Ingredients
1 1/4 cups water⠀
1 cup uncooked glutinous white rice (sushi rice)⠀
3 tablespoons rice vinegar⠀
1 pinch salt ⠀
4 sheets nori (dry seaweed)⠀
1/2 cucumber, sliced into thin strips⠀
1 avocado - peeled, pitted and sliced⠀
⠀
Directions⠀
Combine the water and rice in a saucepan and bring to a boil. Cover, reduce heat to low and simmer for 20 minutes, or until rice is tender and water has been absorbed. Remove from the heat and stir in the vinegar and a pinch of salt. Set aside to cool.⠀
Cover a bamboo sushi mat with plastic wrap to keep the rice from sticking. Place a sheet of seaweed over the plastic. Use your hands to spread the rice evenly onto the sheet, leaving about 1/2 inch of seaweed empty at the bottom. Arrange strips of cucumber, avocado or both across the center of the rice. Lift the mat and roll over the vegetables once and press down. Unroll, then roll again towards the exposed end of the seaweed sheet to make a long roll. You may moisten with a little water to help seal. Set aside and continue with remaining nori sheets, rice and fillings.⠀
Use a sharp wet knife to slice the rolls into 5 or 6 slices. Serve cut side up with your favorite sushi condiments. Enjoy!

✨ Buy organic as often as possible. Organic fruits and veggies are free from nasty things and pesticides. If you’re not buying organic try to buy fruits and vegg in season.

  • Happy First day of Spring!! I must share yet another non scale victory!
Today my husband and I went out to get him a jacket for work and it was such a beautiful day that we decided to go to a park and walk around (we live in Florida don’t worry we aren’t COMPLETELY insane 😉 ). Well before I know it I look back and say “look how much we have walked! And my back doesn’t hurt and I’m not sweating or out of breath!” Then I told him we should walk the long way to the car instead of the shorter path and he looked at me and said ok...I was like “when was the last I ever said those words” laughing and he said “umm...never? I’m so proud of you”. We had an amazing day just walking and enjoying each other’s company on this gorgeous day!

I may have a long way to go but losing 22 pounds has already given parts of my life back to me that I haven’t had in a VERY long time.   • Happy hump day 🐫 and first day of Spring!! 🌻🌸🌝 Even though it’s warming up outside, this black bean and sweet potato chili is still the perfect go-to meal. It’s easy & delicious AND thanks to my mom sending me a kitchen gadget called, “X-Cut” the time it took was reduced immensely because I didn’t have to spend forever cutting veggies! I HIGHLY recommend, and I think she got it off Amazon.

I used the X-Cut’s small dice blade to dice a whole yellow onion, and simmered that in a pot with a few tbsp of olive oil and 3 gloves of minced garlic. While that cooked, I de-seeded a green pepper then cut in half and diced using the same small blade. In the meantime, two peeled sweet potatoes were cooking in the microwave for about 8 minutes. I then let them cool and diced using the larger blade on the X-Cut (I cut in half after they went through the diced). Back in the pot I added in 1 can of tomato sauce, the diced pepper, diced sweet potatoes, and one tomato that I cut up. Seasoned with pepper, pink Himalayan salt, and oregano. Added in 2 cans of drained black beans, stirred and let simmer for about 10 minutes. Topped with almond mozz shreds from TJ + avo and a bit of red pepper flakes.

Noch heute habe ich zu einer Bekannten gesagt, wie wohl ich mich doch in meiner Haut während der Schwangerschaft gefühlt habe. Ich hatte deutlich bessere Haut, total volles Haar und ich musste nicht darauf achten meinen Bauch einzuziehen.. 😅 Ich war einfach so richtig zufrieden mit mir. Mittlerweile bin ich wieder drin, im täglichen Wahnsinn... Die Medien gaukeln uns vor, dass wir nur mit der Kleidergröße 36 die perfekte Figur haben, nur dann ist man schön...and so on and so on.. Ich versuche zwei bis drei mal die Woche ins Gym zu gehen... Die Betonung liegt auf "versuche"... 😅 Mit Kind und Job nicht so einfach zu vereinbaren... 🙄 Ich achte auf meine Ernährung... Und das alles um der angeblichen Mehrheit zu gefallen? Ist ja eigentlich totaler Quatsch... Klar, auch ich habe Tage wo ich sage "mein Gott Kathrin, nun reiß dich doch mal zusammen und tu was für dich." Dann wiederum gibt es Tage da bin ich super zufrieden, wie auf dem Bild denke ich deutlich zu erkennen.

Fakt ist, wir sollten uns nicht von den Medien leiten lassen. Niemand kann vom Idealgewicht oder Idealbild einer Frau sprechen. Wichtig ist, hauptsache man fühlt sich wohl in seiner Haut. Egal ob mit einer Kleidergröße 36 oder 46.💪🏼😊

    Noch heute habe ich zu einer Bekannten gesagt, wie wohl ich mich doch in meiner Haut während der Schwangerschaft gefühlt habe. Ich hatte deutlich bessere Haut, total volles Haar und ich musste nicht darauf achten meinen Bauch einzuziehen.. 😅 Ich war einfach so richtig zufrieden mit mir. Mittlerweile bin ich wieder drin, im täglichen Wahnsinn... Die Medien gaukeln uns vor, dass wir nur mit der Kleidergröße 36 die perfekte Figur haben, nur dann ist man schön...and so on and so on.. Ich versuche zwei bis drei mal die Woche ins Gym zu gehen... Die Betonung liegt auf "versuche"... 😅 Mit Kind und Job nicht so einfach zu vereinbaren... 🙄 Ich achte auf meine Ernährung... Und das alles um der angeblichen Mehrheit zu gefallen? Ist ja eigentlich totaler Quatsch... Klar, auch ich habe Tage wo ich sage "mein Gott Kathrin, nun reiß dich doch mal zusammen und tu was für dich." Dann wiederum gibt es Tage da bin ich super zufrieden, wie auf dem Bild denke ich deutlich zu erkennen.

    Fakt ist, wir sollten uns nicht von den Medien leiten lassen. Niemand kann vom Idealgewicht oder Idealbild einer Frau sprechen. Wichtig ist, hauptsache man fühlt sich wohl in seiner Haut. Egal ob mit einer Kleidergröße 36 oder 46.💪🏼😊

A lot of people like the quote “don’t look back because you’re not going that way” I couldn’t disagree more. I constantly reflect on my past, it’s what made me who I am today and what put me in the positions I am in today as well. I’ve met lots of great people along the way that have influenced and inspired me and some not so great people who have taught me things about life too. Like everyone in the world it has not all been good but I wouldn’t change any of it. Not saying to love in the past or dwell on anything too long but your past is important for your present and future. -

  • One summer when I was home from university I decided to start running 🏃🏻‍♀️ I knew it would help with stress, plus I wanted to lose weight. 
I’d run at night - usually around 9pm (it’s a small town and I felt safe) - it was cooler as the sun was setting, but it was also darker and nobody would see me. 
Nobody would see me struggling 😕
Nobody would see me breathing hard 😧
Nobody would see me jiggling 😬

One particular evening I was at supper with a friend and REALLY wanted mozzarella sticks, so I made a deal with myself - I could eat them, BUT I’d have to run further that night. 
So while running, I kept that deal with myself and increased the length of my route. 
Proud? I was proud I ran longer, sure, but not proud of WHY I did it 🙅🏻‍♀️ I’ve since realized that food is not my enemy, nor is exercise my punishment. 
Now, I don’t workout because I ate something “bad” - I workout because I WANT to; because of how it makes me FEEL! 
The endorphins ⚡️
The accomplishment 👌🏻
The mental clarity 🧠

Plus I’ve found a group of ladies 👭 that share my passion and are on a similar journey, and that support helps on the rough days. 
Does it still help with stress and weight loss? You bet! 
Does it still help me reach my goals? Yup! Half marathon training right now with Team Myles 😉

Don’t workout because you hate your body or had some pizza 🍕, workout because you LOVE your body and treat it with fuel 🍓
