  • 🔥 GRILLED CHILLI LIME CHICKEN FAJITA SALAD

INGREDIENTS
Marinade/Dressing:
3 tablespoons olive oil
100ml (just over ⅓ cup) freshly squeezed lime juice
2 tablespoons fresh chopped cilantro
2 cloves garlic, crushed
1 teaspoon brown sugar
¾ teaspoon red chilli flakes (adjust to your preference of spice)
½ teaspoon ground Cumin
1 teaspoon salt
Salad:
4 chicken thigh fillets, skin removed (no bone)
½ yellow bell pepper, deseeded and sliced
½ red bell pepper, deseeded and sliced
½ an onion, sliced
5 cups Romaine (or cos) lettuce leaves, washed and dried
2 avocados, sliced
Extra cilantro leaves to garnish
Sour cream (optional) to serve

Instructions 
Whisk marinade ingredients together to combine. Pour half the marinade into a shallow dish to marinade the chicken fillets for two hours if time allows. Refrigerate the reserved untouched marinade to use as a dressing.
Heat about one teaspoon of oil in a grill pan or skillet over medium-high heat and grill chicken fillets on each side until golden, crispy and cooked through. (Grill in batches to prevent excess water being released.) Once chicken is cooked, set aside and allow to rest.
Wipe pan over with paper towel; drizzle with another teaspoon of oil and fry pepper and onion strips until cooked to your liking.
Slice chicken into strips and prepare salad with leaves, avocado slices, peppers, onion strips and chicken. Drizzle with remaining marinade/dressing and serve with (optional) extra cilantro leaves and sour cream.

All it took was combining some cooked organic egg noodles from @wholefoods - with sautéed chopped onion/celery, frozen peas, a bit of milk, a can of tuna, organic condensed cream of mushroom soup, shredded cheddar cheese, and dried parsley. .

Then, I topped the casserole with a crunchy-textured topping made up of panko bread crumbs, shredded cheddar cheese, more dried parsley - tossed with a bit of melted butter, before baking it. So delicious >

  • As promised here is the recipe for my favorite chocolate frosting 🧁 . It’s so smooth and delicious and the main ingredients are cacao powder and water 😉 I don’t like to add sweetener as I like the taste of dark chocolate but you can add maple syrup for some sweetness. 
Recipe for 3 mini cupcakes:
1/2 tbsp cream cheese
3 tbsp cacao powder 
1 tbsp smooth nut butter
2 1/2 tbsp water

1. Mix everything until smooth and pipe.

Since I started my health journey, I have had a lot of discussions with people around me about, well... digestion. 
The conclusions we got to were: Either people say they are doing just fine or they are asking for tips on how to get better.

Funnily enough, some people who said they are fine and their digestion is good come back to me a few weeks later and say: wow, I changed the way I eat and I didn’t even realise how bad my digestion was before. 🍏Truth is, no matter how our digestion goes, we MUST LISTEN TO OUR BODIES. 🍏

So here are my tips on how to adjust your diet to have a better life:
🥑Always LISTEN TO YOUR BODY! 🍅If you are still full after 4hrs, then either you overate or ate something your body doesn’t like. It should be easy to distinguish between the two. I have this with pasta, so rice noodles are a perfect replacer for me. 🥬If you get heartburn, then it’s not good for you. Due to this, I excluded tomatoes, citrus and sauerkraut. 🍜Find healthier replacers for what you love. I love ice cream, but with gallbladder issues, ice cream is an expensive food to have ( a lot of fat). So, as a replacer I either make my own from frozen bananas or buy ice cream that is half sorbet/half ice cream. 🍑Try to eat at the same time every day. Our bodies like consistency. The more you give it, the better it feels.

  • Zucchini-pesto salad 🥗.
I Saw this really pretty salad last week and thought I would give it a try today, not regretting that at all, so fresh and tasty.
I used:
✅1 big zucchini.
✅1 medium carrot.
✅Grape tomatoes.
✅handful edamame
✅ pesto sauce ( I used store bought, but next time I’m making it fresh 😉).
All you need is a peeler or a mandoline, which is what I used.
Mix it al up and voila 💁‍♀️.

  • More tapas! We went on a tapas tour last night and it was honestly the highlight of this trip! Didn’t take many photos, which shows it was a good night. There were 2 couples from Australia and a couple from America and we all got on so well! We went to 4 different restaurants trying all different types of traditional tapas and all tasted amazing😍When the tour finished we all stayed in the last restaurant and carried on drinking🥂🍾🍻🍺Now time to get ready for dinner and hopefully get some paella for our final night 🥘

used @thebigmansworld vanilla waffle recipe & it was amazing!! one serving made so much batter & the waffle was so thick, dense, & cakey😍
recipe is on his website if you want it. just go to his website, search “waffles”, and it’s the first recipe that comes up. before my toppings here are some notes: - i added @lilys_sweets_chocolate chocolate chips. 100/10 recommend - i subbed ~1/4 mashed banana for the apple sauce
- depending on how sweet you like things i’d adjust the sweetener amount bc it was a bit in the sweet side for my liking. 
either way a simple, healthier take on a favorite breakfast item that’s easy to adjust to your preferences
i’ll tag the brands i used too but here are toppings⏩banana, strawberries & blueberries + bee pollen + @traderjoes raw almond butter + @purely_elizabeth banana nut butter grain free granola + @parkersrealmaple syrup
ONEEE more thing. i think it’s so interesting how our bodies and taste buds change. a year or even couple months ago i could easily eat this entire plate & be satisfied. today i got like halfway through it & my body was like S A L T please. tupper wared it up for another time, threw it in the fridge, & had a scrambled egg with spinach bc i was still hungry just not for all the sweet stuff i had on my plate🤷🏼‍♀️

Drinking more water is sometimes easier said than done. However, there are a lot of things that can help make it easier. For instance, infuse your water with some mint, orange slices, or watermelon.

Dehydration and foot pain are somewhat linked, at least in the case of gout attacks. . 
Gout occurs when an excess amount of uric acid is left in the system. Either your body makes too much of the acid or your kidney fails to release enough. The buildup creates needle-like shards that tend to deposit themselves around the big toe joint in the foot. The result is inflammation, swelling, and intense pain—also known as a flare. The worst part about these attacks is that they can last for weeks and may return suddenly.

On the other hand, the best part is that these episodes are also linked to diet. You can easily prevent and lessen the severity of flare-ups and pain by eating healthy and drinking enough water. Uric acid is formed from the breakdown of purines, which exist naturally in your blood and also occur in foods like mushrooms, organ meats, anchovies, and asparagus. Drinking water has many other benefits besides eliminating foot pain—it helps you lose weight and also saves money when you go out to eat! 🤣

  • This always fresh and delicious poke bowl is from one of my favorite places, Poke Burri. Built my own bowl this time with a spring mix base, salmon and an array of toppings. Poke Burri is my go to spot when I am craving a good poke bowl! Their whole menu is amazing from their sushi donuts, sushi burritos, tuna nachos, just to name a few, so it is definitely a must visit spot!

  • Close up on my breakfast, straight from the pan 🍳 Some days I wake up not as hungry / not feeling like eating the whole egg, but still trying to get some protein in a quick way without having to drink it. Egg white omelettes are my fave, and it takes so little to make them tasty! Just add a lot of your favorite veg, spice it up, and sprinkle some cheese for a bit of fun 🤘🏻 I used crimini mushrooms, spinach, cherry tomatoes, curry powder, black pepper, and chives + some lactose free cheese. So easy yet so good!!

  • not a huge salad eater but it’s a good high volume, low cal meal which is what i need to stay lean this summer. maintaining a healthy diet is hard when you’re back home in nova with so much good food around you🥵hope this fitsa can keep me accountable with my diet!
