🇧🇷 Fala pessoal! Fui convidada pelo @spatuladesserts e @tothmoni pra participar de um desafio de confeitaria! O objetivo desse desafio é praticar, estudar, fazer network e se inspirar semanalmente ao lado dele confeiteiros de vários lugares do mundo! 
O desafio dessa semana é ROCAMBOLE! E eu aproveitei para fazer uma releitura de um dos meus bolos que mais fez sucesso no @bakeoffbrasil até agora: o bolo pedras preciosas com recheio de erva cidreira! Fiz um pão de ló tradicional e recheei com esse sabor incrível de erva cidreira, e por cima coloquei uma cobertura de fondant com limão e raspas de limão! Espero que gostem! 🥰
🇺🇲 So I was invited by @spatuladesserts and @tothmoni to this fun baking and pastry challenge! The purpose of this challenge is to improve ourselves, practice, network and get inspired week by week along with other international bakers from all around the world! 
This week's challenge is CAKEROLL! I decided to make a reinterpretation of one of my most sucessful cakes so far in @bakeoffbrasil: the geode cake with lemonhrass felling! I used a traditional sponge cake recipe and filled it with this amazing flavour, on top of all I put some lime fondant with zests! Hope you guys like it! 🥰

This ones got cardamom in it and I gave it that Ammna twist by adding the seasonal ingredient : PUMPKIN! Along with all those warming spices - cinnamon, nutmeg .. yea u know what I’m talking about ;) it does take a little time but give it a go! It’s absolutely delicious! And your kitchen will smell AMAZING!

  • pumpkin 🎃 scones || back again with the baking challenge we were invited to by @spatuladesserts this weeks theme was pumpkin!

scones ingredients:
2 1/4 cup flour
2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1 tsp cinnamon 
1/2 tsp ground nutmeg
1/4 tsp ground ginger
1/8 tsp ground cloves 
1/4 cup packed dark brown sugar 
3 tbsp granulated sugar
1/2 cup unsalted butter
1/2 cup + 1 tbsp pumpkin purée 
3.5 tbsp buttermilk (or nut milk!)
1 large egg
1 tsp vanilla
1 tbsp honey .
glaze ingredients 
1 cup powdered sugar
3 tbsp milk (or nut milk)
.
pumpkin icing ingredients
3/4 cup powder sugar
1 tbsp pumpkin purée 
1/4 tsp ground cinnamon
1/8 tsp ground nutmeg
1/8 tsp ground ginger 
1 tbsp milk (or nut milk)
.

directions:
1. preheat oven to 425 F, in a large bowl combine flour, baking powder and soda, salt, spices, and sugars
2. cut in cold butter with two knives or pastry cutter until a breadcrumb like texture is achieved 
3. in a separate bowl combine pumpkin, buttermilk, egg, vanilla, and honey 
4. create a well in the center of the dry mixture and pour pumpkin mix in
5. work mix together until combined, dough will be pretty sticky, if it feels too wet work in some more flour one tbsp at a time 
6. pour dough out onto a well floured surface and flatten out to form a circle 
7. using a floured knife, cut dough into 8 equal wedges
8. transfer wedges to a baking sheet lined with parchment or a silpat 
9.  bake for 13-15 mins, until tops are lightly golden brown, transfer to a wire rack and allow to cool slightly before putting glaze on 
10. for the glaze combine powder sugar and milk until desired consistency is reached
11. for the pumpkin icing combine all ingredients and mix well, transfer to a piping bag or ziplock to drizzle on scones
12. once scones have cooled but are still slightly warm, pour glaze over and drizzle pumpkin icing 
11. enjoy!

  • This week's baking challenge @tothmoni @spatuladesserts was pumpkin so I decided to do a pumpkin macaron with three different kinds of pumpkin filling! My son's favorite was the cream cheese with @traderjoes pumpkin butter inside! I topped a few with this cute fondant deco that I saw on @piesandtacos website. Adorable but very time consuming so I only did enough for 12 macarons! 😛 Happy pumpkin everythang!! #bayarea

  • Pumpkin. I must admit that when @spatuladesserts announced that pumpkin was the theme for this week’s baking challenge I was disappointed. So much so that I wasn’t going to cook. You see, I don’t have terribly fond childhood memories of pumpkin. I remember feeling like I was going to gag on it. I tried feeding it to the dog under the table (he sniffed, licked and left), hid it under roast chicken bones and even pressed it into the roof of my mouth to spit out later. To think of a way to incorporate it into a sweet dish apart from pumpkin scones was foreign. But, I was persuaded this morning, that it was a challenge after all and I ought to embrace it. So I did. Presenting pumpkin creme caramel with roasted rice and coconut from @the_spirithouse book, Desserts. Sweet, coconutty and delicious. ❤️#friendswhobaketogetherstaytogether #onthursdaysibake

Here is a Charcoal dark vanilla Swiss roll with a vanilla buttercream. Keeping the flavors simple this time but the look Uber fantastic!   • Treat everyone this weekend with the perfect Swiss Roll ready to serve in just 30mins... This week's International Bake-Off challenge theme is "Swiss Roll" so here's a very traditional take on it... I know lots of people struggle with getting it to roll without cracking so here are my tips: ➡️ Use the Mango Swiss Roll recipe on Cookidoo UK 🇬🇧
➡️ Take the measuring cup out while whisking the eggs and sugar to allow more air into the bowl.
➡️ Instead of putting a bowl on the lid to weigh the flour, put a small sieve in the mixing bowl ... Saves mess and washing up 🙌
➡️ Cut into the corners of the baking paper to get it to sit flat in the tray for a more level cake.
➡️ While the cake is baking, measure 1/2 cup jam and heat for 30-45 seconds in the microwave until its more runny and spreadable.
➡️ Straight after flipping the cake onto sugared baking paper, peel off the baked paper and spread with warm jam.
➡️ Quickly trim the edges with a sharp knife.
➡️ Score 1cm in from a short edge. Fold slightly and squash to begin a tight roll.
➡️ Roll up, gently squeezing the cake into a swirl and removing the sugared baking paper. Check the sides as you roll it.
➡️ Finish with the end underneath the cake and transfer to a serving plate.

  • The theme for this week’s international baking challenge that I’m participating in is Swiss roll. I really struggled to decide what to make as I had so many ideas. Black Forest, pandan, jam roll, matcha. With some help from my followers I settled on a plain sponge filled with a mascarpone, lemon curd and blueberry filling. I followed @flourandstone recipes for the sponge and lemon curd and used some of the delicious local blueberries that we have in abundance at the moment. Lemon and blueberry ... another perfect flavour match. @spatuladesserts @tothmoni #foodandwords #friendswhobaketogetherstaytogether #onthursdaysibake

  • Remember when I said I wanted to own a bakery...oh yeah that was yesterday. Well today I had a big bake fail in the kitchen today⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ I’m new to the world of collabs and today I doubled up! Go check out the other posts: #fallfashioncollab2019 and #friendswhobaketogetherstaytogether ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ The 2 challenges were to create a fall fashion in dessert form and a Swiss roll - I was so excited when I envisioned this leopard print Swiss roll. It’s a spice cake filled with apple butter and whipped cream. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Well... Swiss rolls are 🤬 hard. I was so frustrated when it started to crack. But then I remembered that it’s just cake. It’s a spice cake filled with apple butter and whipped cream. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Well... Swiss rolls are 🤬 hard. I was so frustrated when it started to crack. But then I remembered that it’s just cake. And that it wasn’t for anyone but myself - so I cut off a slice and ate it 😋 man was it good!! ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Bake fails happen! They aren’t worth crying over.
