🍛 Potato Chickpea Curry 🍛
🥦 Decided to bring one of my favorite dishes to my own kitchen today. Get your notes ready cause this is a dish that will yield many servings.
🥑 You will need (yields 6-8 servings): 1 can chickpeas, 1 14oz can full fat coconut milk, 1 medium onion, 6 medium potatoes, 2 heads broccoli, 1 tbsp minced garlic, 1/2 tbsp minced ginger, 1 cup veggie stock, 3-4 tbsp red curry paste, 1 tsp cumin, 2 tsps paprika, 1/2 tsp garam masala, 2-3 tsps curry powder.
1️⃣ Chop the potatoes and onions. Add 2-3 tbsp olive oil into a large pot, and saute the onions, garlic, ginger, cumin, paprika, garam masala, and curry powder until onions are soft. 2️⃣ Add the potatoes and chickpeas, then add the veggie stock and coconut milk. 3️⃣ Add curry paste, mix. Bring the mixture to a boil and then let simmer until you can poke through potatoes with a fork. Add salt and pepper to taste, and serve with rice.

Rice - 6g
Potato - 3g
Chickpeas - 3g
Broccoli - 2g
Calories: around 600-700
Carbs: around 100g

No better way to brighten up your day than with these blue Hawaiian inspired bliss balls 💙✨ It’s a pretty gloomy day out here in New York but thankfully I have these little guys to me feel like I’m somewhere tropical 🏝💕 A few things I added to these yummy treats to give them that Hawaiian feel we’re mangoes, pineapples, coconut and blue spirulina 💙✨
with a sweet & sour cabbage-mushroom filling and chili broth on top🥟🍃
For the sweet & sour dumpling filling I heated 2 tbsp canola oil in a pot over low-medium heat, added 1 small onion (chopped), 3 cloves of garlic (minced), a ca. 2 cm long piece of ginger (minced), 1/2 small cabbage head (finely chopped) and let everything cook for about 3-4 minutes before I added 200g chopped mushromms. Then, I let everything cook for another minute and added 1 tsp salt, 1 1/2 tbsp. flour, 1 tbsp dark soy sauce, 1 tbsp apple cider vinegar and 2 tbsp brown sugar. I stirred everything together and after ca. 5 minutes the filling was ready🍃This recipe makes enough filling for ca. 26 dumplings 🥟🥟🥟 For the chili broth that goes on top of the steamed dumplings I simply mixed together 100ml vegetable broth, 1 tbsp canola oil and 1 tsp chili flakes 🌿
Not the most traditional Easter Weekend meal, but this pasta was divine! I sautéed broccoli, zucchini, mushroom, garlic, and a vegan sausage in olive oil, added spinach towards the end, cooked pasta, and @traderjoes marinara sauce. Served with a side of #avocado ! • Happy Easter! 🐰

It's all about balance. I am learning to find the balance in my life. What is a healthy lifestyle? There definitely are some core principles that define a healthy lifestyle but when it comes to the nuances of your personal health and well-being, it's a little bit different for everyone. And you have to find the way that workes for you. It like eating a spoon of peanut butter here and there is really nice. Eating the whole class would be way too much but eating no peanut butter at all won't make you happy either. 😋🥜 I love going to bed early and waking up fresh in the morning but you can stay up longer when you meet friends once a while without freaking out. You do sports but you need rest days as well. It's always ying and yang ✨ 📸 @highcarbguru

Had an amazing leg session this morning and hit some PRs... best way to start the weekend if you ask me🙌🏼🤪 really really happy with how much weight I’m pushing at the moment... I’m setting PRs pretty much every time I’m in the gym and honestly that’s 80% mental. Did 4x6 for hip thrusts @110kg after hitting 4x5 @82.5kg for conventional deadlifts today which is something I wasn’t even close to doing last year around this time! I don’t schedule to hit certain numbers unless I know that I do have them in me - so it’s just a matter of executing. In my head, I’ve already hit them. I am going to do my absolute best to maintain and possibly even increase my strength throughout my cut, even though I do know that my rate of improvement will decrease at some stage. That’s why I’ll be doing things nice and slow, no excessive cardio and implementing diet breaks and refeeds. Will share my entire cutting plan when later on anyway ☺️ happy Saturday! 🥰🥰
Chocolate Peanut Butter Maca Smoothie topped with Cacao Nibs - recipe below 👇
This is a wonderful snack at any time, but especially after a workout or rigorous yoga practice, because I’ve packed it with plant-based protein.
Have you tried maca before? It grows as a root vegetable at high altitudes in Peru, and is sold as a powder.
Maca is purported to have superfood benefits for its antioxidant content. And it has been used for centuries as a natural means of improving sexual health, balancing hormone levels, and boosting energy, mood and memory.
It has a delicious caramel-like flavor, which complements the cacao and (powdered) peanut butter in this recipe wonderfully.
Wanna give this a try? It’s so yummy Here’s the recipe:
• 2 frozen bananas, sliced
• 1 cup frozen blueberries
• 2 Tbsp vegan chocolate protein powder (I like @vega_team brand)
• 2 Tbsp powdered peanut butter (@pb2foods)
• 1 Tbsp raw cacao powder
• 1 Tbsp maca root powder
• 1/2 tsp vanilla extract
• 2 Tbsp coconut milk
• 1 cup plain unsweetened almond milk • Place all the ingredients in a blender and blend until smooth
• Transfer to 2 glasses and top each with a sprinkling of raw cacao nibs
• Serve with a reusable straw
• Enjoy! 😀

✌️No food has the ability to make us gain or lose weight on its own.
Weight gain happens when we eat more calories than our body needs.
🤓There are foods that give us more calories than others. When choosing bread correctly it provide us with adequate amounts of calories and won't make us go out of balanced with our diet not eliminate the macronutrients.
🥖Choose Bread with NO high fructose corn syrup. I prefer Ezequiel's Bread. You can have Gluten free bread as well if you prefer avoiding gluten. .
🔹2 slices of toasted ezekiel bread (160 calories)
🔹2 C of almond butter
🔹1 C ground hemp seed
🔹1 / 2 sliced banana
Protein : 24.5 gramos
Carbohydrates: 50 gramos
