but oh well 😬
Once rolled up, use a knife to cut into slices. Then place into 2 round baking dishes (I used my cast iron skillet & a pie dish).
Bake in the oven for 35 mins. Once cooked, let it cool before pouring on the icing. Enjoy! 🤤

▫️Whole Wheat Pita Bread
▫️Tzatziki Sauce {deets below}
▫️Hummus {deets below}

▫️Radish, sliced
▫️Cherry Tomatoes, halved
▫️Onion, sliced
▫️Cilantro

Tzatziki Sauce:
▫️1/2 Cucumber

▫️Lemon Zest

Eggplant Falafels:
▫️Eggplant, sliced
▫️Panko Breadcrumbs (@progresso)
▫️1/2 cup Whole Wheat Flour
▫️1 tbsp Cumin & Chili Powder
▫️1/2 cup + 2 tbsp Water
▫️Salt & Pepper

Tzatziki Sauce: Grate the cucumber, sprinkle salt, & drain excess water. In a food processor, add in all the remaining ingredients. Pulse to mix together. Add the cucumber back in & use a spoon to mix. Set aside in a bowl.

Hummus: Pulse together all ingredients in a food processor. Add in the oil & water while pulsing the chickpeas. Set aside in a bowl.

Eggplant Falafels: Slice the eggplant, sprinkle salt on both sides, & drain excess water. In a bowl, mix together flour, cumin, chili powder, & water- this makes the batter. In a plate, lay out the breadcrumbs. One by one, dip the slices in the batter, then coat each side evenly in breadcrumbs. Place into the air fryer (don’t overlap the slices, may need to do two batches). Cook at 400° for 10 mins.

    Tzatziki Sauce: Grate the cucumber, sprinkle salt, & drain excess water. In a food processor, add in all the remaining ingredients. Pulse to mix together. Add the cucumber back in & use a spoon to mix. Set aside in a bowl.

    Hummus: Pulse together all ingredients in a food processor. Add in the oil & water while pulsing the chickpeas. Set aside in a bowl.

    Eggplant Falafels: Slice the eggplant, sprinkle salt on both sides, & drain excess water. In a bowl, mix together flour, cumin, chili powder, & water- this makes the batter. In a plate, lay out the breadcrumbs. One by one, dip the slices in the batter, then coat each side evenly in breadcrumbs. Place into the air fryer (don’t overlap the slices, may need to do two batches). Cook at 400° for 10 mins.
