  • Let’s talk about one of the most disappointing feelings in the world - ordering eggs benedict at brunch, drooling in anticipation for 20 mins, and then cutting into the poached egg only to find the yolk is overcooked and congealed 😫. There have been times when it’s nearly brought me to hangry tears. Enter my favorite solution to perfect poached eggs = the sous vide! It’s perfectly consistent every time and won’t result in a brunch disaster.  Add some crispy prosciutto, a swipe of pesto, and arugula on top of a toasted english muffin and life is good.

FeBRUARY was dedicated to me inspiring you to eat healthy for the most important meal. Now that we had its own dedicated account @thebreakfastrevolution365 there is no excuse for eating junk cereals for breakfast. 
My Sunday night routine is to make overnight Oats which takes less than 5 minutes. I use steel cut oats( which I have been talking about for the last 2 years for its health benefit) but large rolled oats can be used to. Slow cooking it allows it to maintain its nutrition while turning out EXTRA creamy and delicious. 
Know that this meal is not laced with sugar (unlike most breakfast cereals). It is sweetened with fresh fruit and it might take a little adjustment getting used to the texture and the taste. 
You see real food is meal to be pliable. Not just soaked in milk and drank. It’s meant to be chewed working your muscles in your mouth. It’s meant to be tasted and it’s meant to be slow releasing. The reason we eat is to fuel our body and that’s exactly what this meal provides. 
It’s easy to come up with excuses why focusing on breakfast won’t work. What’s hard is making it work and then seeing the amazing way you and your family feel, perform and behave once you start your day with a good meal. 
So if you ready to take on your day and start with a healthy meal, then you can find this recipe in my comments section. This is cooked overnight (without electricity and in a Wonderbag) because working smart on a Sunday night sets a tone for a great week ahead... Love this vegetable Moroccan couscous. It is so conforting in the winter and it provides most of the nutrients the body needs 😍

INGREDIENTS:
1 1/2 tbsp extra virgin olive oil
1 medium sweet onion, diced
2 tsp garlic, chopped
6 oz tomato paste
1/2 tsp cinnamon powder
1/2 tsp ginger powder
2 1/2 cups water
4 medium zucchini, diced
4 medium carrots, chopped
1/2 savoy cabbage, slightly sliced
1/2 cup black raisins
1/2 cup golden raisins
1 can chickpeas, drained
10 oz couscous 
1 tbsp nutritional yeast 
2/3 tbsp brown sugar
Sea salt and black pepper to taste

INSTRUCTIONS: 
Cook the onions. Add some garlic and saute for another minute until fragrant. 
Stir in the tomato paste, nutritional yeast, brown sugar, cinnamon, ginger and 1/2 cup of water until smooth. Bring to boil.

Add the zucchini, carrots and cabbage to the pot. Stir to combine. 
Add the remaining 2 cups of water to the pot. Bring to boil. Season with salt and pepper to taste. 
Reduce heat and cover the pot. Simmer the mixture for 50-60 minutes, stirring occasionally during cooking, till all the vegetables are fully tender. Add ¼ cup black raisins, ¼ cup golden raisins, the chickpeas, season with salt and pepper to taste, and simmer for 5 minutes.

In the meantime, prepare the couscous according to its package directions and add the remaining black and golden raisins. .

Visited this Greek restaurant for dinner with my friends last week! It’s really near my workplace and I can’t believe it’s my first time there! 😀

1️⃣,2️⃣: Dips platter with pita bread (tzatziki, fava, melitzanosalata, taramosalata)
⚡️My fav dip was tbe taramosalata (cured cod roe dip) followed by the tzatziki (Greek yoghurt with cucumber dip)😛
⚡️So yummy just eating the warm pita bread with these delicious dips 😌
⚡️Even better if you add a splash of olive oil to the dips! 😉
3️⃣,4️⃣: Xtapodi grilled 🐙
⚡️Damn the grilled octopus was super good 😍
⚡️Really enjoyed the smoky charred outer layer and the soft chewy inside 🤤
⚡️Will recommend this! 💯
5️⃣,6️⃣: Garides kataifi 🦐
⚡️The prawns were huge! And they were soooo fresh and sweet!!! 😋
⚡️Ironically, I almost told my friend not to order the prawns but thankfully he did! So goooood 😜
7️⃣,9️⃣: Salt baked fagry (Greek red porgy) 🐟
⚡️This dish took abt 30min to be served and it was the dish we were looking forward to! But unfortunately.... it fell short of expectations 😕
⚡️The fish came wrapped up in salt crust and the waiter cracked it open in front of us!
⚡️The fish was a little on the dry side and wasn’t as tender as I thought it was gonna be 😣
⚡️It was served with lemon sauce, olive oil and salt on the side and you can dip the fish in it before eating 🙂
⚡️Overall ok only la, probably wouldn’t re-order this!
