  • Pan-seared yellowtail snapper with a cucumber-parsley-chive (a sort of clear out the crisper) salad, with an assertive + bright lime, fish sauce, olive oil vinaigrette.

Chop up some Persian cucumbers and some tender herbs (parsley, cilantro, scallions, and or chives), toss together in a bowl, set aside. In a small bowl, mix the juice of a small lime, a splash of fish sauce, a pinch of sugar and a pour of olive oil. Adjust seasoning to taste. Set aside.

In a nonstick or well-seasoned cast iron pan, heat up some neutral oil and pan fry, skin-side down, a yellowtail snapper fillet (or a thin fish filet of your choice, skin-on) for about 3 min on one side, pressing occasionally so skin adheres to the pan and gets crisp.  Carefully turn and sear the other side for a min.

Toss dressing with the salad, plate it up and place cooked fish on top. Drizzle with more olive oil, sprinkle with sea salt + chili pepper flakes.

Bringing the cheeeese to your Wednesday ...this Low Carb Cheesy Chicken & Rice is #keto friendly with only 4 g net carbs....and it’s super filling so you won’t get hungry right away! 🙌🤩

Ingredients:

1/2 head cauliflower
2 tablespoons olive oil
salt and pepper
1 crown broccoli (roughly 4 cups of bite-sized pieces)
1 cup shredded cheese (I used mozzarella)
Chicken
1 lb boneless skinless chicken breasts (cut into bite-sized pieces)
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1/4 teaspoon salt
1/4 teaspoon pepper

Instructions:
.
- Make cauliflower rice: cut cauliflower into even-sized pieces. Pulse in a food processor 10-15 times or until it is broken down into uniform cauliflower rice. You can use a box grater if you'd prefer for this step! - Add 1 tablespoon olive oil to a non-stick pan and heat over medium heat. Add the cauliflower rice and cook for 5 or so minutes, until slightly softened. Season with salt and pepper. Divide between four 2 cup capacity storage containers. - Add another 1 tablespoon of olive oil to the pan. Add the broccoli and cook for 5-7 minutes, until slightly softened. Add the cooked broccoli to the storage containers with the cauliflower rice. - Chicken: Toss the chicken with olive oil, onion powder, garlic powder, salt and pepper. - Cook in the non-stick pan over medium heat until cooked through; 5-7 minutes. Add the cooked chicken to the storage containers with the cauliflower rice and broccoli. - Divide shredded cheese between the four storage containers.

Storage:
Store in the fridge for up to 4 days.

To serve
Heat in a microwave until steaming hot. Stir it up and enjoy.

Stuffed Baked Potato With Tahini and Dill Dressing (Serves 4)

Ingredients .
A)
4 whole potatoes, washed and scrubbed and sides poked with a fork
A few dashes of pepper
A few dashes of cayenne pepper
A few dashes of onion powder
A few dashes of garlic powder
1 teaspoon cold-pressed extra-virgin olive oil
.
B)
.
3/4 cup frozen peas and corn, thawed 
1/2 red capsicum, diced
1/4 large red onion, diced
A handful of chopped chives
2 cloves of garlic, peeled and minced
1/2 cup nutritional yeast
1/3 cup plant-based milk
A few dashes of pepper
A dash of salt
.
C)
4 tablespoons of water
2 tablespoons tahini
Juice of 1/2 a lemon
1 tablespoon chopped fresh dill
2 cloves of garlic, peeled and minced
.
Method
.
Mix A) and transfer to oven for 1 hour @ 210 C.
.
After A) is ready, carefully cut in half, leaving the skin of the potato intact and scoop out the cooked centres with a small teaspoon. Mash the cooked potato centres along with B). After mashing well, fill the skin of the potato with the mix. You can either eat this as it is raw or you can transfer it to the oven @ 150 C for 10 minutes.

Mix C) and dress the potato when it is ready to be served. Serve with a beautiful salad of broccoli, avocado, carrot, grape tomato, and four-leaf salad.
