Back from vacation 😫 but actually pretty pumped to cook all my faves at home again. I’m also randomly coming up with tons of new recipe ideas so I guess the kitchen break was a good thing!

I’m at that spot on vacation where I’m starting to miss the food I make at home juuuussst a little. Not really missing the cooking though, I’ll be honest 🤷🏼♀️ anyway maybe if someone could make me these chicken pesto stuffed sweet potatoes though soon?? ..

@bakeinaminute bread mix buns from @switchgrocery is seriously my favorite mix ever. So versatile. I have made pizza crusts and buns so far and both have turned out so good.
Because sometimes taking care of yourself means eating junk food and watching 8 movies with your kiddo over the weekend. We had a very Gilmore Girls kind of night and I will never regret fun time spent with my kiddo.

When it comes to healthy eating, I am a huge believer in substitution. I hear people say they’re cutting out all soda or sugar cold turkey and I think that’s great, unfortunately most people will fail at getting healthy with this approach. Cutting things out without putting other things in their place will leave a gigantic hole that will scream to be filled and nag at you to until you cave. Energetically speaking, it puts you in a lack mindset versus abundance. Berry Coconut Yogurt Toast
I love to eat different toast combinations and I’ve seen some on instagram that are so pretty and intricate you almost don’t want to eat them (but like I still would). I made this toast combo with some random plain white bread we had in my house since we were out of the other ones we normally have, a few spoonfuls for each slice of @gtskombucha raspberry coconut yogurt, some blueberries and sliced strawberries, and cinnamon. Usually I wouldn’t spend this much time trying to make my food look pretty since I get impatient and hungry, but I had fun with it lol

New kitchen = new recipes! Today was my first full day in our rental property at school so I broke the kitchen in by making Paleo Chicken Pesto Pasta (Zoodles). #paleo#chicken#pesto#zoodles#grainfree#dairyfree#autoimmunediet#dinner Chicken Pesto Zoodles
2 tbsp olive oil
1 tbsp minced garlic
1 lb chicken
1 pint of heirloom cherry tomatoes
1/4 cup of chopped basil
1/2 cup of pesto
2 Zucchini spiralized with water squeezed out
1. Sauté chicken until browned.
2. While chicken is cooking, half the tomatoes, chop basil and spiralize zucchini
3. Sauté tomatoes, herbs, and garlic until tomatoes are soft
4. Stir in pesto and add cooked chicken.
5. Gently toss zucchini into mixture and sauté until zucchini softens

My 6 yr old wanted me to make a face out of my dinner lol, so here is a face made of 2 burger patties, cut up veggies, and almonds.
Chocolate Dipped Berry Protein Bars - HELLO😍. They're AIP and Paleo, full of collagen protein, fiber, and healthy fat.
I love these bars so much, I've actually made a few variations of it - Apple Pie, Pumpkin Snickerdoodle, and White Chocolate Peppermint. Apparently I have the fall and winter flavors down.
If I were to make another flavor, which would you rather see: Key Lime or Chocolate Chip?

One of our most popular recipes, these 5-ingredient treats are super simple to make (no mixer needed) and a delicious, healthier treat the whole family will love. Perfect for back to school and fall baking projects! Even AIP-friendly without the 🍫
1 C coconut cream concentrate
2/3 C maple syrup
1 tsp coarse salt
2 C shredded coconut
1/2 C chocolate chips (optional – leave out for AIP)

These cookies taste sooooooooooo good!! I honestly am pretty impressed with myself not going to lie haha 😂 *high fives myself. Not only are these chocolate chip cookies everything I said above, but are also a good source of protein and healthy fats! So yes these cookies are actually good for you. The coconut oil is an excellent source of healthy fats and the vanilla flavored protein powder sneaks itself in perfectly! It took some serious self restraint to not eat all the dough while I was mixing the batter but alas the cookies did make it to the oven 🙏🏼🙏🏼. They taste sooo freaking good I can’t even begin to explain it. 🤤🤤 Here’s how I made them! ⬇️⬇️⬇️
🌸 2 cups almond meal
🌸 2 eggs
🌸 1/4 cup melted coconut oil
🌸 sprinkle of cinnamon (your taste preference)
🌸 2 tsp vanilla extract
🌸 1 tbsp & 1tsp baking powder
🌸 1 serving (2 scoops) of @ora.organic vanilla protein powder
🌸 4 bricks of @evolvedchocolate chocolate bar
🌸 optional* 1 twist on your salt grinder of pink himalayan salt (this helps bring out the chocolate flavor!
✨ preheat your oven to 350°F
✨mix all the dry ingredients together in a bowl
✨mix the wet ingredients together in a separate bowl
✨pour the mixed wet ingredients into the dry and mix together until fully incorporated
✨place your cookie dough onto a parchment paper lined tray and bake for 16-18 minutes. (I got 10 cookies from my dough amount)
