  • If you think I grew my first giant heirloom tomato and DIDN’T stage a short photo shoot with it, then you’re sorely mistaken. This is a German Pink tomato that we pulled from the saddest, slowest growing plant of the season. I almost yanked it out two months ago because it was a scraggly, haggard looking disaster of a plant. But look at this thing! I’m glad I didn’t give up on the plant because of how bleak things were looking. There’s probably a metaphor for life somewhere in this tale, but I’m too busy dreaming of eating it sliced with basil, EVOO, salt, pepper, and fresh mozzarella tomorrow night. 😋🍅 What’s your most memorable harvest? Or the thing you’ve been proudest to have had come from your garden?!

Grow Pineapples from scraps 🍍 I had a few messages about how to grow pineapples from scraps after my last post so here is a little visual guide ✨ There are a few different ways to grow them but this is just the way I do it.
~
1. Cut off the top of a pineapple, remove the flesh and pull off some of the leaves to reveal about and inch of stem.
2. Place in a jar of water and leave until it has a good set of roots.
3. Plant in either a warm, sunny sheltered part of the garden or in a pot so you can move to warmer spots in winter.
4. Wait patiently for 2.5 years 🤣 so worth it though ✨

Note: not all countries have access to pineapples with the leaves on due to being removed in the importing process (sorry New Zealand). Unless you make friends with my parents who have been growing them for so many years before this import rule came into place 🍍

  • Taco Tuesday recap- some of the ingredients are the same or similar, but they all bring a different taste. Also, it’s a good idea to have a bag of tortilla chips to scoop up some of this good stuff. Recipes below 👇🏾
🔺Hatch Chile guacamole- Here’s what you need:
1️⃣. 2 hatch chilies
2️⃣. 4 avocados
3️⃣. 2 limes
4️⃣. 2 Serrano peppers (optional)
5️⃣. 1/4 cup red onion
6️⃣. Handful of chopped cilantro leaves ➡️ Place hatch chile on foil & in oven at 425° with a drizzle of olive oil- cook for 10 mins on each side
➡️ While chile cooks cut the tomatoes, Serrano, red onion, & cilantro into same size pieces & add to bowl
➡️ Remove hatch chile from oven & place in a bowl & cover with foil. Once pepper is cool enough to handle, remove skin, & cut into pieces then add to bowl.
➡️ Halve and mash avocado in bowl
➡️ Add all other ingredients,the juice of 2 limes, add a pinch of salt, and mix •
🔺Pico de Gallo: here’s what you need:
1️⃣. 4 tomatoes
2️⃣. 2 Serrano or jalapeño peppers (or more 🌶)
3️⃣. 1 lime 
4️⃣. 1/2 chopped onion
5️⃣. 1/4 cup cilantro ➡️ Dice the tomatoes, peppers, onion, & cilantro into same size pieces & add to bowl
➡️ Add the juice of 1 lime ➡️ Optional: add a pinch of salt
➡️ Mix all ingredients- enjoy- or transfer to a Tupperware & keep in the refrigerator until ready to eat. •
🔺 Salsa Roja:
In a medium pot filled halfway with water add:
1️⃣. 4 (or more) medium tomatoes 
2️⃣. 1 quartered onion 
3️⃣. 3 cloves of garlic
4️⃣. As many peppers as you'd like ( I like to use Serrano peppers)
5️⃣. 1/2 cup cilantro 
6️⃣. 2 limes ➡️ In a medium pot filled halfway with water add 1-4. Boil the veggies & then transfer them to a blender or food processor ➡️Add the juice of a lime, 1/2 cup of cilantro and a pinch of salt
➡️Blend & taste (you might have to add more salt, lime, or peppers)
•
🔺Mushroom Fajitas: 
1️⃣. 3 or more portabella mushrooms
2️⃣. 2 or more bell peppers
3️⃣. 1/2 onion
4️⃣. 1 teaspoon salt, pepper, and cumin 
5️⃣. 1 tablespoon oil of choice ➡️ Preheat oven to 375°
➡️ Slice all vegetables into thick pieces and coat with oils and seasoning ➡️ Bake for 20-30 mins.
That’s it-super easy and really good ✌🏾

I got 100lbs of Tomatoes that's about to become some of the best Homemade Spaghetti Sauce Ever😋

Never did I ever think I would become that person that does all this homemade fresh from the garden BS! 
But when I started learning how to eat healthy, I learned about all the processed foods and all the added sugars and chemicals  they put in everything we buy these days... like spaghetti sauce. 
And you wanna know how hard it is to find a clean, no sugar added anything in a store....Well It's really hard.. and if you do find it you will be paying out your Ace for it.

So 3 years ago I decided I would attempt a garden and I would attempt this canning business. 
Boy has it been an adventure and a whole lot of learning but I 100% enjoy having my pantry stocked full of these goods. And the best part is, is I know exactly what's in them and there is none of that processed and artificial crap in it. 
So how many of you out there became that person and fell in love with canning? 
Drop me a 🍅 if you are that Person! Better yet message me your favorite canning recipe!

  • I’m not much of a flower arranger that’s for sure but I’m relatively pleased with this. 
Inbetween looking looking after the little fella 👶🏼 I nipped into the garden I cut a few flowers (I’m not much of a gardener either 😂) and popped them in this basket which I received with an actual arrangement in earlier in the month.

  • Oh boy! Would you just take a look at those cucamelons growing up the shed?! 🥒
They took FOREVER to get going, and then exploded in a blink of an eye. They’re out of room to grow up, so they’re crossing over to the other (empty) trellis. 😋 
We’re just starting to harvest these little bite-sized treats! Do you grow cucamelons? How do you like to eat them?

What a beautiful night... It’s been a looooooonnngggg week but moments like this truly are priceless... all the blood, sweat, tears, hard work, pouring out of love and dirty hands truly pays off!! #gardeningistherapy 
We are in the process of putting new flooring in and needless to say 10+ years of storage is exhausting to clean up, purge and mentally excruciating...wondering why you kept so MUCH stuff....?Thankful my My mother in love brought over dinner tonight too.
