INGREDIENTS
Cake:
* 10 ounces pitted dates
* ½ Cup hot water
* 3 eggs
* ½ Cup coconut or olive oil
* 1 teaspoon vanilla
* 1 cup shredded carrots
* 1 ½ cups all purpose Gluten Free flour
* 2 teaspoons cinnamon
* ½  teaspoon nutmeg (plus a pinch of ginger and allspice. Optional)
* 2 teaspoons baking soda
* 1 teaspoon baking powder
* ½ teaspoon salt
* 1 cup walnuts, chopped
Frosting:
* 5 oz pitted dates
* ¼ Cup hot water
* 8 oz package cream cheese (at room temperature)
* ½ tsp vanilla extract
* ⅛ tsp sea salt
* 1 Tbsp almond milk
* Sprinkle of cinnamon
For the cake:
1. Heat oven to 350 degrees.
2. Line bottom of 9x13 pan with parchment paper.
3. Place pitted dates in a bowl and cover with hot water, set aside for 10 minutes.
4. In a food processor, blend the soaked dates and water until smooth.
5. Add the eggs, coconut oil, and vanilla to the food processor and blend until well combined and the batter starts to lighten in color. 
6. In a separate bowl, combine carrots, flour, cinnamon, nutmeg (and other spices), baking soda, baking powder, salt, and walnuts.
7. Pour the egg and date mixture into the dry ingredients and fold to combine.
8. Pour the batter into the prepared baking pan and bake for 20-25 min (check with a toothpick)
9. Cool the cake completely
Make the frosting:
1. Place the pitted dates in a bowl and cover with hot water, set aside for 10 minutes.
2. In a food processor, blend the soaked dates and water until smooth.
3. With the food processor running, add chunks of cream cheese one at a time. 
4. Once the cream cheese is well combined, add the vanilla, cinnamon, salt and almond milk. Blend until fully combined. 
5. Once the cake is completely cooled, frost with the icing (you can cut the cake in half to stack with icing in between the layers or leave it flat with all the icing on top)
6. Chill in fridge for 30 min

Grilled Corn Salad🥗 with Tomato🍅 and Avocado🥑⠀

This easy summer salad goes with any protein  Ingredients
4 ears sweet corn
1 garlic clove pressed or minced
1 jalapeño seeds and ribs removed, then minced
Kosher salt
Zest and juice of 2 limes
1/2 cup extra virgin olive oil
2 ripe avocados🥑 halved, pitted, peeled and diced
1 cup halved cherry tomatoes🍅
6 scallions thinly sliced
1/2 cup finely chopped fresh cilatnro leaves
Freshly ground black pepper

  • MUSHROOM STUFFED POTATO CAKE😋

Makes – 8-10 cakes
Ingredients :
1 kg potatoes, peeled and diced
3/4 cup oat flour 
Salt & pepper to taste

For the mushroom filling :
250g mushrooms, finely diced
1 medium onion, finely chopped
2 garlic cloves, finely chopped
15g dill, roughly chopped
1 tbsp olive oil
2 tbsp lemon juice
Salt & pepper to taste
Pinch of chilli flakes
More oil for frying

Method:
Add the diced potatoes to a large pan and cover with water. Bring to a boil, lower the heat and leave  until cooked (20-30 minutes). Mash it and season well
Leave to cool while you make the filling
Heat 1 tbsp oil in a frying pan and sauté the onions for about 5 minutes. Add the garlic, mushrooms, lemon juice, chilli flakes and season to taste Cook for about 15 minutes or until the mushrooms is soft and most of the liquid has evaporated. Take off the heat and fold in the chopped dill.
Mix the  oat flour into the mashed potatoes and start shaping
Take a couple of tablespoons of the dough and flatten them out into flat patties. Add about a tablespoon of the mushroom mixture in the middle, then top with more of the potato mixture and shape into round potato cakes.
Heat some oil in a frying pan on high.   • happy easter my friends!!🌻 these 10min carrot balls were the result of me trying to up my mid-afternoon snack game & be a little festive🐰 this was my first easter not being with my family & it feels superrr weird.. but it’s still been a great day with church & brunch with friends this morning! & tonight will be spent getting work done before heading into the ❗️last week❗️ of classes. umm where did sophomore year of college go🧐 •

  • Packs de crevettes et de brocoli avec sauce au beurre à l'ail et au citron 🍤🥦😋 Préparez un repas super savoureux en moins de 30 minutes ! .
LISTE DES INGRÉDIENTS POUR LES CREVETTES ET DE BROCOLI AVEC SAUCE À L'AIL ET AU BEURRE CITRONNÉ
* 1,5 lb (600 g) de crevettes crues * 2 cuillères à soupe de beurre en dés ou d'huile d'olive
* 1 cuillère à soupe d'ail émincé
* 1 cuillère à café d'assaisonnement italien
* 1/4 c. à thé de poudre d'oignon
* 2 cuillères à soupe de bouillon de légumes ou de poulet, divisé
* Sel et poivre, au goût
* 1/4 c. à thé de paprika fumé
* flocons de piment rouge, facultatif
* Jus de 1/2 citron
* 1 grosse tête de brocoli, coupée en fleurons
* Persil frais haché, pour garnir

MODE D'EMPLOI
1. Préchauffer le four à 220 ºC. Couper 2 feuilles de papier d'aluminium de 35 x 30 cm, puis poser chaque morceau séparément sur le comptoir. Dans un petit bol, mélanger les ingrédients du mélange d'épices : Assaisonnement italien, poudre d'oignon, sel, poivre et paprika fumé (plus bouillon en poudre si utilisé).
2. Dans une assiette peu profonde, ajouter les crevettes et saupoudrer du mélange d'épices, en les enrobant de tous les côtés.
3. Répartir les crevettes sur le papier d'aluminium près du centre, puis déposer les fleurons de brocoli sur un côté des crevettes.
4. Ajouter l'ail sur le brocoli et les crevettes, puis arroser de jus de citron, de flocons de piment rouge broyé (si utilisé) et terminer avec du sel et du poivre. Répartir uniformément les morceaux de beurre dans les sachets d'aluminium, en les superposant sur les crevettes et le brocoli.
5. Ajouter une cuillère à soupe de bouillon de légumes dans chaque paquet de papier d'aluminium et envelopper les paquets et sertir les bords ensemble, puis envelopper les extrémités. N'enroulez pas trop serré - gardez un peu plus d'espace à l'intérieur pour permettre à la chaleur de circuler. 
6. Transférer sur une plaque à pâtisserie et cuire au four, côté fermé vers le haut, jusqu'à ce que les crevettes soient bien cuites, environ 15 minutes. 
7. Déballer soigneusement les paquets de crevettes et de feuilles de brocoli cuits au four, puis garnir de persil frais et d'une tranche de citron.

All things you still CAN do but be aware that they may hinder your progress.

2️⃣ Sun = More steps🚶🏼‍♂️good weather can mean we’re outside more, getting transport less and making us more motivated to get out and move. Don’t forget the bikini beach goals!

Personally, I love summer. I’m outside more, it gives me a chance to ramp up steps but I’m also very much aware I’m way more inclined to a cider🍻😂

Whatever your goal the next few months, be aware that the weather may dictate a lot of your decisions. Just make sure you’re happy with them!

  • Happy Easter everyone! Hope you all are taking some time to do whatever makes you happy today.  For me it was sleeping in, going on a run with the pup and making food for friends for easter dinner. I also woke up thinking about one thing, a breakfast sandwich. And since my favorite breakfast sandwich joint was closed this morning I quickly searched for easy english muffin recipes and made this guy with just 5 ingredients in under 15 mins. The recipe for the english muffin is from @wholesomeyumblog and you can even make it in the microwave. It also happens to be Paleo, Glutenfree, low carb, blah blah buzz words blah. In the sandwich I went with an over easy egg, avocado, a couple of pieces of bacon and topped with @lazizslc Toum. •
English Muffin: Makes 1 muffin
3 tbsp Almond Flour
1/2 tbsp Coconut Flour
1 tbsp Butter (I used ghee could also probably use coconut oil)
1 Large egg
1 pinch of sea salt
1/2 tsp baking powder. •

- I baked these in mini ramekins but you could probably put them in muffin tins to make small ones. - Pre heat oven to 350. Put butter in ramekin to melt. - Once butter has melted, swirl around bottom of ramekin to help with sticking. - Add rest of the ingredients mix well and bake for 12-15 mins.
- You could also apparently cook these in the microwave by following the same method of melting the butter in  the microwave and then adding all ingredients and cooking for 90 seconds in the microwave. - Run a knife around the edges to remove.
- Top with favorite breakfast sandwich ingredients.

When in doubt - mezze platters are the way to go for entertaining. It’s snacky finger food but still light and flavorful! I always load mine with some sort of hummus, tzatziki sauce, fresh pita bread🤤, marinated olives, cheeses, crackers, some veggies and meats! 
I actually took this photo for a fundamentals of photography class I was taking when this page/blog was a baby.. to be honest, I had no idea how to use my camera and this was taken in manual mode but I think I edited to make it look somewhat like my recent photos 🤷🏻‍♀️😬 either way it’s delicious so I’m sharing it! I’m trying to not be so hard on myself with photos and remember I started this blog to share yummy wholesome food not show off my camera skills! @dashofchunki called me out this weekend and said I sucked the fun out of this blog recently by getting too worked up over “failed” photos, recipes and posts and what not - he’s totally right and I’m glad I have someone who can call me out on this stuff. It’s hard to find a balance when something you love turns into an actual job.. but my goal is to be less hard on myself or else it will come out in my work!
