Stavolta anziché prendere l’aereo ho deciso di prendere il treno, perché c’è un Freccia argento che arriva a Roma Termini in quattro ore e mezza. In effetti, quello che mi rompe non è tanto il treno, quanto l’attraversamento dello Stretto in aliscafo. Vi ho già detto che soffro tremendamente il movimento, sia via mare sia via terra? Poi venerdì si riparte alla volta della Sardegna.

PESTO AND VEGG!! 🤩🤩 I swear my life wouldn't be the same without pesto! One of my all-time favorite dips/sauces..So easy to make, so versatile and sooo damn good! I always do basil and parsley, olive oil, garlic, walnuts(though pine is traditional), salt/pepper, and some fresh raw parmesan!

Today for my birthday week, my wife and I decided to celebrate it at Lake Arrowhead. My idea of a vacation is to rent a cabin in the woods or hotel and relax with a nice drink, good food and beautiful scenery. Sometimes you have to stop and pause from your every day fast paced life. And to make this day perfect, I went on a search for some nachos. Here we have a Irish style nachos with jalapeños and pastrami. This dish was delicious that it complimented the beer and the view. Also, I love hot sauces so I had to stop by at Pepper Palace to restock 🔥😋

Coming home after work and not having groceries is the worst feeling ever!😣 I dread knowing that I’ll have to be at a grocery store after work because I know how tiring it is. This middle eastern rice pilaf with sautéed spinach and tofu was DELISH 😍 Made this for dinner on Friday with a glass of wine and enjoyed the last of my leftovers today 😋 This was another @freshprep.ca meal and I gotta say, I am digging their portion sizes 🙌🏻 Each of the meals are supposed to be 2 servings, but so far most of the things I have tried can easily serve 3, so I’ve been enjoying having leftovers 🙋🏼♀️ .
Hope you are all having a great Monday! 🤗 I had a rough start to the day because the heat wave we are currently having made sleeping very difficult last night 😅 most Vancouver apartments don’t have AC and mine is no exception to that, so despite my three fans I have going at once, it was still a very warm night 🥵 I’m also someone that’s always cold, so on the rare day that I feel too warm, it’s REALLY hot out 😬 Hoping it cools down soon, but until it does I’ll be eating cold foods to avoid heating up my apartment even more than it already is 😂
Stuffed Baked Potato With Tahini and Dill Dressing (Serves 4)
4 whole potatoes, washed and scrubbed and sides poked with a fork
A few dashes of pepper
A few dashes of cayenne pepper
A few dashes of onion powder
A few dashes of garlic powder
1 teaspoon cold-pressed extra-virgin olive oil
3/4 cup frozen peas and corn, thawed
1/2 red capsicum, diced
1/4 large red onion, diced
A handful of chopped chives
2 cloves of garlic, peeled and minced
1/2 cup nutritional yeast
1/3 cup plant-based milk
A few dashes of pepper
A dash of salt
4 tablespoons of water
2 tablespoons tahini
Juice of 1/2 a lemon
1 tablespoon chopped fresh dill
2 cloves of garlic, peeled and minced
Mix A) and transfer to oven for 1 hour @ 210 C.
After A) is ready, carefully cut in half, leaving the skin of the potato intact and scoop out the cooked centres with a small teaspoon. Mash the cooked potato centres along with B). After mashing well, fill the skin of the potato with the mix. You can either eat this as it is raw or you can transfer it to the oven @ 150 C for 10 minutes.
Mix C) and dress the potato when it is ready to be served. Serve with a beautiful salad of broccoli, avocado, carrot, grape tomato, and four-leaf salad.
