I had this bowl for the first time this morning and it was so good! I absolutely love the color of the pitaya and the combo of it with strawberries and bananas. This recipe came from @pitayaplus and I really liked it, and I’m excited to try their other recipes too! ~
1/2 cup of pitaya cubes
1/2 cup of frozen strawberries
1 frozen banana
1/4 cup of almond milk

Peanut Butter Chocolate Chip Cookies
Been a crazy few weeks! Traveled to the magical country of Scotland for our honeymoon, so haven’t had much time in the kitchen. Made these for my husband for his bday and they were a hit 😃
1 stick unsalted butter, softened
1/2 cup @peanutbutterco Smooth Operator Peanut Butter
1 cup coconut sugar
1 teaspoon vanilla
1 and 3/4 cup whole wheat flour
1 teaspoon baking soda
1/2 teaspoon salt (As many @enjoylifefoods dark chocolate chips as you want!)
1. Preheat oven to 350.
2. Soften butter slightly in microwave.
3. Cream together butter and PB until smooth.
4. Add sugar and mix until combined. Followed by egg and vanilla.
5. In a separate bowl, mix four, salt and baking soda. Mix and then slowly add to wet ingredients.
6. Fold in chocolate chips.
7. Bake for 8 minutes.
