Ingredients:
2 1/2 C All purpose flour
1/2 C cocoa powder
1 Red Star Active Dry Yeast
1/4 C sugar
1 Tsp salt
1/2 C milk
1/4 C water
1/2 stick unsalted butter 
1 XL egg

Cinnamon Sugar Filling: 2 Tbsp softened unsalted butter, 1 1/2 Tbsp Cinnamon, 1/3 C sugar

Glaze: 1 C Powdered sugar, 3 Tbsp whole milk or heavy cream, 1 tsp vanilla

To Prepare:
1. Turn oven to 250 (use after step 6). Later to 375.
2. Measure milk and oil in a bowl to microwave and drop in 1/2 stick unsalted butter. Microwave 1 Minute 40 seconds. Set aside for a couple minutes. Use when it’s still warm but not piping hot.
3. Place yeast in your mixer with the flour, cocoa powder, sugar and salt.
4. Pour the microwaved liquid into your mixer slowly on medium low speed, add the egg, combine ingredients on medium speed until dough forms and sides of the bowl are clean. 
5. Knead the dough well on lightly floured board for a couple of minutes. 
6. Roll out the dough to 1/2 inch thick (no need to measure out lengths to create a rectangle. It does not have to be perfect. You will roll the whole thing inwards from the long side.) Smear 2 Tbsp butter and sprinkle on all the cinnamon sugar mixture. Roll and cut into even slices. Tuck into a pie or cake pan. 
7. Once the oven reaches 250 degrees turn it off and place rolls in with door halfway open. Cover rolls loosely with foil. Leave them for 1 hour to rise. 
8. After 1 hour, you should notice they have risen. Remove from the oven and turn the oven up to 375. Bake 25 minutes center rack uncovered. 
9. Remove from the oven and frost with icing. 
Prep Ahead:
1. Place yeast in your mixer with the flour, cocoa powder, sugar and salt. Cover tightly with plastic wrap until ready to make.
2. Put xl egg out on the counter to come to room temperature.
3. Put 1/2 stick unsalted butter out on the counter to come to room temperature for the cinnamon sugar filling. Prep cinnamon sugar filling and cover tightly with plastic wrap until ready to use.

Pies aren't something you include in your everyday baking. So here's a version that you can whip up whenever you like and is easy peasy. .

CRUMBLE Topping

130g Whole Wheat Flour
20g almond powder
70g Melted Butter (salted)
40g brown sugar (I love the moistness of brown, can use normal granulated sugar instead too)
1 tsp cinnamon powder 
1/2 tsp vanilla essence

Mix everything together with a fork (or rub with your fingers), mix it well and leave it in the fridge while you prep the filling - this topping will be crumbly.

FILLING

4 Large Apples - Peeled and Diced (roughly 1/2 inch sized)
[Ideally 2 granny smith (green) and 2 Red Apples]
Juice of 1/2 Lemon
50g chopped almonds (optional - I like the nutty crunch)
2 tbsp flour (helps to thicken up the juices)
75g Brown Sugar (Can use normal sugar)
1tbsp Cinnamon Powder

Mix everything for the filling together and put it in a baking dish. You are going to serve this dessert in the dish you make it in, so use multiple ramekins or a larger pretty baking dish. Cover with a good thick layer of crumble topping and bake at 180degrees for 30 mins (the crumb on top should turn nice and golden).
Serve warm with dollops of vanilla icecream .

  • Soooo because I received 50/50 results on this mornings poll, here is the Banana Chocolate Chip muffin recipe I promised! This is loosely based on a recipe I looked into on @pinterest by a fellow blogger @ambitiouskitchen but I made changes to better fit my personal preferences. Me and my husband love these for a grab and go breakfast and the prep and bake time all together is about 30 minutes so you really can’t beat it! It’s also gluten/dairy free and uses no White Sugar...
-3 Ripe or Even MUSHY Bananas
-2 Level Cups 1 to 1 Gluten Free Flour. I like using @bobsredmill and it is available at our local grocery store. (@pillsbury 1 to 1 also works really well!)
-2 Medium Eggs (can be replaced with flax eggs but this is not a preference of mine)
-1 Teaspoon Baking Powder
-1 Tablespoon Cinnamon
-2 Teaspoons Vanilla Extract
-1 Teaspoon Maple Extract
-1 Teaspoon Pumpkin Spice Extract -1/4 Cup Pure Maple Syrup (I use @maplegrovefarms Organic but any brand you prefer will work)
-3 Tablespoons Light Brown Sugar
-Chocolate Chips (I eyeball this measurement 😉) @enjoylifefoods Chips are a good nut safe and dairy free option!
-About a Shot worth of Rum if desired. I use @krakenrum in mine.

1. Preheat oven to 350 degrees and grease/line your pans. *This recipe yields 24 mini muffins and a 6x6 loaf for me.
2. Add Bananas to your mixer till mashed or mash with a fork. Then combine with eggs, rum, syrup and extracts.
3. Once blended to a smooth paste slowly add in flour, baking powder, brown sugar and cinnamon. 
4. After all ingredients are combined turn off your mixer and fold in the chocolate chips.
5. Divide into your greased pans. (I use a small ice cream scoop to make this easier) Then bake for 20 minutes or until edge turn golden brown.
6. Let cool completely, store in an air tight container and #ENJOY!
