Recipe: Serves 1
For the Fajita Sauce:

2 tbsp tomato puree
1 tbsp maple syrup
juice of 1/2 lime
1 tsp sriracha mayo/sauce
1/2 tsp smoked paprika
1/2 tsp ground cumin
1/2 tsp dried oregano
1/2 tsp nutritional yeast
1/4 tsp mild chilli powder
a pinch of ground cinnamon
a pinch of garlic powder

For the Tofu:
1/2 395g block extra firm tofu, drained, pressed & dried
a sprinkle smoked paprika
1/2 red bell pepper, green pepper & yellow pepper, sliced
mushrooms, sliced (optional)
red onion, sliced (optional)

Method:
1. Preheat the oven to 200c/180c fan/400f/gas mark 6. Line a baking tray with non-stick baking parchment.

2. Slice the dried tofu into bite sized pieces, add the tofu to a small bowl, then sprinkle in some smoked paprika, shake the bowl until the tofu is coated well.

3. Add the tofu to the lined baking tray and bake in the oven for 15 minutes, until slightly crisp on the outside.

4. Meanwhile to make the sauce, mix together all the sauce ingredients into a bowl until everything is fully combined then set aside.

5.Slice your bell peppers and other optional veggies into thin pieces.

6. Once the tofu is slightly crisp and much more firm, take it out the oven. Heat a frying pan with a little water/oil, then add the peppers cooking them on a medium/high heat setting until slightly soft. Add the tofu, then pour in your fajita sauce, stirring frequently, cook for another 3 minutes until the sauce has reduced and the peppers are soft.

7. Serve with rice/Bulgar wheat/quinoa, some lettuce, tomatoes, black beans, avocado or wrap them up into tortilla wraps with some vegan cheese, vegan mayo, lettuce & avocado! ENJOY!

GF/VEGAN PROTEIN ZUCCHINI OATS 🥣:
in a pot, mix together the following ingredients,
- 1/2 medium zucchini, shredded/grated
- 1/2c gf oats (i prefer rolled and quick)
- 1/3c liquid (i recommend almond or oat milk, it makes it super creamy)
- splash of vanilla
- 1Tbsp chopped walnuts (optional, i like crunch)
- sea salt
mix all together then put on stovetop on medium heat, stirring consistently with a spatula (key!!!) and adding the water/liquid as needed. once thick and combined, add the following on low heat: - 1/2Tbsp vegan butter (optional, but i highly recommend and ghee/regular butter work)
- 1tsp maca (also optional)
- 1-2 scoops vanilla @ancientnutrition protein (use fitstrongshann for a discount)
stir until all combined (you may need a little more liquid, it’ll be thick!!!) and let cook for a few minutes. then plate, top and enjoy!!!

I definitely out did myself with this one-so FLAVORFUL! I am making an intention to eat more plant based dinners + this bowl is now definitely in rotation 🤘🏼 Here’s how I did it:
.
1. Preheat oven to 375. cut a sweet potato into wedges. lay the wedges on a lined baking sheet. Drizzle on a little bit of melted coconut oil. Sprinkle on chili powder, smoked paprika, sea salt, and garlic powder. Place in the oven and bake for 45 minutes flipping halfway.
2. assemble the bowl! Fresh greens, ripe avocado, pico se gallo (I did store bought!), black bean dip (I used Trader Joe’s brand but @betterbeanco had amazing ones too!), the sweet potato wedges, a squeeze of lime, and chili flakes.
3. If you want to get WILD, drizzle on warm @sietefoods cashew vegan queso 👅

ブリスベンで迎えた朝。

オーストラリアはベジタリアン、グルテンフリー先進国なので
私が困る事は殆ど無い。

画像はオムレツロール。
卵の中にはラタトゥイユがベースとなるお野菜が入っていて、
仕上げはパルミジャーノをたっぷりと。

お味付けはオーストラリアなので
ジャンクな濃い味のかなと思っていたけど、
ベジタリアン、グルテンフリーなどを常にメニューに入れているお店だけあって(?)、
優しくヘルシーなものでした。
パンも美味しかったし。
街の人気店というのも納得でした。

Ingredientes
✔️ 1 peito de frango;
✔️ 1 abóbora;
✔️ 2 colheres de sopa de requeijão light;
✔️ ervas finas;
✔️ sal do Himalaia.

Modo de preparo
Cozinhe o frango e a abóbora na água com o sal até que fiquem mais macios. Depois, com uma faca muito afiada, corte a abóbora em fatias finas. Agora, desfie o frango e misture-o ao requeijão.

Monte a lasanha sempre colocando uma camada de abóbora e a outra de frango, salpicando um pouco de ervas finas entre cada camada. Leve ao forno por meia hora a 180Cº. Está pronta sua lasanha sem glúten!

Literally takes 10 mins to make this DELISH & healthy bowl. ~
Cook 1 serving chickpea pasta (@eatbanza) or another clean pasta per instructions (about 7 mins) and ensure it’s slightly al dente.

While pasta is boiling sauté: 3 sundried tomatos, sliced mushrooms & chickpeas in 1 tbsp EVOO with garlic salt & oregano. Add about 2 cups of greens (I used a kale and spinach blend).

When pasta is done, drain then add to veggies with 2 tbsp vegan kale pesto (@traderjoes) and serve.

  • Happy Taco Tuesday kittiesssss! I haven't celebrated a proper Taco Tuesday in SO long, so I decided that today's the day. I've experimented wit many taco recipes but THIS one is by far the yummiest & easiest to make! All it involves is marinating some veggies for about an hour, then cooking them until hot n sizzly. 🔥💃 Also I made a SUPER epic sauce to put on top, & it's made from something you would've never imagined would be so good! These tacos work well using corn tortillas or even lettuce cups or cassava shells, you could even eat this as a plate with rice n beans & be a happily, very satisfied kitten! 😊😉🤤 These are my Mushroom Fajita Tacos with Spicy Tofu Sauce! 😭🤤🙏🏻 Here's what I did. 👇🏼

~ SPICY TOFU SAUCE ~
•Sauté 1 clove minced garlic, 1/2 an onion, & half a brick of tofu until golden brown, sprinkling w/ salt/pepper. Transfer to a blender & blend w/ 2 TBSP. nutritional yeast, 2/4 cup oat milk, 1/4 TSP. chili powder, 1/2 TSP. salt/pepper, 1 TSP. onion powder, 1 clove of garlic, & a dash or truffle oil until smooth.
•For the marinade, whisk together juice from 2 limes, 2 TBSP. olive oil, 1/4 TSP. truffle oil, 2 cloves minced garlic, 1/4 TSP. chili powder, 1/2 TSP. cumin, 1/2 TSP. salt/pepper, 1 TSP. onion powder, 1/2 TSP. coriander, 1 TBSP. nutritional yeast, & 1 TBSP. GF soy sauce.
•Marinate 1 8 oz. package of sliced mushrooms, 1/4 a red onion sliced thin, 1 bell pepper sliced thin, & 1 jalapeño diced into small bits, for 1 hour.
•Preheat oven to Broil.
•Cook ur marinated mix over high heat until sizzling, constantly mixing around for about Then transfer to a sprayed baking sheet & cook for 5 min. under Broil.
•Serveover corn tortillas with ur 🔥 tofu sauce, avocado, shredded lettuce, & black beans for best results!

~ That's how you make a proper vegan taco y'all. 😌 If i've learned anything from vegan cooking is that sometimes simple is truly best!!!! I always lwant to throw a plethora of veggies into my recipes (because I love them all 🙈), but with stuff like this sometimes mushrooms, onion, & a lil bell pepper is all you need with the right seasoning to make a crazy good meal. All it involves is marinating some veggies for about an hour, then cooking them until hot n sizzly. 🔥💃 Also I made a SUPER epic sauce to put on top, & it's made from something you would've never imagined would be so good! These tacos work well using corn tortillas or even lettuce cups or cassava shells, you could even eat this as a plate with rice n beans & be a happily, very satisfied kitten! 😊😉🤤 These are my Mushroom Fajita Tacos with Spicy Tofu Sauce! 😭🤤🙏🏻 Here's what I did. 👇🏼

    ~ SPICY TOFU SAUCE ~
    •Sauté 1 clove minced garlic, 1/2 an onion, & half a brick of tofu until golden brown, sprinkling w/ salt/pepper. Transfer to a blender & blend w/ 2 TBSP. nutritional yeast, 2/4 cup oat milk, 1/4 TSP. chili powder, 1/2 TSP. salt/pepper, 1 TSP. onion powder, 1 clove of garlic, & a dash or truffle oil until smooth.
    •For the marinade, whisk together juice from 2 limes, 2 TBSP. olive oil, 1/4 TSP. truffle oil, 2 cloves minced garlic, 1/4 TSP. chili powder, 1/2 TSP. cumin, 1/2 TSP. salt/pepper, 1 TSP. onion powder, 1/2 TSP. coriander, 1 TBSP. nutritional yeast, & 1 TBSP. GF soy sauce.
    •Marinate 1 8 oz. package of sliced mushrooms, 1/4 a red onion sliced thin, 1 bell pepper sliced thin, & 1 jalapeño diced into small bits, for 1 hour.
    •Preheat oven to Broil.
    •Cook ur marinated mix over high heat until sizzling, constantly mixing around for about Then transfer to a sprayed baking sheet & cook for 5 min. under Broil.
    •Serveover corn tortillas with ur 🔥 tofu sauce, avocado, shredded lettuce, & black beans for best results!

    ~ That's how you make a proper vegan taco y'all. 😌 If i've learned anything from vegan cooking is that sometimes simple is truly best!!!! I always lwant to throw a plethora of veggies into my recipes (because I love them all 🙈), but with stuff like this sometimes mushrooms, onion, & a lil bell pepper is all you need with the right seasoning to make a crazy good meal. Top with passion fruit pulp, sprinkle of almond flakes, ground cinnamon and drizzle is sugar free rice malt. .

  • Day 4 (continued): At Sea. The Oceaneers Club has 5 areas and then is connect to the Lab that has another 5 areas. You also wash and sanitize every time you check in or out. It’s pretty amazing. So many things to do!  Oh, and I won BINGO somewhere during the week. Plus a raffle during the Castaway Challenge Meeting. Disney Cruse gets a thumbs up from us. Only two complaints. The nursery was not great for Joey. And when we got notified that he was very upset, it took nearly 10 minutes to get him checked out. The check in and check out process for nursery could be improved. Also, they were pretty good about my special diet and needs. However, the last morning is a little different. We ordered 3 gluten free breakfasts and one regular. The server delivered one meal and walked away. Nothing was prefaced and I thought it was for the kids so they could start eating. Luckily I didn’t eat it because it was the one full of gluten for Mike. Ask any questions. #disney #disneycruise #disneycruiseline #disneydream #glutenfree #mrjosephtheodore #misslondongraham

They’ve got crunchy walnuts, sweet chocolate, and a whole lotta addictive  flavor and texture!💯👏

Ingredients:
1 flax egg
1 tsp vanilla
2 tbsp melted coconut oil
3 tbsp non-dairy milk
1/4 cup coconut sugar
1 1/2 tbsp maple syrup
1 1/4 cup blended gf oats
1/3 cup cacao powder
1 tsp baking powder
1/2 tsp salt
1/3 cup chocolate chips
1/4 cup crushed walnuts (optional but yummy:)

1. In a large bowl combine your flax egg, vanilla, coconut oil, non-dairy milk, coconut sugar, and maple syrup
2. Then add in the blended oats, cacao powder, baking powder, and salt
3. Stir in your chocolate chips and crushed walnuts and use a small-medium cookie scoop to place them onto a cookie sheet
4. Bake in the oven at 350 for 11 minutes and enjoy!!
