Yesterday I was blessed with the opportunity to sit in ceremony with several (16 to be exact) Aj Q'ijab, Maya spiritual guides, for a traditional fire ceremony on the sacred day of Wajxakib B’atz and on the sacred ceremonial grounds of Lake Atitlan.
Wajxakib B’atz (aka 8 B’atz) “is one of the most important days in the sacred calendar. It is the beginning of the new ceremonial cycle, the day of initiation of new day keepers, the day where the baton is passed from the old to the new. It is the day of celebration of the Chol Q’ij, the sacred calendar, which brings our ability to navigate through life using the cycles of sacred time. The nawal B’atz represents the thread of time, and the sacred calendar is a representation of how that thread is woven to create reality. It was the most beautiful ceremony I have yet to experience. All 16 guides took turns calling the different nawals in their native tongue while all the others spoke their prayers and gave offerings aloud in their languages simultaneously. It was an experience that spoke deeply to my heart and I feel eternally blessed to have been a part of it.

Although I’ve never had the real version of this dish, which I’m extremely confident is much better than the one I just made, it was quite delicious. The one major thing that I know I didn’t get right was the texture. I THINK it’s because I need a higher grade blender.
That being said, I made more and bigger mistakes than that for this round. Guatemala. The birthplace of chocolate and a Mecca for coffee. I failed on both of those fronts. I could not find Guatemalan chocolate or coffee in my neighborhood!
We did get our hands on some Picamas though and I do not regret that Amazon order.
Does anyone know the best brands of Guatemalan chocolate and coffee that you can find in the States? It must be easy to locate some and I must be blind.
