  • Mouth watering pasta bowl by @janetsmunchmeals ♥️ Pasta with Kalamata Olives, Cherry Tomatoes & Spinach in white wine sauce.

Ingredients:
1/2 lb. pasta
1/4 cup olive oil
1 small onion finely chopped
4 to 5 cloves garlic minced
1 pint cherry tomatoes sliced lengthwise
1 tsp salt
1/2 tsp pepper
1 tsp dried oregano
1 tsp dried basil
1 cup dry white wine
1/3 cup pitted kalamata olives roughly chopped (some whole)
1/2 cup marinated sun-dried tomatoes
2 cups (packed) baby spinach 
2 tbsp capers (drained)
Juice of 1/2 lemon
2 tbsp (packed) fresh parsley chopped.

Cook pasta in salted water to al dente. Meanwhile in a large pan, add oil and onion, cook around 8 to 10 min until translucent. Add garlic, cook 1 min. Add tomatoes and seasonings, stir, cook 5 min. Add wine, stir, let reduce by half (gently bubbling away). Add olives, sun-dried tomatoes and spinach. Stir and cook until spinach is just wilted. Add cooked pasta, lemon juice, capers, stir. Serve and top with parsley. Drizzle with bit of olive oil and more lemon juice if desired.

  • If there’s one thing I’ve hope I contributed to the world,🤩 it is this monstrosity. Yes, we are talking about the AVOCADO TOAST SALAD, a salad that quite honestly puts all other croutons to shame. I used to eat this all the time two years and I’m so excited to bring it back. 🤗 If you’re never made croutons into mini avocado toasts, that needs to change probably today! 
I have zero perishable food in my house so I need to go take a study break... I mean run to the grocery store today. 😝 Finals time as a graduate student does that to you! Anything at Trader Joe’s I need to pick up? Lemme know!

  • Welcoming the weekend with this 3-Ingredient Vegan Hot Chocolate 🍫 Reminds me of those swiss miss packets that I used to LOVE as a kid 😍I topped mine with mini vegan marshmallows and coconut whipped cream and can’t wait to cozy up with this + cookies all weekend 💯
Serves 2:
2 cups milk of choice
1/4 cup cocoa powder
2 tbsp agave or maple syrup 
toppings: non dairy whipped cream, mini marshmallows, cocoa powder 
In a small saucepan, bring the milk to a boil. Reduce heat to low and stir in the maple syrup and coco powder. Whisk well. Pour into two mugs and top with mini marshmallows + whipped cream

  • CHICKEN, BULGAR WITH SUCUK & MUSHROOMS

A dish I learnt to cook years ago. Once I got married I started making it for my husband and now it's one of his favourite meals. He was craving it recently and I decided to make it today. This dish is turkish inspired and really healthy. The chicken is seasoned with salt and zatar. The bulgar is full of flavour from the stock, sucuk & vegatables. I made an onion and cucumber salad with lots of chopped parsley & coriander. The dressing was madevwith olive oil, salt and lemon juice. It went together perfectly! 
I've included a picture of how it looked before it went in to the oven to cook.

You know those days where nothing seems to go right? 🥵 Yeah that was my day. But at the end of the day life is good & I have so much to be thankful for.

I’m so lucky to have access to just about any & all the food that I want 🍴I have a house to go home to at night, I have a fiancé who loves me, & I have today to start over!

  • Channeling my inner @allgoodeats with this meal! Oven-roasted eggplant, tomatoes & Brussels sprouts over a bed of baby kale.

Ingredients:
2 large eggplants 
3 cups Brussels sprouts
1 cup organic tomatoes 
2 cups organic baby kale
4 tbsp. extra-virgin olive oil
2 tsp garlic powder
Sea salt and pepper 
Dress @seggianolovesfood Artichoke & Garlic Sauce
Directions:
Preheat oven at 350 F ( in a rush an need higher heat? Swap olive oil for avocado oil as it has a higher smoke point)
Slice eggplant  in half lengthwise. With the tip of a knife, score the flesh deeply in a diamond cross-hatch pattern by making two or three long cut. Coat with 2 tbsp oil, sea salt, garlic powder and pepper. Set aside
Slice Brussels sprouts in half and place in a large bowl; evenly coat with 2 tbsp oil and season with garlic, salt and pepper. In the same bowl used for Brussel sprouts, add tomatoes and coat with remaining oil and spices in bowl.
Arrange eggplant cut side down and place tomatoes & sprouts on a lined baking sheet with parchment. You may need 2 baking sheets depending on size.
Bake for 45 minutes or util eggplant and Brussels are golden brown. 
Enjoy over a bed of organic baby kale and drizzle on sauce. Tahini will also work as a sauce!
  • Channeling my inner @allgoodeats with this meal! Oven-roasted eggplant, tomatoes & Brussels sprouts over a bed of baby kale.

    Ingredients:
    2 large eggplants
    3 cups Brussels sprouts
    1 cup organic tomatoes
    2 cups organic baby kale
    4 tbsp. extra-virgin olive oil
    2 tsp garlic powder
    Sea salt and pepper
    Dress @seggianolovesfood Artichoke & Garlic Sauce
    Directions:
    Preheat oven at 350 F ( in a rush an need higher heat? Swap olive oil for avocado oil as it has a higher smoke point)

Siempre que me meto una frutilla a la boca, canto mentalmente esa canción. ¿La han escuchado?
Frutillas/Fresas/Fresones/Strawberries🍓
Todos debiéramos comer Frutillas con frecuencia, sus beneficios para la salud y funcionalidad son múltiples.
Éstas niñas nos aporta un alto contenido de agua y fibra ideal para prevenir constipaciones. Refuerzan nuestras defensas por su alto contenido en vitamina C, mientras más maduras más alto su aporte vitamínico. Es una fiel amiga en enfermedades respiratorias y resfríos, tanto en prevención como en tratarlos- cuando uno está resfriado debiera combatir el malestar con mayor cantidad de frutas y vegetales frescos y aumentar también el consumo de líquidos-. La Frutilla es súper buena aliada para combatir problemas de anemia, ya que ayuda a que absorber de mejor manera el hierro que consumimos a través de otros alimentos. Ayuda a disminuir la inflamación en enfermedades reumáticas. Gracias a su poder diurético, ayuda a disolver las sales producidas por el exceso de ácido úrico (gota). Ayuda idónea en problemas intestinales y problemas de circulación.
Dato loco: las hojas machacadas de las frutillas ayudan a una mejor cicatrización de heridas.
Qué loco!! Montón de beneficios en una sola frutilla, que además es linda de por sí con su rojo imponente, aunque también las hay amarillas, blancas y rosadas.

J’ai préparé un risotto aux crevettes et petits pois 🥰

Pour la recette :
- Faire revenir de l’ail avec de l’huile d’olive dans la cocotte
- 150g de riz à risotto
- 100g de crevettes cuites
- 750ml de bouillon de légumes
- 2 càs de crème liquide
- sel/poivre
.
Ajoutez le riz dans la cocotte, faited revenir dans l’huile et l’ail pendant quelques minutes
Ajoutez le bouillon au fur et à mesure, tout en remuant.
Une fois que le bouillon a été absorbé par le riz ( moi c’était après 25/30mins )
Ajoutez les crevettes et les petits pois congelés, laisser cuire pendant 10/15mins, pour le temps de cuisson ça dépend du riz utilisé

Ajoutez la crème, le sel et le poivre.

J’ai ajouté des noisettes pour le dressage :)
