DOUBLE CHICKEN, HOLY TRINITY

After hanging out with @issac_eatsalot for a couple weekends, I've now got more burger pics than I know what to do with tbh... I haven't contributed to #friedchickenfriday for a while, so here's one of those shots out the way 😅

Marinating in buttermilk is easily my favourite way to have my fried chicken.  You get that great crunch without sacrificing any of the juiciness!  And that's what it's all about really.  Couple that with those house made buns and you've got a pretty solid feed

  • Recently opened in F-8/4, @seabuckthornhunza is a Hunza themed restaurant, a first of its kind in Islamabad. From decor to souvenirs to recipes, everything is from hunza. The place itself is named after the sea buckthorn seed which is essential to most hunzai recipes. 
I was invited to a fascinating bloggers’ meetup yesterday hosted by a blogger couple, @cyras.photo.stop and @farhan.a.abbasi who are absolutely couple goals. While my entire experience can be tracked in my latest story highlight named Sea Buckthorn, I will review 2 of the entrees I loved,

1. Hunza Mutton Dumplings served with yak cheese and seabuckthorn sauce - I am not a fan of mutton, it has a dominating taste which overpowers the flavors of all other ingredients. When I was told these dumplings had a mutton filling, I cut one in half fully prepared to wash it down with water if the mutton’s taste was too strong. To my immense surprise, it had a very muted taste. It was cooked to perfection, crispy,  not spicy but not bland either. It was incredibly well balanced. I ended up eating more dumplings than anything else on the table. 
2. Beef steak with yak cheese and sea buckthorn sauce - It’s like most other great steaks this city has to offer but the sea buckthorn sauce gave it a distinctly unique taste that can’t be explained, it can only be experienced. The mashed potatoes are the best I have EVER had given how most restaurants think boiled and literally mashed potatoes are the entire deal when it’s not.

In hindsight, this place has a soul. It’s not just a building with food, there’s thought that has gone into every single thing, a story behind every decision. The rooftop with a beautiful view of the Margalla Hills, a room impeccably decorated like cafes in Hunza, a complete organic and delicious menu. It’s one of those places that doesn’t have to fight for customers, they just get them. 
Thank you, @cyras.photo.stop for introducing me to this place. It was a splendid choice for a meetup!

  • ▪️at pizza 📍Birmingham New Street (Grand Central) (£) New pizza place in Birmingham! Really loved this place! You can customise your own pizza or get one of the pre designed ones. I opted for the create your own, and with unlimited topping selection, you really can’t go wrong!! You can even ask them to do half and half which I decided to do I order to try 2 of the different sauces...YUM. With £9.95 for your own pizza, the place is amazing for when you’re really hungry at lunch or have half and take the rest with you on the train haha.

"the best fried rice I've ever had" - @jasper_rossi 😂. Its not bad I must admit 🤷‍♂️. Here, I've topped it off with deep fried garlic chips inspired by my visit to @matsusaka_m in Osaka back in the Summer.

  • — Дорогая, что у нас сегодня на ужин? — Очень ленивые голубцы! — Это как? — капуста на балконе, фарш в морозилке! 😂😂😂
Это сказка не про нас!  Раз мы решили или пилить, или кормить, то иногда придется потрудиться. 😁 Хотите голубцов, нежных, вкусных, томленных в духовочке, со сметанно- томатном соусе? Тогда угощайтесь!
Рецепт и ингредиенты указала в карусели фотографий. А здесь я отмечу важные моменты, на которые вам следует обратить внимание.
1) чтобы голубцы были нежными, следует распарить листочки капусты. Не пытайтесь снять листы с целой, не распаренной капусты. Испортите все листочки. Самое сложное в приготовлении голубцов, это подготовить листочки и завернуть в них фарш. 
2) срезать с листочков все жилки и жесткие места после распаривания
3) можно взять листы молодой капусты. Их можно просто ошпарить кипятком.
4) листочки должны стать гибкими и мягкими
5) не старайтесь делать голубцы, чем больше, тем лучше. Делайте их небольшими.
6) когда вы будете заливать голубцы соусом, если вдруг мало подливы, можно долить сливок, подсолить соус по вкусу и ставить в духовку
7) если нет бульона, то можно взять 1-2 кубика, разведенного в нужном количестве воды
8) форму лучше закрыть в духовке крышкой или листом фольги, а открыть уже на последние 10 минут, чтобы слегка подрумянились.
Ну вот и все! Дерзайте, девочки, родные! Удивляйте родных и удивляйтесь сами

  • HOMEMADE: Daal and Roast Okra, a dish inspired by my time in Nepal but also the lentil dish I had at Kokeb, London recently! 🇳🇵🇮🇳🇵🇰 🇪🇹 I like to keep my daal a little more simple but I did heavily flavour this one with garlic. As with any other fibrous green veg, I love to roast my okra on high heat in a skillet with good olive oil and flake salt 👌. A little off the cuff but after plating I floated a layer of EVOO over the daal for added richness, texture gradient and a cool sheen! Very pleased with this. Makes for a terrific starter 😎

  • Simple breakfast for today: home-made  labaneh on  toasted pita bread topped with home- pickled  Zaatar,  hot  Palestinian shatta and  some sweet pomegranate arils to garnish ... all drizzled  with  extra virgin olive oil. How can my morning be anything but good 😊

Pickled za'tar leaves
They are an unusual and tasty addition to a mezze spread or sandwiches. .
.
-Wash and towel - dry  green za'tar leaves.
.
. - Pack leaves  in jars with a mixture of coarse salt, olive oil, sahatta, garlic, lemon juice and  ground walnuts .
.
- leave on kitchen counter for 3 days then place in the fridge for further use. .

*** فطور اليوم برعاية  عالبساطه البساطه يا عيني عالبساطه 😂

مكبوس الزعتر😍
تغسل اوراق الزعتر وتجفف جيدا  بفردها  في الظل على قطعة قماش نظيفه. ممكن استخدام اي نوع من انواع الزعتر الأخضر.

نحضر  مخلوط الكبيس الذي يتكون من عصير الليمون ، الملح ، الشطه ، الجوز المفروم ، الثوم المهروس وزيت الزيتون .(المقادير تعتمد على المذاق ... اهم شي ما تكون كمية  الملح كثيره كما في حالة المخللات الأخرى)

تخلط اوراق الزعتر مع الخليط السابق وتوزع في اوعيه زجاجيه وتكبس جيدا .
تعطى الأوعيه وتترك جانبا لمدة 3 ايام ثم تحفظ في البراد للاستخدام لاحقا.

If you're Asian and in the area, get your arse down here. The flavour combos will have you shook no lie. They chop and change all the time so no promises what will be about when you go but I gotta say. HORLICKS ICE CREAM. Game changer 🤔 🤔 🤔 🤔 🤔 never thought that'd be a thing but I'm glad it is 🙏 if it's there when you go, at the absolute bare minimum get a sample of it. You'll see what I'm on about.
