  • Lunchbox food prep done! Crunchy salad with red cabbage, cucumber, tomato, celery, spring onion, fresh mint, goats cheese pearls (found recently @aldiuk) and butterbeans. Tomorrow I’ll add olive oil and lemon juice dressing. 
I often get asked by mums for healthy lunchbox ideas. I know sandwiches are the easiest go to for many parents especially when time is short in the morning.
However prepping as much as you can the night before saves so much time. 
My tips tips would be:
1.Make sure you always give them a source of protein (boiled egg, leftover chicken, tinned fish, beans or legumes, natural yoghurt, cheese sticks- not the orange stretchy fake ones!) Protein is important for growth and repair and keeps those tummies fuller for longer 
2. Add complex carbs - important for maintaining those energy levels - things like whole grains, oat cakes , brown rice, brown pasta, quinoa, spelt crackers, brown wraps/pittas 
3. Add a variety of coloured fruits and vegetables to make it varied and interesting for them and because they contain lots of important vitamins and minerals for overall health 
4. Cook extra portions of food for dinner and give for lunch the next day. 
5.Putting foods in different coloured or patterned pots is always a winner - kids love them! .

Protein packed eggs, baked in a mushroom for a low carb alternative to putting them on bread and a layer of chopped spinach for a vegetable portion first thing.

  • Fillet Philly Cheesesteak

Dish time 20mins

Serves 2 people

Ingredients - 1 Fillet steak
Half an onion
Half a red pepper
85g of Philadelphia cheese (I used a light version to make myself feel better...)
Enough Ciabatta for two.

Firstly cut your ciabatta into two halves and place ready for serving on the plates.  Then salt and pepper your steak and leave to the side while you cut your pepper and onions (You can add mushrooms if you like). Then cut your steak into thin strips and add to a medium to hot pan with some oil. Cook this for 3/4 mins or until cooked throughout.

Once cooked place the steak in a mixing bowl with your Philadelphia cheese.

Add some more oil into the pan you cooked the steak in and add the cut up onion and pepper. Again cook this through for 3/4 mins or until ready.

While the onion and pepper is cooking stir the cheese and steak in the mixing bowl until all the steak is covered in the cheese.  Once the onion and pepper is ready turn the heat down on the pan to a low/medium heat and add the cheese and steak.  Stir for roughly 1 min and place the ingredients over the two ciabattas, add the top of the ciabattas and get stuck in!

  • “Healthy chicken nuggets” instead of deep frying them just take crushed cornflakes as a coat for the cut chicken and bake them in the oven very tasty with different dips! (Careful not to go too hot so the cornflakes don’t burn)
