I'll also be honest again, I didn't make my own filo pastry because in life pastry is one of those things that I just don't have the time for 😆

I nabbed this recipe for the Roasted red pepper and feta filo tart from the Veggie Lean in 15 book and it was pretty damn good!

It's one of the longer recipes but it tasted amazing, both hot and cold!

  • Day 3 of the #kenzieburke 21 day reset. Each day is getting easier and easier in terms of my acceptance and excitement towards eating plant-based foods. I need to prioritize proteins because I know I’m haven’t been getting enough these past few days. I’ve been relying on oats and grains to keep me feeling full, which is okay, but I want to really push myself to start incorporating more veggies in my lunches and dinners. This will not only keep the carbs a little lower but also the volume of food consumed higher (I’m determined to not let any of the veggies that I bought go bad this week!!!)

Lately I’ve felt myself going to @kenzieburke’s and other plant-based Instagram accounts for inspiration and guidance on what I should be eating. In the beginning I felt really pressured to follow the recipes and eat just like they did. I know so little about cooking (basically) vegan foods so I could feel myself overcompensating by scrolling through highlight reels of other people’s food instagrams. What I was actually able to throw together seemed inadequate in comparison. To fix this I need to #1 stop comparing (!!!) #2 prep more so that I actually have a plan of meals and not a load of random groceries and #3 give myself time to learn and grow. Just because some vegan influencer says this is the “BEST VEGAN PALEO GLUTEN FREE LASAGNA ON THE PLANET” doesn’t mean I’m going to like it. Just because it looks aesthetically pleasing doesn’t mean it will taste good. I need to discover for myself what I personally like in order to really make this a lifestyle. I will not let myself get too overwhelmed by outside influences. ——————————————————————————
This parfait has a coconut-milk yogurt base (it’s that like “SO” coconut brand and I also got Silk’s version of nut-based yogurt and both are good but have soooo much sugar 😕 should have checked the label at the store but I was crunched on time. Not a huge deal but stay mindful of added sugars!) + I threw on some KIND brand granola (I think this might break a rule because it has added sugars and isn’t 100000% natural but I have two bags from before this challenge and I’m not going to waste them) + berries

  • Happy me when I'm well fed with good food. While I was craving for Asian food, I found my way to Mikusu at @conradbengaluru where they have a special menu for Singapore in every bite. Every dish from the festive menu was flavorful but I loved seafood more - Singapore chili crabs, seafood aromatic soup, Golden fried jumbo prawns and Singaporean noodles to be specific. Les cuento que el sábado pasado estuvimos en Cholula viendo que podíamos hacer y primero nos encontramos la feria de la michelada, a la cual no nos gusto la idea de ir a comprar algo que puedes hacer en tu casa, pero de ahí nos fuimos a una plaza cercana y nos encontramos con esto😏

Ese día @topolinocholula tenía promoción en helados 2x1 y paletas 2x$15 MXN y cómo hacía un calor espantoso preferimos las paletas🍭

Pedimos paletas de jamaica, yogurt y mamey (no le tome foto). Topolino se dedica a hacer paletas y helados naturales y artesanales, por lo tanto el sabor es buenísimo, sabe a pura fruta y pues se disfruta muchísimo más🥛🍓🍑
.
La verdad es que no sé si todos los fines de semana tengan esta promoción o solo ese fin por lo del Día del padre, aún así vayan @topolinomexico es de mis lugares favoritos desde la infancia y todo lo que ofrecen es excelente✨

  • I felt the most profound love for healthy eating when I was preparing for my GRE. Disclaimer: this love has since then reduced considerably. :P
I'd promised myself two distraction-free months to buckle up and get the best score possible. That involved scouring the internet for suggestions for optimising a day's productivity. One of the most common suggestions was eating right and eating well (duh)!
I remember everytime I ate healthy, I felt like now all I had to do was put in the time and things would assimilate on their own. One of those saviours was this breakfast bowl of kiwi, greek yogurt and lots of granola for texture because I feel like I'm more satiated when I chew. 
It's nothing new or original, but it's something you have to experience for yourself, like I did. Hence, this appreciation post!

1 cucharada. hojas de orégano fresco picadas
2 cucharaditas cáscara de limón fresca rallada
2 cucharaditas aceite de oliva
2 cucharadas. aceite de oliva
1/4 cucharadita. sal
Filete de Robalo de 4 piezas
1 pt. tomates cherry
1/4 c. aceitunas Kalamata
2 cucharadas. alcaparras escurridas
cucharadita pimienta roja molida
2 dientes de ajo
1/4 c. hojas frescas de perejil

•Preparación:

En una taza, combine el orégano, la cáscara de limón, 2 cucharaditas de aceite y la sal. Frote ambos lados de los filetes de Robalo con la mezcla de orégano.

En una sartén antiadherente de 12 pulgadas, caliente 1 cucharada de aceite en medio 1 minuto. Agregue el Róbalo a la sartén y cocine de 8 a 10 minutos o solo hasta que el pescado se torne opaco por completo, volteándolo una vez.
.
Transfiera el Robalo a 4 platos.
En la misma sartén, caliente 1 cucharada de aceite restante en medio 1 minuto. Agregue los tomates, las aceitunas, las alcaparras, el pimiento rojo molido y el ajo; Cocine de 6 a 8 minutos o solo hasta que los tomates se calienten completamente y las pieles se partan.
