Vegan Cauliflower Tikka Masala 🌶
This authentic tikka masala (spicy curry) is made with a cruciferous vegetable instead of cottage cheese or meat. Why cauliflower?
Cauliflower is high in fiber and B-vitamins that supports our body in weight loss and digestion. .
This super quick recipe is prepared in an Instant pot. You can also use a regular thick bottomed pan. .
Calories: ~320 per serving bowl. .
Step 1: Start by making the base of the curry. Add oil in your instant pot.
Step 2: Add cumin and let it splitter for 30 secs.
Step 3: Now, add finely chopped onions, finely chopped ginger and garlic. Sauté them for a good 5 mins.
Step 4: Add finely chopped tomatoes or tomato pulp. Sauté until the tomatoes are cooked.
Step 5: Add Indian spices - garam masala, cumin powder, red chili powder, coriander powder, dry mango powder and salt. Sauté until the oil starts to separate from the veggies.
Step 6: Add the washed cauliflower florets to the mixture. Give it a mix. Now add 1/2 cup water and close the instant pot by turning on pressure cook for 2 mins. On a regular pan, close the lid on low flame and cook it for 15 mins.
Step 7: Open the instant pot, give it a mix. Add cilantro and cashew paste for garnishing.
