Ingredients⠀
* 1 cup dried red lentils⠀
* (2) 25-ounce jars marinara sauce⠀
* 1 cup raw cashews⠀
* 16 ounce firm tofu, patted dry with paper towels⠀
* 1/2 cup nutritional yeast⠀
* 3 tbsp fresh lemon juice, from about 2 lemons⠀
* 1 tsp salt⠀
* 1 tsp dried basil⠀
* 1 tsp oregano⠀
* 1/2 tsp garlic powder⠀
* 2-3 cups baby spinach⠀
* 1 box lasagna noodles⠀
* Double recipe of Easy Vegan Mozzarella Cheese ⠀

Instructions⠀
* First, cook your red lentils. Add 1 cup dried red lentils and 3 cups of water to a medium pot. Bring to a boil, and then simmer for about 20 min. Drain the lentils and then add to a large bowl. Add both jars of marinara to the bowl with the lentils and mix to combine. Set aside.⠀
* Preheat the oven to 350F.⠀
* Make the Cashew-Tofu Ricotta: Add the cashews to a food processor and process until fine and crumbly. Then add the tofu in chunks, nutritional yeast, lemon juice, salt, basil, oregano and garlic powder to the food processor. Pulse until well combined and smooth.⠀
* Assembling the lasagna: Add about 1 cup of marinara sauce to the bottom of a large lasagna pan. Spread it around evenly. Next add 4-5 lasagna noodles (uncooked). Spread half of the Cashew-Tofu Ricotta on top of the noodles. Top with half of the spinach. Add about 1 cup of the marinara sauce over the spinach, then place 4-5 lasagna noodles on top. Spread the rest of the Ricotta over the noodles, then the rest of the spinach. Place 4-5 more noodles on top of the spinach, and then pour the rest of the sauce over the top, evenly. * Cover tightly with foil. Bake for 1 hour. Let cool at least 15 minutes before cutting and serving. (see below if using optional mozzarella topping)⠀
* While the lasagna is cooking, make your Vegan Mozzarella Cheese, if using.⠀

Ingredients⠀⠀
Chickpea, Mint Yoghurt & Sun Dried Tomato⠀⠀
1/2 cup tin chickpeas (drained and rinsed)⠀⠀
1/2 tbsp Olive oil⠀⠀
1/2 tsp pinch of ground coriander⠀⠀
1/2 tsp of ground cumin⠀⠀
1/2 cup sun dried tomatoes (halved)⠀⠀
1/2 cup vegan yoghurt⠀⠀
1/4 cup grated cucumber (with water squeezed out)⠀⠀
10 mint leaves (roughly chopped)⠀⠀
1 tbsp lemon juice⠀⠀
1 pinch of salt⠀⠀
Wild Rice, Artichoke and Tapenade⠀⠀
1/2 cup pre-cooked wild rice⠀⠀
1/2 cup jarred artichokes⠀⠀
1/2 cup tapenade⠀⠀
Olives, Roasted Red Peppers & Cashew Cheese⠀⠀
1/2 cup green olives (halved)⠀⠀
1/2 cup roasted red peppers⠀⠀
1/2 cup cashews (soaked)⠀⠀
1/4 cup water⠀⠀
1/2 lemon (juice)⠀⠀
1/2 tsp onion powder⠀⠀
1/2 tsp garlic powder⠀⠀
1/4 tsp salt⠀⠀
2 tbsp nutritional yeast⠀⠀
⠀
Dips⠀⠀
Hummus⠀⠀
Baba Ganoush⠀
⠀
METHOD⠀⠀
1.⠀⠀
Spread the chickpeas out on a parchment lined baking tray. Drizzle over the olive oil, coriander and cumin and roast at 200C for 15mins.⠀⠀
2.⠀⠀
Meanwhile in a bowl stir together the yoghurt, grated cucumber, mint, lemon juice and salt.⠀⠀
3.⠀⠀
Make the cashew cream cheese. Put the cashews, water, lemon juice, onion powder, garlic powder, salt and nutritional yeast in a liquidiser and blend until smooth.⠀⠀
4.⠀⠀
Lay 1 pastry sheet out on a greased silicone ice cube tray or silicone mini muffin tray. Using your fingers press the pastry into each hole. Place half a sun-dried tomato in each hole along one column. Top with the cucumber yoghurt and roasted chickpeas.⠀⠀
5.⠀⠀
Place a spoonful of rice in each hole in the next column. Top with half an artichoke and a dollop of tapenade.⠀⠀
6.⠀⠀
Place a piece of red pepper in the each hole in the third column. Top with a spoonful of cashew cheese & green olive.⠀⠀
7. Brush the edges of the pastry with water. Carefully place the second sheet of pastry on top of the whole tray and press down around the edges to make sure it's stuck down. Chill in the fridge for 30 min.⠀⠀
8. Once chilled, place the tray upside down on a chopping board and carefully push out the filled pastry. Cut them up into squares and place them on a parchment-lined baking tray.⠀⠀
9. Bake in oven at 180C 30min. Enjoy! #vegfoodvideos

Ingredients: Russet potatoes . Cashew Sauce: Cashews (soak them in water for a few minutes) Juice of 1 lime 1 tbsp Nutritional yeast Water (~1/4 cup) Spices: salt, pepper, oregano, garlic powder . Mixed veggies: Mashed potatoes from the filling Roasted Corn Carrots (raw) Red Bell Pepper (raw) Cilantro Jalapeno Tomatoes (raw) Topping: avocado / guacamole and green onions . Directions: Cook the potato for ~1 hour at 450F. Cut out a rectangular top and open it up by scooping out the inside so it becomes “boat” shaped. . Prepare the sauce by mixing all the ingredients listed above in a blender. . Mix the sauce with the veggies and stuff the potatoes with it.

So, I've been meaning to post about these guys for AGES! @theproteinworks sent me out these new bars a while back to try out and honestly, I've been loving them without really realising it. Whenever I'm looking for extra protein and I'm not looking to try out a new bar... Just a casual wee protein hit, I always reach for bars that have the best macros - think PhD's diet whey abrs and these haev joined last list! They're small enough that they don't smash your macros and they taste great! I've found myself throwing these in oats and cereal more often than just eating one and they're great.👌🏼

The texture of these guys is great. Super crunchy layer on both sides, covered in chocolate, with loads of wee toppings on the outside! I can definitely recommend these! Thanks, protein works for sending these out for me to try! And for the shaker bottles!🙂🙏🏼

Also, 196.4lbs this morning. Heading back down in weight again. Aiming to smash the macros every day this week and we'll see. Surely my maintenance hasn't dropped that much... 🤔😂Let's see!
