  • Pan-Seared Cod in White Wine Tomato Basil Sauce

Ingredients
.
White Wine Tomato Basil Sauce:
•	2 tablespoons olive oil
•	1/2 teaspoon crushed red pepper flakes
•	2 large cloves (or 3 smaller cloves) garlic, finely minced
•	1 pint cherry tomatoes, sliced in half
•	1/4 cup dry white wine
•	1/2 cup fresh basil, finely chopped
•	2 tablespoons fresh lemon juice
•	1/2 teaspoon fresh lemon zest
•	1/2 teaspoon salt (more to taste)
•	1/4 teaspoon fresh ground black pepper (more to taste)
Cod:
•	2 tablespoons olive oil
•	1 and 1/2 pounds fresh cod, cut into 4 fillets (or four 6 ounce fillets)
•	Salt and pepper

Instructions
.
•	Preheat oven to 375 degrees (F).
White Wine Tomato Basil Sauce:
•	Heat oil in a large saute pan over medium heat. Add crushed red pepper flakes and garlic and saute for 1 minute, or until garlic is fragrant. Add the cherry tomatoes and cook, stirring occasionally, until they're soft and blistering, but still hold their shape, 9 to 12 minutes. Add in the white wine, stir, and allow the mixture to come to a gentle simmer. Stir in the basil, lemon juice, lemon zest, salt, and pepper and cook for 2 minutes. Transfer the sauce into a bowl and set aside until needed.
Cod:
•	Heat oil in a large saute pan over medium heat. Season both sides of cod with salt and pepper. Place cod in the oil and cook until golden brown, about 5 minutes. Carefully flip the cod over and place the pan in the oven to continue cooking for another 5 minutes, or until it's cooked through.
•	Pour the white wine tomato basil sauce over the cod and serve at once.
Notes
If your pan is not oven safe, you can transfer the cod to a baking dish or just cook a little longer in the pan.

  • Boquerones en vinagre caseros 🐟🐟
Aperitivos de domingo...🍸🍸 Hola!! Si hay un aperitivo/picoteo rico, creo que son los boquerones en vinagre y son tan, tan fáciles de preparar que procuro tener en el congelador pequeñas raciones preparadas para ir sacando....😊😋
Os cuento como los preparo....
● Primero limpiamos bien los boquerones (sin cabezas ni espinas) debajo del grifo con agua fría, quitando bien restos e impurezas...
● A continuación, en un bol con un poco de agua y dos bandejas de cubitos de hielo los vamos sumergiendo y los dejamos en la nevera aprox 2-3 horas...
● Los sacamos del frigo y lo secamos con papel de cocina. En un recipiente los vamos colocando por capas y los cubrimos con una mezcla de 3 partes de vinagre de vino, 1 de agua y 1/2 cdta de sal. Los tapamos. Otra vez al frigo entre 12-18 horas.
● Los escurrimos de la mezcla y los colocamos otra vez en el recipiente, los cubrimos de aceite y los metemos al congelador mínimo 48 h y ya están listos para consumir cuando queramos...luego solo falta añadir ajo y perejil picadito 😊😋
El TRUCO es lavarlos muy bien con agua fría para quitar los restos de sangre y que queden bien blanquitos...

  • Fish is brain food - we try to have a fish dish every 2-3 days. 
Here we have Braised Ginger Fish with Tomato. Aesthetics can be improved with some green parsley or chives on top but that’s just for the gram. Nobody eats that at home so we’re doing away with it, for now.

Salmon, Roasted Veg and New potatoes (with beans for the wee one). Eating healthily as a family doesn’t have to be super faffy (ain’t nobody got time for that) or cost the Earth.

And while I’m lucky enough to get away with our toddler eating so well we all have the same evening meal - with the odd substitute or extra to make it more appealing for a self feeding strong independent little lady.

The salmon was an Aldi prepared  packet that I whacked in the oven for 15mins along with leftover veg - a red pepper, tomatoes, mini courgette from Monday’s stir fry and a leek drizzled with a capful of olive oil, seasoned & roasted for 30mins served with new potatoes left over from last week. 
I also had a cod fillet that needed to be used so we shared that too. 
All super convenient, simple, tasty and covers all the boxes: plenty of protein, healthy fats, carbs and vital nutrients and minerals that the vegetables provide ✅

  • Hats off to the 👨‍🍳 🤗. Want to share my great experience with this pompano fish from Atlantic Ocean 😋. Grilled and almost no bones so it’s safe to eat. They call it Musgoof in Iraq.
