Recipe by: 
Ingredients: @cleanfoodcrush .
1.5 lb. raw shrimp, peeled and deveined
2 tsp ground cumin 
1 tsp smoked paprika
2 cloves fresh garlic, minced
2 Tbsp avocado oil, or extra-virgin olive oil, divided in half 
sea salt and fresh ground black pepper
freshly ground black pepper
2 fresh limes
a handful of fresh cilantro leaves, chopped
8-10 romaine or butter lettuce leaves, rinsed and pat dried
1 large avocado, diced 
1 red chili, thinly sliced

Instructions:
In a large glass bowl, add shrimp, all seasonings, juice of 1 lime, garlic, and 1 Tablespoon of oil.

Season with sea salt and pepper to your taste, then stir well to coat. 
If time allows, refrigerate/marinate for 15 minutes or so, covered.

Heat oil in a large skillet over medium heat. Add shrimp and cook until just pink, about 3-4 minutes

In a very large bowl add cooked shrimp, diced avocado, cilantro, chili slices, juice of 1 lime and remaining oil. 
Gently stir to combine.
Taste test and season with a pinch of sea salt and pepper of needed.

Add spoonfuls of the avocado shrimp mixture lettuce leaves as shown, and enjoy. ❤

  • Spicy Thai basil tofu (Pad Krapow tofu) by @woon.heng 💚

Ingredients:
~ 1 package of firm tofu, drained and mashed
~ 1/2 cup packed Thai basil leaves
~ 7-8 Thai chilies, chopped
~ 5 cloves garlic, minced
~ 3-4 shallots, minced
~ 3 tablespoons coconut amino
~ 1 tablespoon soy sauce
~ 3 tablespoons vegan 'fish' sauce*
~ 3 teaspoons coconut sugar
~ 1 teaspoon salt
~ 1 tablespoon avocado oil
.
Whisk coconut amino, soy sauce, 'fish' sauce, sugar and salt in a bowl until well combined, set aside.
In a nonstick pan with low-medium heat (no oil), pan-fry mashed tofu until golden brown to get the chewy texture.
Using the same pan, push tofu aside, add 3 teaspoons oil and sauté garlic and shallots until soft. Add half the sauce, mix with tofu and let simmer for 2 minutes. Then, add chilies and remaining sauce and let the sauce thicken (when sugar caramelized). Finally, stir in basil and serve warm with your favorite grain.
* Closest sub that I can think of for fish sauce: 1 tablespoon vegan sugar, juice of 1 lime, 1 tablespoon soy sauce, 1 tablespoon water, and chopped Thai chilies. #bestofvegan

8/50 Avocado Salad or Guacamole

While it is a point of contention whether Guacamole is a salsa or a dip or salad but I am going by the broad definition that anything comprising of mainly raw and fresh ingredients can be called a salad. Well it is one of the most popular Mexican foods, delicious and nutritious! 
Avocado Salad was actually a #rustic salad put together quickly by farmers to accompany their meals in the fields(yeah much like mukki mara hua pyaaz and aam ka achaar the way Punjabi farmers did)! But wow! What magic did they create! 
I like it a bit chunky and gooey as opposed to a complete mash. So easy to make provided first you perform the Herculean task of finding good avocados in India. 😂😂Some tips to find them and the recipe coming it in my stories and blog!

  • I don't know when my evenings turned into foam rolling in my pyjamas... 🤔😂 But I'm absolutely fine with it🙌🏻 -

Plus my legs feel amazing, my muscles aren't so tight going to bed/in the morning and my knee pain has been considerably better (combined with morning knee strengthening resistant band exercises)❤️💪🏻
