If I were to choose a second favorite cuisine after the Lebanese one, it would definitely be the Greek 🇬🇷💙 Chicken Souvlaki, tzatziki and Greek pita bread is just what you need to make the start of this year memorable 🙊 🇬🇷 detailed recipe in my never ending stories 🇬🇷
Marinade for 1 kilogram chicken cubes:
2 TBS chopped parsley
1 TBS minced garlic
2 TBS olive oil
salt and black pepper to taste
½ tsp chili flakes
½ tsp cumin
1.5 TBS dried oregano
¼ cup lemon juice
marinate chicken at least for an hour
put into skewers
grill until chicken is well cooked
Tzatziki sauce: 🍶
1 cup thick Greek yogurt (you can use a mix of Laban and Labneh)
2 TBS chopped dill
2-3 garlic cloves, minced
salt and black pepper to taste
2-3 cucumbers, deseeded and finely chopped and well drained (you can grate them coarsely and squeeze with your hand to remove water)
1 TBS juice or vinegar (vinegar is a better choice)
Combine everything together
For better taste, refrigerate for an hour at least

Spent another beautiful day with family yesterday eating good food, drinking delicious cocktails, and playing some competitive games of giant Jenga. So thankful for this spring weather and the ability to spend time outdoors. Before heading out for our Sunday festivities we had a delicious lunch: Greek style meatballs with tahini sauce.
Roast sweet potato with salt pepper and olive oil in the oven at 425 degrees until crispy. Combined 1.5 pounds of ground turkey with salt, pepper, oregano, cumin, green onion, chopped kalamata olives, and a little olive oil. (I didn’t take measurements of the spices, just went by look). Roll the mixture into balls and cook on a heated cast iron skillet, turning about halfway through cooking time. Serve meatballs and sweet potato on a bed of spinach and arugula, cucumber, and red bell pepper. Top with a drizzle of tahini sauce.
Traveling through Birmingham, Alabama, on the way to Mama’s house, I had my eyes peeled for some good takeout. I thought it’d be nice to share a meal but she is not in good shape to get out this instant and I was on the road. I had my eyes peeled. Other than knowing that I wanted something good, with imaginative being a plus, I didn’t have a lot of ideas and I didn’t want to get side tracked off the main road. It had already been a long drive and a long day. I slowed down when I saw the Purple Onion up ahead, off 31 in Hoover. I’d been there once a few years back but didn’t remember a whole lot about it. I was thinking it was a hamburger joint. Nope. Actually they do have burgers on the menu, but they specialize in Greek food. After some discussion on the phone with Mama, I got us both a Gyro Plate, actually I got one for my sister too. With a deconstructed gyro, pita bread, humus, wild rice, and fresh cut fruit and vegetables, it was very likely the most beautifully plated box of takeout that I have ever had in my life, radish roses included. Yep, it was a win. Everything was yummy -- and a good time was had by all. --
